A no-bake dessert using a ready-made angel food cake and ingredients that can be easily found in any store. It looks like a large snowball when finished.

1 (10 inch tube pan) angel food cake
6 cups frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved
2 tablespoons lemon juice
1 cup white sugar
1 (10 ounce) package flaked coconut
2 (.25 ounce) packages unflavored gelatin
4 tablespoons water
1 cup boiling water

Steps:

  • Line a 4 quart round mixing bowl with parchment paper.
  • Break cake up into small bite-sized pieces.
  • Drain the crushed pineapple, reserve the syrup. You should have 1 cup of syrup if not add enough water to make 1 cup.
  • Dissolve the gelatin in the 4 tablespoons of cold water. Add the boiling water, pineapple syrup, sugar and lemon juice. Mix well and place in the refrigerator until mixture just starts to thicken.
  • Add the crushed pineapple to the gelatin mix and then fold in 4 cups of the whipped topping.
  • Place a layer of cake pieces, then a layer of the pineapple mixture in the prepared bowl. Continue until all the cake and pineapple mixture is used up. Refrigerate for at least 12 hours or overnight.
  • Turn the chilled cake out onto a serving platter and frost it with the remaining whipped topping and sprinkle with the coconut.

2 tablespoons unflavored gelatin
1/4 cup cold water
1 cup boiling water
1 cup sugar
1 tablespoon lemon juice
1 can (20 ounces) crushed pineapple, drained
1 carton (16 ounces) frozen whipped topping, thawed, divided
1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes
1-1/2 cups sweetened shredded coconut

Steps:

  • In a bowl, sprinkle gelatin over cold water; let stand for 1 minute. Add boiling water; stir until gelatin is dissolved. Stir in sugar and lemon juice until sugar is dissolved. Add pineapple. Refrigerate until partially thickened, about 20 minutes. Fold in 4 cups whipped topping., Line a 3-qt. round bowl with plastic wrap. spoon about 2 cups pineapple mixture into bowl. Layer with half of the cake cubes and half of the remaining pineapple mixture. Repeat layers. Refrigerate for at least 4 hours., Unmold onto a serving plate. 6 c frozen whipped topping, thawed
1 can(s) crushed pineapple in heavy syrup (20 oz), drained (reserve the juice)
2 Tbsp lemon juice (fresh or concentrate)
1 c sugar, granulated
1 pkg flaked coconut (16 oz)
2 pkg gelatin, unflavored (.25 ounce packages)
4 Tbsp cold water
1 c boiling water
1` angel food cake (10 inch)

Steps:

  • 1. Line a 4 quart round bowl with plastic wrap. Tear angel food cake into bite size pieces. Drain pineapple thoroughly and reserve the syrup. You should have 1 cup of syrup.
  • 2. Dissolve gelatin in the 4 T of cold water. Add the boiling water, the reserved pineapple syrup, the sugar and the lemon juice. Mix well and place in refrigerator until mixture starts to thicken. This may take a few hours.
  • 3. Add the crushed pineapple to the gelatin mixture and then fold in 4 cups of the whipped topping.
  • 4. Place a layer of cake pieces in bottom of bowl, then a layer of pineapple mixture, continue until all is used up, ending with cake pieces. Chill overnight.
  • 5. Turn cake onto a platter or cake stand. Frost with the remaining 2 cups of whipped topping and sprinkle with coconut. I added cherries and a few leaves as well.

1/2 cup cold water
1 cup boiling water
1 cup sugar
1 cup pineapple juice

1 prepared angel food cake

Steps:

  • Soften gelatine in cold water. Add boiling water, sugar, juice, pineapple and salt. Mix well. Refrigerate until partly jelled.
  • Prepare 2 packages whipped topping mix according to directions. Fold into jelled mixture.
  • Line a large mixing bowl with waxed paper or extra-wide plastic wrap. Break the angel food cake into 1-inch chunks. In the lined mixing bowl, make layers of cake and jelled mixture, alternating and finishing with jelled mixture.
  • Chill overnight.
  • Next day, prepare 1 package whipped topping mix. Take cake from refrigerator and turn upside down on large plate. Remove bowl and waxed paper. Frost with whipped topping mix. Chill until serving time.
  • NOTE: If you substitute Cool Whip or whipped cream, you will need six cups. However, I can't speak to the results of using those ingredients.

