This is an easy to make recipe. I've tried numerous others using colas, fancy pans, etc., but none come out near as good as this. Keeping it simple is the best way. Be sure to use a high-quality charcoal, so that it will burn for a long time. Turkey will be moist tender and smoky!

1 (12 pound) whole turkey, neck and giblets removed
1 (20 pound) bag high quality charcoal briquettes
hickory chips or chunks

Steps:

  • Place the charcoal into the bottom pan of the smoker. Light the coals and wait for the temperature of the smoker to come to 240 degrees F (115 degrees C). Lightly oil grate.
  • Rinse turkey under cold water, and pat dry. Place hickory chips into a pan with water to cover.
  • Place turkey onto the prepared grate. Add 2 handfuls damp chips at start of cooking, then a handful every couple of hours during the cooking process. Leave the lid on - DO NOT keep looking at the turkey, or you will let the heat out! Continue smoking until the internal temperature of the turkey reaches 165 degrees F (74 degrees C), or keep going until the coals die out.

2 cloves garlic, smashed
Small bundle of fresh dill with the stems
1/2 cup dry white wine
1/2 lemon
Kosher salt and freshly ground black pepper
2 large artichokes
1 clove garlic, grated
Juice and zest of 1/2 lemon
3 tablespoons olive oil
1 teaspoon finely chopped oregano
Kosher salt and freshly ground black pepper

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • For the court bouillon: Combine the garlic, dill, 4 cups of water and wine in a large stock pot. Squeeze the lemon juice into the pot, then add the lemon half. Season with salt and pepper. Bring to a gentle boil over direct heat.
  • For the artichokes: Cut off the top inch and most of the stem close to the base. Trim the tip of each outer leaf with kitchen shears. Trim the bottoms of the artichokes and prick with a fork or paring knife. Place over indirect heat to take on some smoke while the poaching liquid comes to a boil, about 5 minutes.
  • Place the artichokes in the liquid, bottoms up. Cover and simmer until a knife inserted into the bottom of the artichoke gives no resistance, about 30 minutes.
  • Meanwhile, make the vinaigrette: Whisk all the ingredients together in a medium bowl and season with salt and pepper.
  • Serve the artichokes with the vinaigrette on the side for dipping.
  • (Alternatively, you can poach the artichokes over medium-high heat on a stovetop.)

3/4 cup oil-packed sun-dried tomatoes, drained
2/3 cup grated Parmesan cheese
1/2 cup water-packed artichoke hearts, chopped
1/4 cup olive oil
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
2 garlic cloves, halved
2 teaspoons balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
SANDWICHES:
12 slices Italian bread (1/2 inch thick)
1 cup roasted sweet red peppers, drained and chopped
24 thin slices deli smoked turkey
1 small red onion, halved and thinly sliced
3 tablespoons balsamic vinegar
12 slices part-skim mozzarella cheese

Steps:

  • Preheat oven to 450°. Place the first 10 ingredients in a food processor; process until mixture resembles a paste. Spread over one side of each bread slice. Layer with red peppers, turkey and onion. Place on baking sheets; drizzle with vinegar. Cover loosely with foil., Bake 10 minutes. Uncover and top with cheese. Bake until cheese is melted, 3-5 minutes longer.

Found this recipe in "365 Great 20-Minute Recipes" and make it when I have left over roasted turkey. Instead of using smoked turkey I usually just use regular turkey and make recipe #100355 by Graybert which is delicious. I have used English muffins instead of cracked wheat bread.

6 slices cracked-wheat bread
1/2 cup thousand island dressing
2 medium tomatoes, thinly sliced
1/2 lb smoked turkey breast, thinly sliced
1 large avocado, peeled and thinly sliced
1 1/2 cups jalapeno jack cheese

Steps:

  • Preheat broiler. Arrange bread on a baking sheet and toast lightly on one side, about 1 minute.
  • Spread dressing over toasted sides of bread. Layer with tomatoes and smoked turkey. Arrange avocado slices in a spoke pattern over turkey. Sprinkle with cheese on top.
  • Broil about 5 inches from heat 1 to 2 minutes, until cheese is melted and bubbly.
  • Enjoy!

3 ounces whole-milk mozzarella
1/2 firm-ripe California avocado
2 tablespoons unsalted butter, softened
4 slices firm pumpernickel
1 tablespoon Dijon mustard
6 ounces thinly sliced smoked turkey
Accompaniment:Cucumber, Radish, and Red Onion Salad

Steps:

  • Thinly slice mozzarella. Pit, peel, and thinly slice avocado. Spread butter on one side of each bread slice and turn slices over. Spread mustard on bread slices and top 2 slices with mozzarella, avocado, and turkey. Season turkey with salt and pepper and top with remaining 2 bread slices, buttered sides up.
  • Heat a heavy skillet over moderate heat until hot but not smoking and cook sandwiches until bread is crisp and cheese is melted, about 1 1/2 minutes on each side.
  • Serve sandwiches with cucumber salad.
