CITRUS MARGARITA WITH SMOKY CHILE SALT



Citrus Margarita with Smoky Chile Salt image

Triple citrus (orange, lemon, lime) margarita with a smoky chile salt rim. Chile salt is hand mixed with fine sea salt, ancho and chipotle chile powders.

1 cup sugar
1 cup water
2 tablespoons fine sea salt
1/4 teaspoon ancho chile powder
1/8 teaspoon chipotle chile powder
Lime wedge
3/4 oz Simple Syrup
1 1/2 oz blanco tequila
1/2 oz clear orange-flavored liqueur
1/2 oz fresh lime juice
1/2 oz fresh orange juice
1/4 oz fresh lemon juice

Steps:

  • To make Simple Syrup, mix sugar and water in 1-quart saucepan. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Remove from heat; let stand 30 minutes. Transfer to storage container. Cover and refrigerate up to 3 days. Makes 1 1/4 cups.
  • To make Smoky Chile Salt, mix sea salt, ancho powder and chipotle powder in small bowl until well mixed. Spread mixture on a small plate.
  • To make margarita, rub outside rim of cocktail glass with lime wedge to moisten; roll in chile salt to coat rim of glass. To cocktail shaker, add 3/4 oz of the simple syrup, the tequila, orange-flavored liqueur, lime juice, orange juice and lemon juice. Fill shaker with ice; cover and shake vigorously. Strain into cocktail glass filled with fresh ice. Garnish as desired.

Mix up a pitcher of this make-ahead margarita for a cookout. Mezcal, tequila's smoky cousin, gives the drink it's signature flavor.

1 cup sugar
Peeled zest of 4 lemons, plus 1 1/2 cups fresh juice
12 ounces mezcal, chilled
6 ounces orange liqueur, such as Cointreau, chilled
Orange rounds, coarse sea salt or margarita salt, and frozen lemon wedges (or ice) for serving

Steps:

  • Syrup: In a saucepan, combine sugar, lemon zest, and 1 cup water. Bring to a boil over medium heat, stirring until sugar has dissolved. Remove from heat; let cool completely. Strain, discarding zest; stir in lemon juice. Cover and refrigerate in an airtight container until cold, at least 1 hour and up to 2 weeks. Makes 2 cups.
  • Margarita: In a pitcher, stir together syrup, mezcal, and liqueur. Cover and refrigerate up to 1 day, if desired. Run an orange round along the rim of each serving glass; dip each rim in salt. Add orange rounds and frozen lemon wedges to pitcher. Pour drinks into prepared glasses; serve with more orange rounds and frozen lemon wedges.

SMOKY ORANGE MARGARITA

1 cup sugar
1 cup fresh lime juice
1 cup orange liqueur
1 cup mezcal
1/2 cup fresh orange juice
1 clementine, cut into wheels
Margarita salt, for rims

Steps:

  • Combine the sugar and 1 cup water in a small saucepot. Bring to a boil over medium-high heat, stirring occasionally, and cook until slightly thickened, about 10 minutes. Remove from the heat and let cool completely. (Makes about 1 cup.)
  • To a large pitcher, add the lime juice, orange liqueur, mezcal, orange juice and 1/4 cup simple syrup. Stir to combine. Taste and add more simple syrup if desired.
  • Moisten the rim of the 4 to 6 rocks glasses with a clementine wheel and then dip the rims in margarita salt. Add ice to the glasses (not the pitcher) and pour over the margarita mixture.
  • Garnish each drink with a clementine wheel, and serve.

SMOKY PINEAPPLE MARGARITA

1/3 cup kosher salt
2 teaspoons ground chipotle
2 cups fresh pineapple chunks, chilled, plus additional for serving
3/4 cup lime juice (from 5 to 6 limes), plus lime wedges for serving
8 ounces gold tequila
3 ounces triple sec
3 to 4 sprigs cilantro
1 to 2 tablespoons light agave nectar

Steps:

  • Combine the salt and 1 teaspoon of the ground chipotle in a small shallow dish. Dip the rims of four margarita glasses in water, then coat in the chipotle salt. Set aside.
  • In a blender, combine the pineapple chunks, lime juice, tequila, triple sec and the remaining teaspoon ground chipotle. Add 1 tablespoon of the agave and blend until smooth. Taste and adjust the sweetness with more agave, as needed. Pour into a pitcher.
  • Add ice to the rimmed glasses and pour the margarita mixture over. Serve garnished with pineapple chunks and lemon wedges.

A charred serrano chile is muddled with sugar and fresh mint before being mixed with the margarita trifecta: tequila, orange liqueur, and lime juice.

1 serrano chile
3 ounces fresh lime juice, plus wheels for rims and for serving
1 teaspoon pink salt or flaky sea salt (optional)
1 teaspoon sumac (optional)
2 teaspoons superfine sugar
2 tablespoons packed fresh mint leaves, plus sprigs for serving
6 ounces 100 percent-agave silver tequila
3 ounces orange liqueur, such as Cointreau or Grand Marnier

Steps:

  • Place chile directly over a gas flame, or in a dry cast-iron skillet preheated over high and cook, turning a few times, until blackened all over, 3 to 4 minutes. Transfer to a cutting board; let cool completely. Rub a lime wheel around the rims of 2 rocks glasses. Combine salt and sumac on a small plate.
  • Dip rims of glasses into salt mixture to coat. Halve chile lengthwise; remove stem, ribs, and seeds. Divide chile, sugar, and mint leaves evenly between 2 glasses; gently pound with a muddling stick or the handle end of a thick wooden spoon until sugar dissolves and chile breaks down into tiny pieces. Fill glasses halfway with ice. Divide tequila, liqueur, and lime juice evenly between glasses; stir to combine. Garnish each with a mint sprig and lime wheel, and serve immediately.

4 ounces mezcal
1 ounce agave syrup
1 lime, juiced, plus one cut into wedges, for garnish
Smoked salt, for garnish

Steps:

  • Add kosher salt to a shallow dish and rim 2 rocks glasses. Fill the glasses with ice.
  • Add the mezcal, agave and lime juice to a cocktail shaker filled with ice and shake hard.
  • Divide the mixture between the glasses. Add a lime wedge and a sprinkle of smoked salt to each and serve.
