12 eggs
1/4 cup heavy cream
3 tablespoons unsalted butter
Sea salt and freshly ground black pepper
3 avocados, peeled, pitted and sliced
Chopped fresh chives, for garnish

Steps:

  • Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

Steps:

  • Whisk eggs, chopped chives, and 1/4 teaspoon fleur de sel in medium bowl until well blended. Melt butter in heavy medium nonstick skillet over medium heat. When foam subsides, add eggs and stir with heatproof silicone spatula until eggs are almost cooked but still runny in parts, tilting skillet and stirring with spatula to allow uncooked portion to flow underneath, about 2 minutes. Remove from heat. Add ricotta and stir just until incorporated but clumps of cheese are still visible.
  • Arrange 2 toasts or 4 baguette slices on each of 2 plates. Spoon scrambled eggs atop toasts. Sprinkle with more fleur de sel and pepper. Garnish with whole chives, if desired.

Scrambled Eggs:
4 large eggs
1 small pinch of cayenne pepper
Kosher salt
2 Tbsp. unsalted butter
3 Tbsp. cream cheese
Assembly:
4 slices American cheese
4 thick slices Martin's Potato Bread or other white bread
Unsalted butter (for pan)

Steps:

  • Scrambled Eggs:
  • Whisk eggs and cayenne in a small bowl; season generously with salt.
  • Heat butter in a medium saucepan over medium. As soon as it begins to foam, add eggs and cook, whisking constantly, until they have set in small curds and are beginning to look dry, about 1 minute. Immediately remove from heat and whisk in cream cheese.
  • Assembly:
  • Divide cheese between 2 slices of bread and top with egg mixture. Close up sandwiches.

1/4 cup milk
1/4 cup chopped fresh parsley
1/4 cup chopped fresh chives

Steps:

  • Freeze the cheese about 10 minutes, then cut off the rind and slice the cheese into 1-inch cubes. (Freezing makes it easier to cut.)
  • Whisk the eggs, milk, parsley and chives in a bowl; season with salt and pepper.
  • Heat a large nonstick skillet over medium-high heat, then add the butter. When the foam subsides, add the egg mixture and cook, undisturbed, until the edges set, about 30 seconds.   • Let the pan heat up, and don't move the eggs until the egg whites begin to set. 1 1/2 c mexican blend shredded cheese
1 Tbsp of milk per egg
1 1/2 Tbsp bacon drippings
salt and pepper to taste

Steps:

  • 1. In a med. frying pan or iron skillet, heat bacon grease over low-med. heat, you don't want to cook the eggs too fast, or move around more than you have to or it can make your eggs dry and flat.
  • 2. In glass bowl (i i perfer a glass bowl and spoon, a spoon because the spoon allows air to get into the mixture which makes eggs fluffier) mix eggs, milk, cheese, and what ever bacon grease is left on the spoon that you used to put the bacon grease in the skillet with. Mix with spoon for 2-3 minutes
  • 3. After grease is heated and egg mixture is mixed, pour into skillet.Don't touch until you notice the edges are starting to take form, with a wooden spoon or spatula(sp? sorry) gently start from sides and push eggs toward the center of the skillet, tilting your skillet so that the uncooked eggs can reach the bottom of the skillet.
  • 4. After all sides have been pushed into the center of the skillet and the runny eggs have had a chance to cook on the bottom of the skillet, then in sections flip the eggs over, and let them cook until there is no uncooked eggs left(but don't over cook them either, just eyeball it) right before the eggs are finished turn off heat and remove skillet, your eggs will still continue to cook. Salt and pepper to taste. Place on plate and serve HOT

3/4 tsp. kosher salt, plus more
6 Tbsp. unsalted butter, divided
4 (1"-thick) slices sourdough or country-style bread
3 Tbsp. crème fraîche or sour cream
1 skin-on, boneless smoked trout fillet (about 5 oz.), skin removed, flesh broken into 1" pieces
1 lemon, halved
Freshly ground black pepper
2 scallions, thinly sliced on a diagonal
2 Tbsp. coarsely chopped dill
4 oz. mature arugula, tough stems trimmed (about 4 cups)
2 tsp. extra-virgin olive oil

Steps:

  • Crack eggs into a medium bowl and add 3/4 tsp. salt. Whisk until no streaks remain.
  • Heat 2 Tbsp. butter in a large nonstick skillet over medium. As soon as foaming subsides, add 2 slices of bread and cook until golden brown underneath, about 3 minutes. Transfer to plates, cooked side up. Repeat with another 2 Tbsp. butter and remaining 2 slices of bread. Season toast with salt. Wipe out skillet and let it cool 3 minutes.
  • Heat remaining 2 Tbsp. butter in reserved skillet over medium-low. Once butter is foaming, cook egg mixture, stirring with a heatproof rubber spatula in broad sweeping motions, until some curds begin to form but eggs are still runny, about 2 minutes. Stir in crème fraîche and cook, stirring occasionally, until eggs are barely set, about 1 minute.
  • Spoon eggs over toast and top with trout. Finely grate lemon zest from one of the lemon halves over trout, then squeeze juice over toast. Season with pepper; scatter scallions and dill on top.
  • Squeeze juice from remaining lemon half into a medium bowl. Add arugula and drizzle with oil; season with salt and pepper. Toss to coat. Mound alongside toasts.

