Smothered Andouille Sausage and Shrimp Over Creamy Stone Ground Grits image

3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chopped onions
1/2 cup chopped green bell peppers
1/2 cup chopped celery
Salt
Cayenne pepper
1 pound andouille sausage, sliced 1/4-inch thick
1 1/2 pounds medium shrimp, peeled and deveined
2 3/4 cups clam juice or chicken broth
1/4 cup heavy cream
1/4 cup chopped green onions
1 recipe Creamy Stone Ground Grits, recipe follows
Chopped fresh parsley leaves, for garnish
5 cups water
5 cups milk
2 teaspoons salt
1 teaspoon freshly ground white pepper
4 tablespoons butter
1 1/2 cups stone ground white grits
1 pound grated white Cheddar

Steps:

  • In a saute pan, over medium heat, melt the butter. Stir in the flour and cook for 4 to 6 minutes for a medium brown roux, about the color of peanut butter. Add the onions, peppers, and celery. Season with salt and cayenne. Continue cooking until the vegetables are wilted, about 8 minutes. Add the sausage and continue to cook for 2 minutes. Season the shrimp with salt and cayenne. Add the shrimp. Stir in the clam juice and cream. Bring the liquid to a simmer and continue to cook for 8 to 10 minutes, until the mixture coats the back of a spoon. Remove from the heat and stir in the green onions. To serve, spoon the grits in the center of each serving bowl. Spoon the shrimp mixture over the grits. Garnish with parsley.
  • In a large saucepan, over medium heat, combine the water, milk, salt, pepper and 2 tablespoons of the butter. Bring the liquid to a gentle boil. Stir in the grits. Cook for 2 hours, stirring occasionally. (The grits will stick to the bottom of the pan, so make sure not to scrape the bottom of the pan. If the grits absorbed all of the water, add some hot water to thin out.) Remove the pan from the heat and stir in the remaining 2 tablespoons butter and cheese. The grits can either be served immediately or prepared in advance and reheated.
  • If preparing in advance, grease a pan with a teaspoon of butter. Pour the grits into the pan and reheat in a 400 degree F for 15 minutes.

It is a recipe rooted in the culinary traditions of the South Carolina coast and benefits mightily from the use of fresh shrimp and crab.

8 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, peeled and finely chopped
1 large Spanish onion, diced
2 ribs celery, diced
1 red bell pepper, diced
1 1/4 cups all-purpose flour
2 tablespoons fresh sage leaves, rubbed
1 tablespoon fresh thyme leaves, finely chopped
1/2 cup dry sherry
1/4 cup Worcestershire sauce
3 pinches nutmeg
2 pinches cayenne pepper
3 to 4 cups clam juice, or fish or chicken stock
1 tablespoon tomato paste
Kosher salt and freshly ground black pepper to taste
3 pounds large shrimp, shelled and butterflied
1 1/2 pounds jumbo lump crab meat.

Steps:

  • In a large, heavy-bottomed pot or Dutch oven set over medium heat, melt butter with olive oil. When the butter begins to foam, add garlic, onion, celery and pepper, and sauté until onion is translucent, stirring often, approximately 10 minutes. Adjust heat to high, add flour and stir briskly to make a blended, smooth roux. Continue cooking until the roux begins to brown, about 5 minutes. Reduce the heat to medium low, and continue to cook, stirring often, for an additional 20 to 30 minutes, until the mixture has turned a deep brown. Be careful not to burn it.
  • Add sage, thyme, sherry, Worcestershire sauce, nutmeg, cayenne pepper and clam juice or stock, and stir to combine, then return the heat to medium. When the mixture begins to simmer, add tomato paste, and season with salt and pepper. Cook for approximately 15 minutes, stirring often. Add shrimp, cook 3 to 4 minutes, then gently fold in the crab meat and simmer an additional 2 to 3 minutes to heat through. Serve ladled over stone-ground grits.

2 green tomatoes, cut into 1/2 inch slices
1 cup milk
1 cup cornmeal
1/2 cup flour
Salt and pepper
2 tablespoons butter
2 cups fresh milk
3 ears corn, cut off the cob, cut very fine
1/3 cup cornmeal
2 tablespoons butter
2 teaspoons sugar
1 teaspoons salt
2 eggs, beaten separated
2 tablespoons butter
12 shrimp, peeled and deveined
1 sweet Vidalia onion, minced
1 teaspoon garlic, minced
1/4 cup flour
3 cups chicken stock
1/4 chopped parsley
2 quarts boiling water
1 tablespoons white vinegar
Pinch salt
2 eggs

Steps:

