- Beat egg whites lightly in a large bowl using an electric mixer until frothy. Slowly beat enough confectioners' sugar into egg whites to make icing that will hold shape; blend in lemon juice until desired consistency is reached.
- Arrange cookies about 1-inch apart on a large sheet of waxed paper. Spread icing onto each cookie, allowing icing to drip over edges to look like melting snow.
- Grease a microwave-safe plate. Place 1 marshmallow onto plate.
- Microwave marshmallow until it starts to puff up, 20 to 30 seconds. Immediately place marshmallow on the edge of 1 cookie while the icing is still wet to look like a melted snowman. Repeat with remaining marshmallows and iced cookies.
- Decorate 'melted snowmen' by piping 'twig-like arms' using black decorating gel on the icing. Make 'coal eyes' and a 'mouth' on the marshmallow using black decorating gel. Make a 'carrot nose' under the 'coal eyes' using orange decorating gel. Make 'coat buttons' by arranging silver nonpareils down the middle of the icing. Make 'scarves' or 'bow-ties' using red decorating gel or green decorating gel.
- Allow cookies to fully dry before removing from waxed paper, at least 1 hour.

- Follow baking directions on sugar cookie pouch, dividing dough evenly into 12 round cookies.
- On cooled cookies, draw a "snow puddle" with Betty Crocker™ White Cookie Icing. TIP: Draw the outline of the puddle, then go back and fill in the shape.
- While the icing is still wet, immediately place a marshmallow to one side of the cookie.
- MAKE THE ARMS: Once the icing and marshmallow have set, pipe two "branches" onto each cookie using black gel. Add fingers with chocolate sprinkles.
- MAKE THE FACE: Using a small dot of white cookie icing, stick two "coal" eyes and a nose onto the marshmallow with Rainbow Chips. Pipe a small dot for the mouth with black gel.

MELTED SNOWMAN PEANUT BUTTER COOKIES

- Melt the candy melting wafers according to the package directions. Spoon some of the melted candy on top of a cookie and spread it so it covers most of the cookie but has an irregular border. Place a slice of marshmallow toward the top edge and spoon some more melted candy on top, smoothing it to fully cover the marshmallow and blend it into the candy on the cookie.
- Decorate the face of the snowman with mini chocolate chips for eyes and an orange sprinkle as a carrot nose. Place a peanut butter cup half on top of the snowman's head like a hat. Use other sprinkles to add a mouth or buttons if desired. Repeat with the remaining candy, cookies and decorations (rewarming the candy melts if necessary). Let the cookies set, about 10 minutes.

- 1. Mix cookie mix according to directions, or prepare your favorite cut out sugar cookie recipe, then just grab a tablespoon sized ball and squish it down until it's about 1/4-1/2 inch thick. Do not worry about the shape or how lumpy it is, the more misshapen the better. Bake according to recipe directions.
- 2. Once cookies cool, spread icing around with the back of a spoon, let some dribble over the edge for a "puddle" look.
- 3. Spray a microwave safe plate with cooking spray, and place marshmallows on the plate. Set the microwave for 30 seconds, but watch the marshmallows as they cook. Stop the microwave as soon as the marshmallows start to get puffy, do not let them double in size.
- 4. Spray your fingers with cooking spray and carefully pull the marshmallows off and set them on top of the frosted cookies "puddle".
- 5. Decorate as you'd like with icing, or homemade frosting!

- 1. Roll out sugar cookies onto a lightly floured surface until 1/3-1/2 inch thick. Cut out with a large round cookie cutter . Bake according to directions and cool completely. *Buy them or slice and bake them !
- 2. •Once the cookies are cool, load them up with the cookie icing and spread it around with the back of a spoon, let some dribble over the edge for a "puddle" look. * I prefer to stick the marshmallow on at this point, it tends to stick easier.
- 3. •Spray a microwave safe plate with cooking spray, and place marshmallows on the plate. Set the microwave for 30 seconds, but watch the marshmallows as they cook. Stop the microwave as soon as the marshmallows start to get puffy, do not let them double in size
- 4. •Spray your fingers with cooking spray or grease them up with shortening, and carefully pull the marshmallows off, by the base, and set them on top of the frosted cookies. You may push in the tops very gently. You may need to use a little icing on the bottom of the marshmallow to get it to stick if icing is to dry. •Then just decorate as you'd like with the Wilton frosting, or your own homemade frosting! I was pleasantly surprised at how yummy the Betty Crocker cookie icing was! Very surprised !
- 5. ***Ingredients for Homemade Cookie Frosting *This dries hard and shiny, very pretty and easy to store. This frosting layers well just make sure and let the base coat dry VERY thoroughly first. (It takes a full 8 hours or overnight to dry entirely. I wait 1 hour in between base coat and decorating them, then let them dry overnight) While base coat is drying tint remaining icing into different colors. (The amount of icing you will need depends on the amount of cookies you decide to bake/or buy. ***This recipe will ice about a dozen cookies. 1 cup confectioners' sugar 2 teaspoons milk 2 teaspoons light corn syrup 1/4 teaspoon almond extract or your favorite assorted food coloring Directions In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup. Be patient and get it the right constistency, it should drip slightly off of cookies. But for decorating it should be stiffer and you will have to adjust it with more powdered sugar. This is easy, no big deal.
- 6. If you don't want to bother with the above Icing Step, no problem, Betty Crocker and Wilton both make a powdered icing base that you can whip up in minutes. Then use decorators frosting in the little tubes or cookie decorating pens.
- 7. * Tip* Add your favorite extract flavoring to your favorite cookie dough mix. Makes them taste like homemade. You can also add lemon and/or orange rind with orange or lemon extract. So yummy !