1 loaf Italian bread
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
3 large ripe tomatoes, roughly chopped
Generous handful fresh basil, roughly chopped, plus small leaves for serving
4 tablespoons unsalted butter
1 dozen large eggs
1/4 teaspoon coarsely ground black pepper
4 ounces coarsely grated Pecorino Romano cheese

Steps:

  • Preheat a grill pan over medium heat for 5 minutes. Slice the bread in half the long way. Brush the cut sides with 2 tablespoons olive oil, season with salt and pepper and grill, cut-side down, until nicely charred. Remove from the grill to a cutting board. While the bread toasts, toss the tomatoes with a bit of olive oil, salt, pepper and the chopped basil. Mound the mixture on the toasted bread. Melt the butter in a large nonstick saute pan over low heat. Crack the eggs into a bowl and whisk until light and fluffy with the coarse pepper. Add the eggs to the skillet and mix gently using a rubber spatula until soft curds form. Fold in the cheese and remove from the heat. Spoon the eggs onto 4 dinner plates. 1/2 cup heavy cream
knob of butter
pinch of sea salt and cracked black pepper
200 grams smoked salmon
2 tbsp. chopped chives
1 avocado, smashed
1 bagel, halved and toasted

Steps:

  • The most important part of this process is the scrambled eggs. Lightly whisk the eggs, cream and a pinch of salt together until they are just combined. Heat a small non-stick pan over medium-high heat. Add the butter and let it begin to melt. Pour the egg mixture in and allow the eggs to start to set on the bottom of the pan without stirring. Turn the heat down to medium-low and gently fold the eggs into the centre of the pan. Fold the cooked eggs to the outside and the uncooked eggs to the bottom of the pan in the middle. Repeat until the eggs are soft and slightly soft and runny, then remove from heat and let them finish cooking off-heat. The entire process should take between a minute and two. Once finished, fold in the chopped chives. While the eggs are cooking or before you start to cook them, add some salt and pepper to the avocado and smash with the back of your fork until it smooth but with some clumps remaining. Toast your bagel and set up on the plate. Spread some smashed avocado on the bagel. Add the scrambled egg mixture over top and fold two smoked salmon slices over top. Serve immediately. Serves 2.

3 tablespoons extra-virgin olive oil
1/4 teaspoon grated fresh ginger
1 cup cooked quinoa (see below)
1/2 cup roughly chopped kale leaves and tender stems
Kosher salt and freshly ground black pepper
3 large eggs
2 tablespoons coconut water

Steps:

  • Set a large nonstick skillet over medium-high heat. Add 2 tablespoons of the olive oil and heat to shimmering. Add the ginger and cook until fragrant, about 15 seconds. Add the quinoa and shake the skillet to spread it out into an even layer. Cook, without stirring, until the bottom gets crispy, about 3 minutes.
  • Flip the quinoa and continue cooking until the other side gets crispy, about 3 minutes. Add the kale, season with a pinch of salt and a twist of pepper, stir to combine and cook for 1 minute. Transfer to a plate and set aside.
  • In a medium bowl, whisk together the eggs and coconut water to thoroughly blend. Wipe out the skillet, set it over medium-high heat and add the remaining 1 tablespoon olive oil, then immediately add the eggs and begin stirring. Stir the quinoa, cover, reduce the heat to maintain a gentle simmer and cook until the quinoa pops open (releasing the circular white germ of the seed) and all the liquid is absorbed, about 15 minutes. 4 large eggs
1 tablespoon chopped fresh chives
1/4 teaspoon fleur de sel or coarse kosher salt plus more for sprinkling
1 tablespoon butter
1/2 cup fresh ricotta cheese*
4 1/3- to 1/2-inch-thick slices whole grain bread or 8 whole grain baguette slices, lightly toasted and buttered
Whole chives (optional)

Steps:

  • Whisk eggs, chopped chives, and 1/4 teaspoon fleur de sel in medium bowl until well blended. Melt butter in heavy medium nonstick skillet over medium heat. When foam subsides, add eggs and stir with heatproof silicone spatula until eggs are almost cooked but still runny in parts, tilting skillet and stirring with spatula to allow uncooked portion to flow underneath, about 2 minutes.
  • Remove from heat. Add ricotta and stir just until incorporated but clumps of cheese are still visible.
  • Arrange 2 toasts or 4 baguette slices on each of 2 plates. Spoon scrambled eggs atop toasts. Sprinkle with more fleur de sel and pepper. Garnish with whole chives, if desired.

1 cup finely chopped small asparagus

Steps:

  • Combine first 4 ingredients in a medium bowl, stirring with a whisk.
