1 ripe avocado, pitted and peeled
4 oz (half of 8-oz package) regular cream cheese or reduced-fat cream cheese (Neufchâtel), softened
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup julienne-cut oil-packed sun-dried tomatoes, drained
1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
1 cup shredded Monterey Jack cheese with jalapeño peppers or regular Monterey Jack cheese (4 oz)
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch)
8 slices (1 1/2 oz each) smoked turkey breast
1 cup shredded Cheddar cheese (4 oz)
2 tablespoons butter or margarine
4 ripe olive slices, if desired

Steps:

  • In medium bowl, mash avocado. Stir in cream cheese, cumin, garlic powder, salt and pepper. Stir in tomatoes and chiles.
  • Sprinkle 3/4 cup of the Monterey Jack cheese on 4 of the tortillas. Top each with turkey slice. Spread avocado mixture over turkey. Top with remaining turkey slices. Sprinkle with 3/4 cup of the Cheddar cheese. Top with remaining tortillas.
  • In 12-inch skillet, melt 1/2 tablespoon of the butter over medium heat. Add 1 quesadilla; cook 2 to 4 minutes, turning once, until golden brown. Repeat with remaining butter and quesadillas. Garnish with remaining Monterey Jack and Cheddar cheeses. Top each with olive slice.

4 10" flour tortillas
1 cup grated monterey jack cheese with jalapeno
8 slices smoked turkey cutlets
2 Tbs butter
1 cup sour cream
1 Tbs chili powder
juice of 1 lime

Steps:

  • evenly sprinkle each tortilla with 1/4 cup of cheese and place 2 slices of smoked turkey cutlets over one side of the tortilla fold the tortillas in half and reserve place a 12" nonstick saute pan over medium heat and place about 1 1/2 tsp of butter in the pan once the butter is melted place a tortilla in the pan and cook until golden brown (about 2-3 min) flip and cook 2nd side cut quesadillas into wedges serve with sauce: place sour cream, chilli powder, and lime juice in small bowl mix until smooth

4 whole-wheat flour tortillas (8 inches across)
4 teaspoons prepared honey mustard
1/2 cup shredded Monterey Jack
4 ounces smoked turkey breast deli meat
1 Mcintosh apple, thinly sliced
1 cup shredded reduced-fat cheddar

Steps:

  • 1.Lay out tortillas and spread each with 1 teaspoon honey mustard. Place 1 tortilla, mustard side up, in a large nonstick skillet over medium heat. Top one half with 1/8 cup Monterey Jack cheese, 1 ounce turkey breast, 1/4 of the apple slices and 1/4 cup cheddar. Fold tortilla in half over ingredients and gently press. Cook 3 minutes. Flip and cook until both sides are golden and cheese is oozing slightly, about 2 minutes more. Remove quesadilla from skillet and slice into thirds. Repeat with remaining tortillas.

2 flour tortillas
1/2 cup shredded cheddar cheese (2 ounces)
1/2 cup chopped smoked turkey
1/2 granny smith apple, peeled and thinly sliced
store-bought salsa, for serving (optional)

Steps:

  • Heat an empty large skillet over medium heat until the surface is hot. Place 1 tortilla in the skillet and cook until the underside is warm, about 20 seconds. Flip the tortilla over. Sprinkle the surface with half of the cheese, the turkey, the apple, and then the remaining cheese. Top with the second tortilla.
  • Cook until the underside is toasted, about 1 1/2 minutes. Flip the quesadilla and cook until the second side is toasted, about 1 1/2 minutes more.
  • Transfer the quesadilla to a cutting board and cut into 6 wedges. Serve hot, with the salsa, if desired.

6 7-inch flour tortillas (made without lard)
6 ounces low-fat Monterey Jack cheese, planed
6 ounces smoked turkey slices (98% fat-free)
36 green grapes, halved lengthwise
Fresh cilantro sprigs
1/2 teaspoon ground cumin
1 tablespoon fresh lime juice
Coarse salt

Steps:

  • Place tortillas on work surface. Arrange cheese, turkey, grapes and cilantro over half of each tortilla. Sprinkle with cumin. Fold tortilla over filling.
  • Preheat oven to 200°F. Heat large nonstick skillet over medium heat. Cook quesadillas 1 at a time until golden brown, about 3 minutes. Turn. Brush cooked top with lime juice and sprinkle with coarse salt. Cook until golden brown, about 3 minutes. Keep warm in oven. Repeat with remaining quesadillas. Serve.

1 cup shredded KRAFT Monterey Jack Cheese with Jalapeño Peppers
8 slices OSCAR MAYER Smoked White Turkey
2 Tbsp. butter, divided
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 Tbsp. chili powder
Juice of 1 lime

Steps:

  • Top each tortilla with 1/4 cup cheese and 2 turkey slices; fold tortillas in half.
  • Heat large nonstick skillet on medium heat. Add about 1-1/2 tsp. of the butter; heat until melted. Add 1 folded tortilla; cook 3 minutes on each side or until golden brown on both sides. Remove from skillet; cut into 6 wedges. Cover to keep warm. Repeat with remaining tortillas, adding remaining butter to skillet as needed.
