SMOKED WHOLE TURKEY BREAST

Great as a main dish, with some yummy sides, or thinly sliced as a sandwich filling, this smoked whole turkey breast is sure to please. Use an electric or thermostatically controlled smoker to keep the roasting temperature a constant 225 degrees F. Refrigerate any leftovers.

wood chips of choice, soaked in water
water as needed
8 ¾ pounds bone-in turkey breast
2 tablespoons unsalted butter, at room temperature
2 teaspoons kosher salt, or to taste
1 teaspoon montreal steak seasoning
½ teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon freshly ground black pepper
disposable drip pan, if desired

Steps:

  • Preheat a smoker to 350 degrees F (175 degrees C). Drain wood chips and place in smoker chip pan. Add water according to manufacturer recommendations.
  • Unwrap turkey breast and pat dry with paper towels.
  • Combine butter, salt, steak seasoning, smoked paprika, onion powder, and black pepper in a bowl to create a seasoned butter.
  • Gently separate skin from muscle of the turkey breast and rub seasoned butter between the skin and the muscle, keeping the skin intact. Use about 1/4 of the seasoned butter on each side, and rub the remaining seasoned butter all over the outside of the turkey breast.
  • Place prepared turkey breast directly on a smoker rack, and place the disposable drip pan on the rack below, if recommended by the manufacturer. The drip pan should not rest on the chip pan or the water pan.
  • Close and secure the smoker, lower thermostat to 225 degrees F (105 degrees C), and smoke 3 1/2 to 4 hours, adding wood chips and water as needed.
  • Use a meat thermometer to check internal temperature. Smoke until turkey registers 155 to 161 degrees F (68 degrees C to 71 degrees C). Wrap turkey breast in heavy-duty aluminum foil, then wrap in several layers of thick towels, and allow to rest for about 45 minutes. The residual heat will finish cooking the turkey breast to a safe temperature of 165 degrees F (74 degrees F).
  • Slice and serve warm.

½ cup chicken broth
¼ cup unsalted butter, melted
1 teaspoon kosher salt
½ teaspoon poultry seasoning
2 tablespoons unsalted butter
2 teaspoons kosher salt

Steps:

  • Preheat a smoker to 275 degrees F (135 degrees C). Add hickory chips according to manufacturer's instructions.
  • Combine chicken broth, melted butter, salt, and poultry seasoning in a small bowl. Inject the solution evenly throughout the breast.
  • Melt remaining 2 tablespoons of butter in a small dish. Brush evenly over the breast.

BRINE:
1 cup kosher salt
1 cup maple syrup
1/4 cup brown sugar
1/4 cup whole black peppercorns
4 cups cold bourbon
1 1/2 gallons cold water
1 (7-pound) turkey breast
TURKEY:
3 tablespoons brown sugar
1 1/2 tablespoons bourbon-smoked paprika
1 1/2 teaspoons chipotle chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons salt
1 1/2 teaspoons black pepper
1 teaspoon onion powder
1/2 teaspoon ground cumin
6 tablespoons unsalted butter, melted
Soaked applewood chips for smoking (our smoker calls for about 2 cups)
1/2 cup bourbon
1 cup water
CIDER BOURBON GRAVY:
The reserved turkey neck
2 tablespoons olive oil
3 shallots, diced
1 small apple, diced
1/4 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, minced
1/3 cup bourbon
2/3 cup apple cider
2 cups cold low-sodium chicken stock
3 1/2 tablespoons all-purpose flour

Steps:

  • Before beginning, make sure your bourbon, water and chicken stock are cold. To make the brine, combine the the salt, syrup, sugar, peppercorns, bourbon and water in a large bucket. Remove any pieces from the turkey, like giblets or the neck, reserving to the neck for the gravy. Make sure to refrigerate it a resealable bag. Once the turkey is cleaned up, it in the liquid and refrigerate it for 8 to 12 hours. Remove the turkey from the brine and pat it completely dry with paper towels. Place it on a baking sheet and refrigerate it for an hour or two so it dries thoroughly. Preheat your smoker to 300-325°F, adding your wood chips to the burner. In a bowl, combine the sugar, paprika, chili powder, garlic powder, salt, pepper, onion powder and cumin, mixing well to combine. Gently lift the skin of the turkey and rub the melted butter all over the meat. Use it all up! I use both my hands and a spoon to drizzle it down in spaces that I can't reach. Take the spice rub and rub it all over the meat as well, underneath the skin. Rub the rest of it all over the outside of the skin, covering the turkey. Combine the water and bourbon in a glass and pour it into the water pan of the smoker. Place the turkey in the smoker (I like to do it breast side down so the juices run down into it) and shut the door. Our smoker recommends smoking poultry for 20 to 30 minutes per pound, so I smoked this turkey for about 3 1/2 hours. Read the suggestions on your smoker and according to your turkey size, adjust the cook time. If desired, you can baste your turkey with melted butter while smoking, but I find that opening up the door to my smoked releases a good amount of heat, thus lowering the temperature. Once the turkey is finished, be sure to let it rest for about 20 minutes before slicing. About 30 minutes before the turkey is finished, begin the gravy. Heat the olive oil in a large saucepan over medium heat. Add the shallots and the apple with the salt and pepper, stirring to coat. Cook for 5 minutes, stirring occasionally until the shallots and apple are soft. Add in the garlic and the turkey neck and brown it on all sides, cooking for about 5 minutes per side. Increase the heat to medium-high and pour in the bourbon. Stir continuously, scraping any brown bits from the pan and cook until almost all of the bourbon evaporates - you just want a thin layer of it left in the pan. Add in the cider and bring it to a simmer. Pour the cold broth into a shaker bottle or jar. Add the flour on top, place the lid on the shaker and shake continuously for at least 30 seconds until the flour is incorporated. Remove the neck from the pan and begin to whisk the cider continuously. Slowly pour in the stock and flour while whisking and continue to stir for at least 10 to 15 minutes while the gravy thickens. Don't stop stirring or it will burn! Carve your turkey as desired and serve it with the gravy. I find that this gravy reheats well also - simply add it to a saucepan over low heat with a drop of water or stock and heat it, stirring occasionally, until it liquifies again.