- Empty 1 bag white candy melts into a microwave-safe bowl. Microwave at 50% power for 1 minute. Stir and continue to microwave in 15- to 30-second intervals until candy is almost completely melted. Let sit for about 1 minute and stir until smooth. Set the second bag of white candy melts aside.
- Dunk a cookie in the white melted candy. Use a fork to turn it over to ensure it's completely coated on all sides. Transfer to a parchment-lined baking sheet. Place 2 sprinkles in the middle for eyes. Place 1 half of a Tic Tac® under the eyes for a nose. Place 4 more sprinkles in a semi circle on the bottom for the mouth. Repeat for remaining cookies, melting the second bag of white candy melt as needed.
- Place the baking sheet in a cool, dry area for about 25 minutes so candy coating can harden. Do not place in the freezer or the snowmen will sweat.
- Melt the red candy melts as in step 2.
- Cut any excess chocolate off around each cookie. Dip the top part of each cookie in the red melted candy to make a hat and add an M&M® for a design. Place on a new parchment-lined baking sheet and allow to harden, about 25 minutes. Cut off any excess chocolate before serving.

SNOWMAN SUGAR COOKIES

- Preheat the oven to 350 degrees F. Line a half-sheet pan with parchment paper.
- Sift the flour into a medium bowl. In a stand mixer fitted with the paddle attachment, cream together the butter, sugar, vanilla extract and almond extract, 3 to 5 minutes. Add the eggs, one at a time, scraping down the sides of the bowl after each addition. Decrease the speed to low, add the flour and mix to incorporate. Scrape down the sides of the bowl and increase the speed to medium for 30 seconds. Chill the dough for 1 hour in the refrigerator.
- Lightly dust a clean surface with flour. Using a rolling pin, roll out the dough between 1/4-inch and 1/2-inch thick. Cut the dough with a snowman cookie cutter and place on the prepared sheet pan (about 24 cookies). Refrigerate the dough for 15 minutes. Bake for 10 to 15 minutes. Cool completely, then serve the cookies as-is, or frost the cookies and then serve.

- 2. CUT 1 end of 1 of the sticks of gum to resemble the fringe on a scarf. Trim other end to 3/8-inch width. Wrap scarf around snowman's neck.
- 3. CUT 2 triangles from remaining stick of gum; attach to snowman with frosting for the eyes. Place small dot of the remaining frosting in the center of each triangle; sprinkle with blue sugar. Add chocolate chip for the nose and roll candies for buttons on the body, securing each piece with the remaining frosting. Draw a mouth on the snowman's face with the red icing. Let stand at least 1 hour or until frosting is dry.

- In a small bowl, beat cookie dough and flour until combined. Shape dough into seventeen 1-1/4-in. balls and seventeen 3/4-in. balls. On ungreased baking sheets, place one large ball next to one small ball to form a snowman. Flatten each slightly with the bottom of a glass dipped in flour. Insert a Popsicle stick into each larger ball., Bake at 350° for 10-12 minutes or until lightly browned. Cool completely before carefully removing to wire racks., In a microwave, melt white candy coating; stir until smooth. Dip snowmen in coating; allow excess to drip off. Place on waxed paper. Immediately position chocolate chips for eyes, candy corn for noses and miniature chocolate chips for mouths. , For earmuffs, place M&M's on either side of each face, connected with a strip of decorating gel. For scarves, place a strip of fruit roll-up around each snowman. Let stand for 30 minutes or until set.
