SMOKEY, SPICY MASHED YUKON AND SWEET POTATOES
Chipotle chiles lend a smoky kick to these mixed spuds.

- For the sweet potatoes: Preheat the oven to 350 degrees F.
- Toss the sweet potato with olive oil and a sprinkle of salt and pepper on a baking sheet. Roast until tender, about 45 minutes.
- For the mashed potatoes: Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and cook the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling) and add the sweet potatoes. Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the chopped chipotles, 2 teaspoons salt and freshly ground pepper to taste.

These are great as they are or are perfect fwith other seasonings that you may like....a sprinkling of brown sugar, cinnamon, nutmeg - or turn up the heat with a bit more cayenne........whatever suites your taste.

Steps:
- Boil the potatoes in a large pot of salted water for 12-15 minutes until fork tender.
- Drain well and mash.
- Add the salt, pepper, liquid smoke, cayenne, butter, and light cream. Mix until completely incorporated.
- Serve at once.
SMOKEY MASHED SWEET POTATOES
Steps:
- In pot cover combine potatoes and water with just enough to cover. Bring water to boil over high heat. Reduce heat to medium and cook until tender about 10-15 minutes. Drain potatoes and return to same pot. Add butter, half and half, seasoning, chili powder and salt. Mash until slightly chunky. Serve immediately or if makin ahead, transfer to baking dish;cover Refrigerate for up to 2 days. Reheat, covered, in preheated 350 degrees for 30 min. Sprinkle with Parsley before serving.