Nonstick vegetable oil spray
2 tablespoons dark rum
1 tablespoon instant coffee
2 2/3 cups semisweet chocolate chips (about 1 pound)
1 cup (2 sticks) unsalted butter, diced
1 1/2 cups sugar
6 large eggs
1 1/2 cups chilled whipping cream

Steps:

  • Preheat oven to 350°. Line 10-cup ovenproof glass bowl or 10-cup metal bowl smoothly with foil. Spray foil with nonstick spray. Combine dark rum and instant coffee in small bowl or ramekin; stir to dissolve coffee.
  • Combine chocolate chips and butter in large bowl. Set bowl over saucepan of simmering water. Stir until chocolate and butter are melted and smooth. Remove bowl from over water. Using electric mixer, beat in sugar, then coffee mixture. Beat until mixture cools to lukewarm, about 3 minutes. Beat in eggs 1 at a time. Transfer batter to foil-lined bowl.
  • Bake cake until top is cracked and dry and tester inserted into center comes out with some moist batter attached, about 1 hour 5 minutes. Cool cake in bowl on rack 15 minutes (center of cake will fall). Press edge of cake firmly to level with center of cake. Refrigerate cake uncovered until cold, at least 6 hours and up to 2 days.
  • Invert bowl with cake onto platter, allowing cake to fall onto platter. Lift off bowl; peel off foil. Beat cream in large bowl until peaks form. Spread whipped cream all over cake, mounding cream in center. Cut into wedges and serve, or refrigerate up to 6 hours.

2 teaspoons baking powder
⅛ teaspoon salt
1 cup milk
½ teaspoon vanilla extract

1 tablespoon light corn syrup
¼ teaspoon cream of tartar
¼ cup water
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan. Sift together the flour, baking powder and salt. Set aside.
  • In a large bowl, cream together the butter and 1 1/2 cups sugar until light and fluffy. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the 1/2 teaspoon vanilla and lemon extracts.
  • In a large glass or metal mixing bowl, beat 5 egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  • Pour batter into prepared pan. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • To make the Fluffy White Frosting: Combine 1 1/2 cups sugar, 2 egg whites, corn syrup, and cream of tartar in the top of a double boiler. Add cold water and beat on low speed of electric mixer just until blended. Place over boiling water and beat constantly on high speed about 3 minutes or until soft peaks form. Remove from heat and place over cold water. Add vanilla and beat an additional 3 minutes or until frosting is thick enough to spread.
  • To make the snowballs: Cut cake into 2-inch squares. Trim corners of each square, leaving rounded edges. Spread top and sides with frosting. Sprinkle coconut generously over frosting.

This cake is easy to make, but takes some time. My mom use to make this for holidays and special occasions. It makes a delightful slice of light lemony cake with whipped cream frosting. You can make the cake up to two days in advance of serving and it makes a beautiful presentation. The number of steps to make this recipe might seem overwhelming, but I have separated each step to make the process less confusing.

2 (1/4 ounce) envelopes unflavored gelatin
4 tablespoons cold water
1 cup boiling water
1 cup granulated sugar
1 dash salt
1 (12 ounce) can frozen orange juice concentrate, thawed
2 tablespoons lemon juice
1 tablespoon lemon peel, grated
1 pint whipping cream
1 (10 ounce) angel food cake
8 ounces whipping cream
4 tablespoons powdered sugar
1 (4 ounce) package shredded coconut

Steps:

  • Line a 3 quart bowl with 2 pieces of wax paper, one on top of the other.
  • Let each piece extend over the opposite edges of the bowl, so all edges are covered.
  • The paper will be wrinkled.
  • Set bowl aside.
  • Cut angel food cake into 1" cubes and set aside.
  • In a large bowl, sprinkle gelatin over cold water; let stand 5 minutes to soften.
  • Add boiling water and stir until gelatin is dissolved.
  • Stir in granulated sugar, salt, orange juice concentrate, lemon juice and peel.

