SNICKERDOODLE MINI MUFFINS

Steps:
- Heat oven to 400°F Spray bottoms only of mini muffin pan cups with cooking spray.
- For topping, combine sugar and cinnamon in small bowl; mix well and set aside.
- For muffins, combine flour, oats, sugar and baking powder in large bowl; mix well. In small bowl, combine milk, egg, margarine and vanilla; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.)
- Fill muffin cups two-thirds full. Sprinkle topping evenly over tops of muffins.
- Bake 12 to 14 minutes or until light golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan. Serve warm.
- Note: To prepare regular-size muffins, line 12 medium muffin pan cups with paper baking cups or spray bottoms only with cooking spray. Prepare muffin batter as directed above. Fill muffin cups almost full. Sprinkle with topping. Bake 18 to 22 minutes or until light golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan. Serve warm.

- For dipping your donut muffins, prepare the following: In a small bowl, •Melt 1/2 cup butter In a small bowl mix, •1/2 cup Sugar •1 1/2 teaspoons Ground Cinnamon Directions Preheat oven to 350 Degrees F. Spray mini muffin tin with non-stick cooking spray - be sure to spray the top of the pan too. In a large bowl, mix melted butter, sugar and vanilla - mix until smooth. Next pour milk over mixture, set aside, do not mix. In a medium size bowl, mix the remaining dry ingredients (flour, baking powder, cinnamon, cream of tartar and nutmeg). Pour your dry ingredients over the butter/sugar/vanilla/milk mixture -and mix until just blended. Using a spoon or a scooper (I use a medium size Pampered Chef scooper), fill each muffin 3/4 full. Place in oven on middle rack and bake 18-20 minutes, until lightly golden brown. Remove from oven. Take each donut muffin, and while they are still warm (but not too hot), dip them completely in melted butter and roll them in cinnamon sugar mixture. Place on wax paper to cool. Enjoy them warm or cold with a glass of milk!

- Preheat oven to 350.
- Make topping in small bowl; set aside.
- In large bowl mix together flour, baking powder, baking soda, cream of tartar, nutmeg and salt together; set aside.
- In another bowl cream the butter and sugar until light and fluffy, about 3 minutes.
- Add eggs, one at a time, beating well after each addition.
- Beat in vanilla and buttermilk.
- Beat in dry ingredients until just incorporated.
- Using a small scoop, drop a scoop of batter into the bowl with the sugar and cinnamon.
- Sprinkle the dough with the mixture and roll it around until it is covered completely in cinnamon sugar.
- Place the ball into the muffin tin.
- Sprinkle left over cinnamon sugar onto the top of muffins.

- Mix flour, sugar, salt and baking powder in a large bowl. Add melted butter, milk and egg. Stir together until mixed but still lumpy. Fold in diced apples.
- Scoop into sprayed or lined muffin tins, filling 1/2 to 3/4 full. Bake at 425 degrees for 9-11 minutes. Do not over bake.

- 5. While baking mix the topping together, 1/3 cup of sugar and 1 teaspoon of cinnamon. once muffins are out put topping on muffins. If you prefer a lot of topping brush a little melted butter ontop of muffin to get more of the topping to stick.

- 1. Preheat the oven to 350 degrees F. Line standard muffin tins with paper liners. 2. With an electric mixer on medium-high speed, cream butter and sugar until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Beat in vanilla. 3. In a separate bowl, combine the dry ingredients. Add half of the dry ingredients to the mixing bowl and stir to combine. Add the sour cream and buttermilk and mix to combine. Add the rest of the dry ingredients and mix until you have smooth batter, making sure not to over mix. 4. In a small bowl, combine the sugar and cinnamon for the topping. Use an ice cream scooper (I used a large 3 tablespoon one) and plop a scoop of batter into the bowl with the sugar and cinnamon. Gently roll the batter in the sugar and cinnamon. Place the ball into the muffin liner. 5. When you have completed all of the muffins, sprinkle the leftover cinnamon sugar onto the tops of all of the muffins. 6. Bake the muffins at 350 degrees F for about 15-18 minutes or until they are golden on top and just baked through.

- Bake: 12 to 14 minutes for mini-muffins and 18 to 22 for regular muffins, or until light golden brown.

- Remove from pan. Serve warm.
- NOTE: I froze some of these and the topping cracked and fell off in most places. I would recommend that you add the topping - or at least more - when ready to serve if you freeze any.
