- Place the popcorn in a large bowl. Shake and toss the bowl to make the unpopped kernels go to the bottom; discard.
- In a sauce pan over medium-high heat, cook the brown sugar, corn syrup, and butter, stirring constantly. Heat to 270 to 290 degrees F (132 to 143 degrees C), or until a small amount of syrup dropped into cold water forms hard but pliable threads. Remove from the heat, and carefully pour in the can of condensed milk; stir until smooth.
- Pour 1/4 of the caramel at a time over the popcorn, stirring until all of the popcorn is covered. Cool at least 10 minutes before serving.

SOFT CARAMEL CORN
No one makes a soft caramel corn. Everyone thinks that it should always be like cracker jack. This soft caramel is chewy and absolutely nummy!

- Pop popcorn. It will take 20 to 24 cups of popcorn for the recipe, depending on how well covered you like your corn. It can be air popped, but I have found that three bags of the Orville Redenbacher gourmet white corn works well. I pour it into the bowl and skim off the good popcorn from the un-popped kernels.
- Butter two cookie sheets.
- Combine in medium saucepan brown sugar, corn syrup, and butter. Over medium heat bring to a soft boil, stirring together frequently. I find it helpful to cut up the butter to incorporate it more easily.
- Add sweetened condensed milk slowly stirring frequently.
- Insert candy thermometer and cook stirring almost constantly and boiling softly over medium heat to the soft ball stage (235 to 240 degrees at sea level)
- Pour caramel over popped corn. Make sure you use a large bowl and stir until corn is covered.
- Pour out onto greased cookie sheets and spread out evenly. This is the easiest way to do it. If you want to after set you can cut it out and store it between layers of waxed paper in an airtight container.
- Be sure to eat some while it is still warm. It's wonderful.