  • For the Fried Green Tomatoes: Soak tomatoes in milk. Mix cornmeal and flour. Season with salt and pepper and set aside. In a large saute pan over medium-high heat add butter. Dredge tomatoes in a cornmeal until completely covered. Carefully place tomatoes in a saute pan and fry for 2 minutes on each side. Drain on a paper towel; season with fresh cracked pepper.
  • For the Sweet Corn Spoonbread: Preheat oven to 350 degrees F. Bring to a boil one-cup of milk; add corn and cornmeal, stirring constantly, and cook for 5 minutes. Remove from the fire and beat in butter, sugar, salt, and the remaining milk. The cold milk should cool the mixture. Beat egg yolks. In a separate bowl, beat whites until stiff, then fold the stiffly beaten whites into egg yolks. Add to cooled milk mixture. Pour the mixture into a buttered dish and bake for 30 minutes.
  • For the Smothered Shrimp: In a medium saute pan over high heat add butter and saute the shrimp. When the shrimp are slightly pink, add the onions and garlic and saute until translucent. Dust with flour and stir well incorporated to a paste. Add chicken stock 1 cup at a time working, with a wooden spoon. When gravy is formed, season with salt and pepper, and finish with chopped parsley.
  • For the Poached Eggs: Bring water to a boil; add vinegar and salt. Crack 2 eggs and poach for 3 to 4 minutes. Remove with slotted spoon.
  • To Assemble: In a soup bowl, scoop a small amount of spoonbread into the center. Top with poached eggs and garnish with shrimp and chopped parsley.

3 cups chopped onions
1/2 cup chopped celery
3/4 teaspoon salt
1 teaspoon black pepper

1 teaspoon flour
1 tablespoon minced garlic
1 bay leaf, crushed
1 (14 1/2 ounce) can diced tomatoes
1/2 cup chicken broth or 1/2 cup water
2 lbs sliced okra, fresh or 2 lbs frozen okra
1 lb peeled deveined shrimp, about 50-60 count

Steps:

  • Heat olive oil in a large skillet over high heat. Add chopped onion and celery and saute, stirring often, about 10 minutes, until onions have browned. Combine salt, peppers, thyme and flour. Sprinkle mixture onto the browned onions; add the garlic and bay leaf, stir and cook for 1 minute. Stir in the diced tomatoes and white wine, and remove the pan from the heat.
  • Place okra in the slow cooker. Pour contents of the skillet over the okra. Stir to mix, cover and cook on LOW for 2 to 2 1/2 hours, until okra is tender but still holds its shape. Stir in the peeled shrimp and cook on LOW an additional 1 hour.

24 large shrimp, shelled and deveined
2 tablespoons butter
1 small onion, finely minced
1 cup celery, finely minced
1/2 cup green pepper, finely minced
1 tablespoon fresh parsley, chopped
1 lb fresh crabmeat (or canned if necessary)
1 teaspoon salt
1 teaspoon Worcestershire sauce
1/4 teaspoon thyme
1 dash Tabasco sauce
1/2 cup seasoned dry bread crumb
1 egg, beaten
1 cup light cream
1/2 cup butter
2 cloves garlic, minced
1 dash paprika

Steps:

  • Split the raw shrimp lengthwise, so they can be opened flat, but do not cut all the way through.
  • Spread the shrimp flat in a 9" X 13" baking dish and set aside.
  • In medium skillet, melt 2 tbsp butter and then saute onion, celery and green pepper until onion is transparent.
  • Remove from heat.
  • Add parsley.
  • Toss this mixture with crabmeat.
  • Add seasonings, breadcrumbs, egg and cream.
  • Toss gently, but thoroughly.
  • Mound crab mixture on shrimp.
  • Melt 1/2 cup butter and add minced garlic. Pour over shrimp and crab mixture.
  • Sprinkle top with paprika and bake in 400 degree oven for 20 minutes.

1 tablespoon olive oil
2 tablespoons butter
3 pounds large (21-25 count) head-on shrimp, peeled and deveined (heads and shells reserved for making stock)
1 tablespoon sweet paprika
1 1/2 teaspoons salt
1/4 teaspoon cayenne pepper
6 ounces andouille or other smoked sausage, cut into small dice (about 1 cup)
1 cup diced onions (small dice)
1 tablespoon minced garlic
2 tablespoons minced shallot
1 tablespoon minced green onion bottoms (white part)
2 cups chopped vine-ripened tomatoes
1 cup Shrimp Stock, chicken stock, or vegetable stock
1/3 cup sour cream
2 tablespoons minced green onion tops (green part)
Emeril's Creamy Stone-Ground Grits
2 tablespoons chopped fresh parsley leaves

Steps:

  • Place a 12-inch saute pan over medium-high heat, and add the olive oil. Once the oil is hot, add 1 tablespoon of the butter to the pan. While the butter is melting, season the shrimp with the paprika, salt, and cayenne. Add the shrimp to the pan and sear them for 1 1/2 minutes per side. Transfer the shrimp to a plate, and set aside.
  • Add the remaining 1 tablespoon butter to the saute pan, and when it has melted, add the andouille. Cook, stirring often, until most of the fat has rendered and the andouille is crispy, 3 minutes. Add the onions and saute for 2 minutes, stirring often. Add the garlic, shallot, and green onion bottoms, and cook for 1 minute. Add the tomatoes and cook for 1 minute. Raisethe heat to high, add the shrimp stock, and cook, stirring occasionally, until most of the liquid has evaporated, about 5 minutes. Add the sour cream and stir to combine.
  • Return the shrimp to the saute pan and fold them into the sauce. Cook until the shrimp are cooked through and hot, about 3 minutes. Stir in the green onion tops. Spoon the shrimp and sauce over the hot grits, garnish with the parsley, and serve while hot.