  • Continue alternating lemon mixture and cake until all is used.
  • Cover with plastic wrap and foil.

  • Before serving, invert bowl onto serving platter. Carefully remove bowl and wax paper.
  • In a small bowl, whip 1 cup cream and powdered sugar until stiff.
  • Frost top and sides of molded cake with whipped cream.
  • Sprinkle top and sides of cake with coconut (if desired) and garnish with a lemon rose or mint leaves.

  • In a large bowl with an electric mixer, beat butter and sugar on medium-high until light and fluffy. Beat in eggs, one at a time, until well blended. Beat in flour mixture alternately with buttermilk mixture on medium-low speed. Pour batter into prepared pans. Bake 25 to 30 minutes or until cake tester inserted in center comes out clean. Cool in pans on a wire rack 10 minutes. Invert onto wire rack; invert again and let cool completely on rack.
  • For the frosting: Place white chocolate and cream in a small micro-wave-safe bowl. Microwave on high 15 to 30 seconds; whisk until smooth. Let stand 2 minutes; cover with plastic wrap and chill.
  • In a large bowl with an electric mixer, beat cream cheese, butter and vanilla on medium-high speed until light and fluffy, about 2 minutes. Beat in cooled white-chocolate mixture until blended. On low speed, add confectioners' sugar in batches and beat until combined. Increase speed to medium-high and beat until fluffy, about 1 minute.
  • To assemble the cake: Cut each cake layer horizontally with a long serrated knife, to make 4 layers. Place one layer on a serving plate and spread with about 1 cup of frosting. Repeat with remaining 3 layers, frosting the top and sides of the cake. Sprinkle coconut on top and sides of cake. Refrigerate cake about 1 hour to let it set.

Steps:

  • HEAT oven to 350°F.

1 envelope unflavored gelatin
1/4 cup cold water
1/2 cup boiling water
1 cup sugar
1 cup orange juice
1/4 cup lemon or lime juice
2 cups heavy whipping cream, divided
1 angel food cake (12 ounces), cut into cubes (10 cups)
1 cup sweetened shredded coconut

Steps:

  • In a bowl, sprinkle gelatin over cold water; let stand for 1 minute. Add boiling water; stir until gelatin is dissolved. Add sugar and juices; stir until sugar is dissolved. Refrigerate until partially thickened, about 2 hours. , Beat 1 cup cream until stiff peaks form; fold into gelatin mixture. Line a 4-qt. round bowl with plastic wrap. Spoon about 1 cup whipped cream mixture into bowl. Alternate layers of cake and whipped cream mixture until bowl is filled, ending with cream mixture. Refrigerate for at least 3 hours. , Unmold onto a serving plate. Whip remaining cream; frost cake. Sprinkle with coconut.

My husband loves Hostess snowballs,and this cake tastes about as close to one as I could find.:-)

1 c water
4 tsp knox gelatin
2 1/2 sticks of margarine ( 20 tablespoons)
4 tsp vanilla
1/4 tsp salt
6 c marshmallow creme
2 c shredded coconut
2 drops red food coloring
1 devils food cake mix

Steps:

  • 1. Mix devils food cake as directed on box. Bake in a greased and floured glass pyrex bowl on 350 degrees for about 45 to 55 minutes or till toothpick comes out clean.Cool in bowl for ten minutes and then invert on to wax paper. When completely cool,put back into cleaned glass bowl.
  • 2. Cut opening in bottom of cake to put in marshmallow filling. I just cut a circle (save that) and then took some of the cake out and ate it. HaHa! Fill with some of the marshmallow creme( I put about a cup or more) and replace circle of cake you cut out.Invert cake onto a cake plate,and then frost with remaining marshmallow topping and coat with coconut.
  • 3. For marshmallow filling: Dissolve knox gelatin in water for five minutes in a bowl. Then microwave it for about 40 seconds untill it starts to boil around the edge. Cool to the touch. Add butter,salt and vanilla. Wisk in marshmallow creme. Refrigerate untill its of spreading consistency.Fill Inside as talked about above and then frost outside of cake and cover with coconut which has been colored with the two drops of red food coloring. Voila! Snowball cake! :-)

Found this recipe many years ago in a Family Magazine from Duncan Hines. Saved it of course and never tried it, well am making it now for my Daughter's B'Day. She saw it in my collection and asked me to make it. Perfect as she is allergic to chocolate and that was always my standby B'day cake with coconut frosting!

