Steps:
- Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

- Freeze the cheese about 10 minutes, then cut off the rind and slice the cheese into 1-inch cubes. (Freezing makes it easier to cut.)
- Whisk the eggs, milk, parsley and chives in a bowl; season with salt and pepper.

- Melt the butter in a nonstick skillet over medium heat. Break the eggs into the pan when it is warm but not yet hot. Sprinkle the eggs lightly with salt.
- Let the pan heat up, and don't move the eggs until the egg whites begin to set. Using a heat-resistant spatula, move the whites around the pan to help them cook through, while keeping the yolk unbroken, for about 30 seconds. When the whites fluff up and are almost completely set, remove from the heat and fold the yolks into the whites. The residual heat should cook the whites through and leave the yolks soft. This is kind of like scrambling an over easy egg.
- Sprinkle with herbs, if desired.

- 1. In a med. frying pan or iron skillet, heat bacon grease over low-med. heat, you don't want to cook the eggs too fast, or move around more than you have to or it can make your eggs dry and flat.
- 2. In glass bowl (i i perfer a glass bowl and spoon, a spoon because the spoon allows air to get into the mixture which makes eggs fluffier) mix eggs, milk, cheese, and what ever bacon grease is left on the spoon that you used to put the bacon grease in the skillet with. Mix with spoon for 2-3 minutes
- 3. After grease is heated and egg mixture is mixed, pour into skillet.Don't touch until you notice the edges are starting to take form, with a wooden spoon or spatula(sp? sorry) gently start from sides and push eggs toward the center of the skillet, tilting your skillet so that the uncooked eggs can reach the bottom of the skillet.
- 4. After all sides have been pushed into the center of the skillet and the runny eggs have had a chance to cook on the bottom of the skillet, then in sections flip the eggs over, and let them cook until there is no uncooked eggs left(but don't over cook them either, just eyeball it) right before the eggs are finished turn off heat and remove skillet, your eggs will still continue to cook. Salt and pepper to taste. Place on plate and serve HOT

- Crack eggs into a medium bowl and add 3/4 tsp. salt. Whisk until no streaks remain.
- Heat 2 Tbsp. butter in a large nonstick skillet over medium. As soon as foaming subsides, add 2 slices of bread and cook until golden brown underneath, about 3 minutes. - The most important part of this process is the scrambled eggs. Lightly whisk the eggs, cream and a pinch of salt together until they are just combined. Heat a small non-stick pan over medium-high heat. Add the butter and let it begin to melt. Pour the egg mixture in and allow the eggs to start to set on the bottom of the pan without stirring. Turn the heat down to medium-low and gently fold the eggs into the centre of the pan. Fold the cooked eggs to the outside and the uncooked eggs to the bottom of the pan in the middle. Repeat until the eggs are soft and slightly soft and runny, then remove from heat and let them finish cooking off-heat. The entire process should take between a minute and two. Once finished, fold in the chopped chives. - Set a large nonstick skillet over medium-high heat. Add 2 tablespoons of the olive oil and heat to shimmering. Add the ginger and cook until fragrant, about 15 seconds. Add the quinoa and shake the skillet to spread it out into an even layer. Cook, without stirring, until the bottom gets crispy, about 3 minutes.
