My husband loves snickerdoodle cookies. When I made this snickerdoodle bread, he said that he likes it better than banana bread.

2 cups white sugar
1 cup butter, softened
2 teaspoons ground cinnamon
½ teaspoon salt
3 eggs
¾ cup sour cream
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 (10 ounce) package cinnamon chips (such as HERSHEY'S®)
3 tablespoons white sugar
3 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 4 mini loaf pans.
  • Cream together sugar, butter, cinnamon, and salt with an electric mixer until fluffy, about 5 minutes. Add eggs and mix well. Mix in sour cream and vanilla until combined.
  • Combine flour and baking powder in a separate bowl. Pour into egg mixture and mix well. Stir cinnamon chips into batter. Spoon batter into 4 mini loaf pans until 2/3 full.
  • Mix 3 tablespoons sugar and cinnamon together in a small bowl. Sprinkle topping over the batter in each loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the centers come out clean, 35 to 38 minutes. Let cool completely before removing from the pans.

BREAD
2 c all purpose flour
1 1/2 c white whole wheat flour (all purpose may be substituted)
2 c light brown sugar, packed
1/3 c granulated sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 heaping tbsps. pumpkin pie spice
1 -15 oz can pumpkin puree (this measures to be just under 2 cups)
1 c vegetable oil
1/3 c honey
1/3 c water
1/2 c walnuts, chopped
STREUSEL TOPPING
1/2 c all purpose flour
1/2 c granulated sugar
1/2 tsp salt
2 Tbsp cinnamon
2 Tbsp butter (sometimes, i double this amount to make the topping extra good.)

Steps:

  • 1. Preheat oven to 350 degrees F. Place a rack in the center of the oven. Grease and flour two loaf pans and set aside.
  • 2. In a large bowl, whisk together flours, sugars, baking soda, baking powder, salt and spices. In a medium bowl, carefully whisk together pumpkin puree, oil, honey and water. Add walnuts.
  • 3. Add the wet ingredients to the dry ingredients and use a spatula to fold all of the ingredients together. Make sure to scrape the bottom of the bowl well, incorporating all the dry ingredients.
  • 4. Divide the dough between the two greased pans and sprinkle with the streusel topping. Bake for 1 hour to 1 hour and 15 minutes, or until a skewer inserted in the center comes out clean. Remove from the oven. Let rest in the pans for 15 minutes, then invert onto a cooling rack.

3/4 cup prepared eggnog
1 teaspoon vanilla extract
1 tablespoon rum liquor

3/4 cup cinnamon flavored baking chips
1/2 cup sifted powdered sugar

Steps:

  • Preheat oven to 325F.
  • Spray a 5"-1/4x9"x2-3/4" glass baking pan (6 cup capacity) with Baker's Release spray and set aside.
  • Whisk together the eggs, granulated sugar and cooled melted butter with a whisk.
  • Stir in the eggnog, vanilla and rum.
  • Stir in the flour, salt, baking powder, cinnamon and nutmeg until you have a smooth batter.
  • Fold in the cinnamon chips then pour batter into the sprayed pan.

Steps:

  • In a large mixing bowl whisk the eggs and sugar together until well combined.

1 cup pumpkin
2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
1 cups sugar
⅓ cup Walnuts
½ tsp. cinnamon
1 3-oz. box coconut pie filling (instant or regular)
2 eggs
½ tsp. salt
½ tsp. baking soda
12-oz. cinnamon chips, divided use
6 tablespoonfuls sugar
1 ½ teaspoons cinnamon
1 cup cinnamon chips
2 tbsp. milk or cream

Steps:

  • Mix oil, eggs, and pumpkin, cinnamon, salt, and baking soda.
  • Mix with electric beater until smooth.
  • Stir in flour, sugar, coconut pudding and pie filling mix, 1 cup cinnamon chips and walnuts to pumpkin mixture.
  • Pour mixture into a 9x5x3" greased loaf pan or 3 miniature loaf pans.

2 tsp baking powder

3 tsp cinnamon
2 c cinammon chips
1 c butter, softened

  • 1. Preheat oven to 350 degrees and grease & flour two loaf pans and set aside. Cream together softened butter, sugar, salt and cinnamon till fluffy. Then add your eggs and mix well. Next add the sour cream and vanilla and mix well.
  • 2. Next fold in your mixture of flour and baking powder. Do not over mix. Mix till it is combined and then stir in your Cinnamon chips. Pour into your loaf pans and sprinkle the sugar and cinnamon mixture on top of both loaves then bake. Bake for 35-45 minutes and make sure to check with your cake tester that it comes out clean testing from the center of your loaf. Let the loaves cool for about 10 to 15 minutes before placing on a cooling rack.
