This easy Cowboy Caviar is a colorful bean salad made with a mix of black beans, black-eyed peas, fresh veggies, and a tangy lime dressing.

15 ounces Black beans
15 ounces Black-eyed peas
15 ounces Corn
1 cup Bell Peppers (mix of colors, diced)
2 Roma Tomatoes (diced)
¼ cup Red Onion (diced)
¼ cup Cilantro (finely chopped)
½ cup Olive Oil
¼ cup Red wine vinegar
¼ cup Lime juice
1 clove Garlic
1 teaspoon Salt

Steps:

  • Drain and rinse the canned black beans and black-eyed peas.
  • Combine black beans, black-eyed peas, corn, bell peppers, tomatoes, onion, and cilantro in a large bowl.
  • In a small bowl whisk together olive oil, vinegar, lime juice, garlic, and salt.
  • Pour the dressing over the bowl of beans and vegetables and gently toss together.
  • Cover container and place in the refrigerator for at least 2 hours.
  • When ready to serve transfer to another bowl using a slotted spoon leaving excess dressing behind.
  • Serve with chips and enjoy!

There are many different Cowboy Caviar recipes, but this one is my favorite. I got this recipe from a friend a few years ago. I usually serve it with tortilla chips, but you can also serve it as a side dish or as a salsa with chicken or fish. I decided to post the recipe on 'Zaar so I will never lose it! Note: the cooking time is chill time.

1 (11 ounce) can white shoepeg corn
1 (10 ounce) can black-eyed peas (drained)
2 diced avocados
1/2 diced red pepper
1/2 diced yellow pepper
1/2 diced orange bell pepper
2 medium tomatoes (diced)
1/2 sweet onion (chopped)
4 green onions, chopped (with green)
1 jalapeno pepper (diced)
1 cup medium chunky salsa
4 tablespoons extra virgin olive oil
4 tablespoons balsamic vinegar
2 minced garlic cloves
1 teaspoon salt
pepper
1 tablespoon cumin
1/2 cup chopped cilantro

Steps:

  • Combine all ingredients in bowl.
  • Cover and chill.
  • Serve with tortilla chips (I prefer Tostito Scoops).

10 ounces Rotel diced tomatoes, not drained (original or hot)
11 ounces canned white shoepeg corn, drained
3 roma tomatoes, seeded and diced
1 green bell pepper, seeded and finely chopped
3 -4 green onions, thinly sliced
3/4 cup KRAFT Zesty Italian Dressing

Steps:

  • Mix all of the ingredients except the chips.
  • Refrigerate.
  • Serve with chips.

1 (16 ounce) jar chunky salsa
1 (15 ounce) can corn
1 (15 ounce) can black beans
1 (15 ounce) can black-eyed peas
1 large avocado, cubed
1 bunch parsley, chopped
4 green onions, chopped

Steps:

  • Rinse and drain the corn and beans.
  • Put salsa, corn, and 3/4 of each can of beans into a large bowl.
  • Mix thoroughly.
  • Add avocado, parsley and green onions, mix in gently so the avocados don't get mashed.
  • Serve with salty corn chips, scoop shape is best.

Forget those overpriced fish eggs. Celebrate those special occasions like the New Year with this tasty easy Cowboy Caviar with a cornucopia of beans, black eyed peas, and vegetables all in a slight spicy slightly sweet lime vinaigrette.

1/2 c olive oil
2 Tbsp fresh lime juice
1/2 tsp chili powder
1/2 tsp ground cumin
1/4 tsp ground cayenne
1/4 tsp crushed red pepper
1 can(s) 15 ounces black beans drained and rinsed
1 can(s) 15 ounces black eyed peas drained and rinsed
1 1/2 c corn fresh, frozen or canned
1/4 c red onion finely chopped
1 c grape or cherry tomatoes quartered
1 jalapeno minced
1 bell pepper finely diced
1/4 c chopped fresh cilantro

Steps:

  • 1. In a small bowl whisk together the olive oil, lime juice, chili powder, ground cumin, ground cayenne and crushed red pepper.
  • 2. In a large bowl combine the black bean, black eyed peas, corn, red onion, tomatoes, jalapeno, bell pepper and cilantro.
  • 3. Drizzle the vinaigrette over the caviar and toss to coat. Store covered in the fridge until 30 minutes prior to serving. Retoss right before serving.
  • 4. NOTES Use any colored bell pepper or use a variety for color. Mix up to 1 day in advance but hold the chopped cilantro until about an hour before. In a hurry? Skip the dressing and add 1/2 cup zesty Italian dressing. Feel free to add finely diced avocado. However if you are preparing this in advance add the avocado right before serving. Store leftovers up to 4 days in an airtight container in the fridge.