4 Mahi Mahi Filets (8 oz) each
1/2 diced tomato
1/2 yellow onion, diced
1/4 cup minced cilantro
8 oz jumbo shrimp
8 oz shredded Pepper Jack cheese
3/4 cup heavy whipping cream

  • 1. In large skillet, add diced tomatoes and diced onions. Saute with butter for about 8 mins until tender. Add whipping cream and shredded pepper jack cheese and mix until smooth. 2. In another skillet place your shrimp, sprinkle with blackening seasoning, and cook on medium heat with olive oil for about 6 mins. Add the cooked shrimp to the cheese sauce and cook on low heat for about 5 mins. 3. While the sauce continues to cook, in a third skillet, take your Mahi Mahi filets and cover with black seasoning on each side. 4. Over medium high heat with olive oil, place the filets down and cook for 3 mins on each side. After 6 mins, place the shrimp-cheese sauce over the fish and simmer for 10 mins. Sprinkle the minced cilantro over the mixture.

3/4 cup Asiago cheese grated

Steps:

  • Peel and devein shrimp chop chorizo into 3/8 in dice chop onion and mushroom into small dice chop garlic and set aside In a pan saute shrimp in 2 tbs butter until opaque remove and set aside. Saute the vegetables & chorizo without the garlic until the vegetables are translucent add the garlic and sauté for 1 minute.Add 3 tbs butter and melt. Return the shrimp to the pan and add the sour cream and cream and gently stir, add the asiago cheese and stir. After incorporated place on a low simmer. In another pan melt remaining butter and add essence sauté fish over med heat until done, approx. 4 minutes per side. Place 1 fillet on a plate and cover with 1/4 of the shrimp mixture and serve.

2 pounds fresh or frozen shrimp, thawed and peeled and deveined
1 teaspoon black pepper
2 teaspoons garlic powder
Salt
Flour, for dredging and thickening
1 large onion, chopped
Water
4 cups cooked white rice

Steps:

  • Heat oil in skillet. Lightly season shrimp with pepper, garlic powder, and salt and then dredge in the flour, shaking off any excess.
  • Lightly fry until shrimp turn pink and curl, about 2 minutes per side. Remove from skillet and drain. Saute onions in the same pan until they begin to soften. Add a couple tablespoons of flour and whisk well to make a roux. Season with a little more salt, pepper, and garlic powder. Whisk in water, 1/4 cup at a time until desired consistency is reached. Add shrimp and simmer in gravy for 10 minutes. Serve over white rice.

Seasoned shrimp, smothered in a trinity enhanced brown gravy and best served over homemade mashed potatoes. Gravy pictured has a splash of Kitchen Bouquet added for richness.

Homemade mashed potatoes or rice
2 pounds small (51/60 count) raw, peeled shrimp
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 teaspoon Cajun seasoning
3 slices bacon
4 tablespoons unsalted butter
1/2 cup onion
1/2 cup sweet bell pepper
1/4 cup celery
2 tablespoons garlic
1/4 cup all-purpose flour
2 cups beef broth
1 teaspoon Kitchen Bouquet

Steps:

  • Prepare mashed potatoes or rice. Toss shrimp with salt, pepper and Cajun seasoning; set aside. Cook bacon in a skillet on medium heat until crisp, remove and set aside, leaving drippings in skillet; add shrimp and cook for two minutes; remove and set aside. Add half of the butter to drippings and the onion, bell pepper and celery, cooking for about 3 minutes or just until soft, but not browned. Add the garlic and cook another minute.
  • Add remaining butter and begin stirring in flour, a little at a time, until fully incorporated. Cook and stir for 4 minutes. Slowly add broth and bring to a boil, cooking until thickened. Return shrimp and any accumulated juices, along with Kitchen Bouquet, if using; reduce heat to low and let simmer for about 10 minutes or until shrimp is completely cooked through. Set aside a pinch of the bacon for garnish, if desired, and add rest to gravy. Taste and adjust seasonings as needed.
  • Spoon over hot, homemade mashed potatoes or rice, or substitute noodles, grits or biscuits, and garnish with the bacon. Serve with a side of green peas, green vegetable or a nice garden salad and hot bread or rolls.