CAKE:
1 box duncan hines yellow cake mix
3 large eggs
1/3 c oil
1 1/4 c water
1 tsp almond extract
1/2 c crystalized ginger, coarsely chopped
3/4 c slivered almonds, toasted and coarsely chopped
FILLING:
1 pkg 8 oz. cream cheese, softened
1/2 c sour cream
3 Tbsp confectioner's sugar
1/2 tsp vanilla extract
FROSTING:
1 can(s) duncan hines creamy vanilla frosting
1 Tbsp lemon juice
1 c shredded coconut
NOTE: I USE MY OWN WHITE WHIPPED FROSTING, WHICH I WILL ADD BELOW

Steps:

  • 1. Preheat oven to 350 degrees F. Grease and flour a 10" Bundt or tube pan.
  • 2. Combine cake mix, eggs, oil, water and almond extract, and blend 2 minutes. Fold in ginger and toasted almonds. (to toast almonds, put in flat cookie sheet and put in a 350 degree oven for just a few minutes, don't leave the oven watch closely til a little browned.)
  • 3. Pour into greased pan. Bake 50 Minutes (mine only took 40 minutes) so check with toothpick at 40 min) Cool in pan on rack for 25 minutes. Remove from pan and cool 2 hours.
  • 4. Using a long serrated knife, slice cake horizontally into two layers. making the top layer 1/3 the height of cake, the bottom layer 2/3 the height. Remove top and set aside. Hollow out center of bottom layer leaving 3/4 inch border of cake on bottom and sides. Spoon Filling into tunnel. Replace the top layer.
  • 5. Filling: In large bowl beat cream cheese until light and fluffy. Beat in sour cream, confectioners sugar and vanilla until smooth. Spoon filling into cake tunnel.
  • 6. White Frosting (my own) Into 5 scant Tablespoons of flour, gradually blend 1 cup of milk. Cook to a thick paste. ( I put in microwave for 1 min. at a time, stir and continue til thickened to a thick paste) if using stove top stir constantly til thick. Cool to lukewarm, meanwhile cream 1 cup crisco with 1 cup sugar, 1/2 tsp. salt add to cooled paste and add 1 tsp. vanilla extract and beat til fluffy. I would think chocolate frosting would be wonderful with it as well ! *For this recipe, sprinkle the 1 cup of flaked coconut over the frosting. Note: If using the Duncan Hines frosting, Combine the frosting and lemon juice until well mixed. Spread on cake and sprinkle coconut over icing immediately .

1 pkg 8 oz philadelphia cream cheese, softened
1 egg
2 Tbsp granulated sugar
1 pkg 3.4 oz jell-o vanilla flavor instant pudding
1/4 c powdered sugar
1 c cold milk
1 tub 8 oz cool whip whipped topping, thawed
1 c coconu flake

Steps:

  • 1. Heat oven to 350F
  • 2. Prepare cake batter in to 2 1/2- qt. ovenproof bowl, as directed on the package; scrape side of bowl. Beat cream cheese, egg and granulated sugar until well blended.
  • 3. Spoon into center of batter in bowl. Bake 1 hour 5 min, or until toothpick inserted in center comes out clean. Cool cake in bowl 10 min.
  • 4. Loosen cake from bowl with knife; invert onto wire rack. Remove bowl; cool completely. Beat dry pudding mix, powdered sugar and milk in medium bowl with whisk 2 min.
  • 5. Stir in COOL WHIP. refrigerate until ready to use. Place cake on plate; frost with pudding mixture. Cover with coconut flakes.
  • 6. Keep refrigerated.

  • Cake: Heat oven to 350 degrees. Grease two 9-inch round cake pans with baking spray. Line bottom of pans with waxed paper; spray paper with baking spray. Dust with flour; tap out excess.
