CHILLY DAY CHILI
This mild chili tastes great, has a nice thick texture, and practically cooks itself - What's not to love? The easy-to-prepare recipe came from the label of a ketchup bottle ;)

Steps:
- In a large skillet, saute onions and bell pepper in vegetable oil for 1-2 minutes; add ground beef and cook until browned; drain fat.
- Stir in tomatoes, tomato sauce, ketchup, chili powder, salt, and pepper; simmer, uncovered for 30 minutes, stirring occasionally.
- Add beans and continue simmering for 15 minutes longer.

Steps:
- Saute onion in olive oil until translucent. Add to slow cooker, along with tomatoes and beans.
- Brown beef in same pan, adding a little salt to season.
- Drain beef and add to slow cooker. Add a little beer to the pan to deglaze and get all the good crispy bits. Pour into slow cooker and add rest of the beer.
- Stir in seasonings and cook.
- An hour before serving, taste and adjust seasoning as desired. Add a little flour if it is too thin.

- In a large saucepan or Dutch oven, cook the beef, onions and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.
