The chipotle pepper and cumin lend a bit of heat and smokiness, while the cilantro brightens the flavor. Perfect for entertaining a crowd! Serve with pita chips and fresh vegetables.

2 (15.5 ounce) cans garbanzo beans, drained
½ cup water
¼ cup tahini (sesame-seed paste)
¼ cup fresh lemon juice
2 tablespoons olive oil
1 canned chipotle pepper in adobo sauce
2 cloves garlic
1 ½ teaspoons cumin
1 (7 ounce) jar roasted red bell peppers, drained
6 oil-packed sun-dried tomatoes, drained
½ cup chopped cilantro
½ teaspoon salt
ground black pepper to taste

Steps:

  • Place the garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in the bowl of a food processor; blend until smooth. Add the red peppers, sun-dried tomatoes, cilantro, salt, and pepper. Pulse the mixture until the ingredients are coarsely chopped into the hummus base. Transfer to a serving bowl, cover, and chill until ready to serve.

Chili Lime Cauliflower with Smokey Mayo image

1 large head cauliflower, broken into florets
2 tablespoons olive oil
1 tablespoon chile-lime seasoning, such as Tajin
2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup mayonnaise
1 tablespoon honey
1/2 tablespoon smoked paprika
1/4 teaspoon kosher salt
2 cloves garlic, pressed
1 lime, juiced
1 canned chipotle pepper, chopped, plus 1 tablespoon adobo sauce from the can
2 scallions, sliced thinly

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the cauliflower florets on a sheet pan. Drizzle with the oil and sprinkle with the chile-lime seasoning, cumin, salt and pepper. Toss to coat and bake until the cauliflower is roasted and browned, about 25 minutes.
  • For the smokey mayo: Meanwhile, make the sauce by adding the mayonnaise, honey, smoked paprika, salt, garlic, lime juice, chipotle pepper and adobo sauce to a bowl. Whisk together until smooth and incorporated.
  • Remove the cauliflower from the oven and transfer to a platter. Drizzle the sauce over the top and garnish with the scallions.

A little twist on the hummus recipe. The green chilies gives this dip a nice slight kick. This also makes a great sandwich spread.

1 (16 ounce) can chickpeas, washed and drained
1 (4 1/2 ounce) can of chopped green chilies
1/4 cup olive oil
1 lime, juice of
1 garlic clove
salt
black pepper
cayenne pepper

Steps:

  • Put all ingredients in food processor and mix till nice and smooth.
  • Adding water or olive oil to create a smoother dip if desired.
  • Serve with chips or toasted pita wedges.
