Number Of Ingredients 8

3 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon honey
Kosher salt, freshly ground pepper
1/4 small red cabbage, thinly sliced
8 ounces sugar snap peas, thinly sliced crosswise
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh mint or basil

Steps:

  • Whisk oil, lemon juice, and honey in a large bowl; season with salt and pepper. Add cabbage, snap peas, parsley, and mint and toss to combine.
  • DO AHEAD: Vegetables can be cut and dressing can be made 8 hours ahead. Cover and chill separately. Toss vegetables and dressing together just before serving.

Number Of Ingredients 9

2 1/2 pounds green cabbage (preferably Savoy), quartered, cored, and thinly sliced (14 cups)
3/4 pound sugar snap peas, trimmed and thinly sliced diagonally (4 cups)
3/4 cup well-shaken buttermilk
1/2 cup sour cream
1/4 cup chopped fresh dill
2 garlic cloves, minced
1 3/4 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon white distilled vinegar

Steps:

  • Toss together cabbage and peas in a large bowl. Whisk together remaining ingredients and pour over slaw, stirring to combine well. Add salt to taste, then chill, covered, at least 2 hours.

Last Friday I picked up snap peas and cabbage at our local farmers' market to prepare this simple and quick slaw. From Epicurious with minor adjustments.

SLAW:
1/2 small head red cabbage, thinly sliced or coarsely chopped
3/4 cup(s) head green cabbage, thinly sliced or coarsely chopped
8 ounce(s) snap peas, trimmed and thinly sliced crosswise
1/4 cup(s) fresh parsley, chopped
1/4 cup(s) fresh mint or fresh basil, chopped (i used half of each)
VINAIGRETTE:
3 tablespoon(s) extra virgin olive oil
3 tablespoon(s) lemon juice (lime juice may be an interesting twist)
1 teaspoon(s) honey
- salt and cracked black pepper, to taste

Steps:

  • Whisk the VINAIGRETTE ingredients together in a glass prep bowl.
  • In a non-reactive bowl combine the slaw ingredients. Pour the vinaigrette over the slaw and toss. Cover and chill.