Smoking the turkey was easy and resulted in THE most juicy and moist turkey DH or I had ever eaten! Cooking with indirect heat was key. I found the inspiration for this recipe on the web but have added some fresh herbs. You will not believe how the smoke flavour permeates the meat!

1/4 cup lime juice
2 tablespoons olive oil
2 teaspoons cocoa powder
2 teaspoons paprika
2 teaspoons brown sugar
1 teaspoon salt
1 teaspoon oregano
1 teaspoon thyme

4 garlic cloves, minced
6 lbs turkey breast, bone in
3 cups mesquite wood chips
Pam cooking spray
1 teaspoon fresh sage leaf, chopped
1/2 teaspoon lemon rind, grated

Steps:

  • Combine the first 10 ingredients.
  • Marinade Turkey breast in a large ziplock bag or dish for 2 hours.
  • Soak wood chips in water for at least 1 hour.
  • Drain the wood chips well and make a smoke 'bomb' using 1 cup of moistened wood chips wrapped in thick tin foil with numerous holes poked in it.
  • Heat BBQ to 350-400.
  • When heated turn off the right side. Place smoke 'bomb' on the side with the flame and the turkey breast, skin side up, on the right side of the grill.
  • Maintain temperature of grill at about 300 degrees.
  • After every hour, replace the smoke bomb with a fresh one.
  • Allow meat to cook slowly using indirect heat until the internal temperature reaches 160 degrees, approx 2 1/2 to 3 hours.
  • Sprinkle with sage and lemon.
  • Tent with foil and allow to rest for 10 minutes before carving.

3 1/2 lb smoked turkey breast, fully cooked bone-in
GLAZE
1 1/2 c maple brown sugar
4 Tbsp jack daniels
2 Tbsp dijon mustard
2 Tbsp honey
2 tsp allspice, ground
1 tsp fresh lemon juice

  • 1. Preheat oven to 350 degrees. Brush glaze all over turkey breast. Place turkey of roasting pan with rack. Add water to the bottom of the roasting pan. Place turkey in oven. After 30 minutes baste again. Bake for another 20 minutes. Add more water to roasting pan if needed. Baste again and broil on low for the last 10 minutes of cooking time. 3 tablespoons butter
1 large onion, chopped
1 large leek, chopped
2 medium carrots, chopped
1 medium celery rib, chopped
1 bay leaf
1/4 teaspoon black pepper
1 large baking potato, chopped
1 cup sauerkraut
3 cups beef broth
2 1/2 cups chicken broth
1/3 cup riesling wine (I prefer liebfraumilch)
1 extra-large egg yolk
1/2 cup sour cream
1/4 lb sliced turkey (I use double that)
2 tablespoons parsley

Steps:

  • melt the butter and sauté the onion, leek, carrot, celery, and bay leaf till golden.
  • Add potato, sauerkraut, broths, wine and simmer for 30 minutes.
  • In a heatproof bowl, blend the egg yolk with the sour cream.
  • Add a cup of the hot soup mixture into the bowl and blend.
  • Then add that back to the soup.
  • DO NOT BOIL, the sour cream will curdle.
  • cook another 3 minutes Add the turkey and cook another 3 minutes or till heated through.
  • Add the parsley and cook two minutes longer.

2 cups mesquite chips

Steps:

  • Combine the first 10 ingredients in a small saucepan; bring to a boil. Remove from heat; cool. Combine lime juice mixture and turkey in a large zip-top plastic bag. Seal and marinate in refrigerator at least 2 hours. (I like to let it marinate over night.) Smoker: Smoke turkey at about 230 degrees until internal temperature reaches 170° (about 3-4 hours). I used hickory wood chips, but mesquite is good too. For the grill: Soak wood chips in water at least 30 minutes. Drain well. Preheat gas grill to medium-hot (350° to 400°) using both burners. Turn left burner off. Place wood chips in a disposable foil pan or a foil packet pierced with holes on grill over right burner. Remove turkey from marinade; discard marinade. Place turkey, skin side up, on grill rack coated with cooking spray over left burner. Cover and cook 1 1/2 hours. Turn turkey over; cook 15 minutes or until meat thermometer registers 170°. Remove turkey from grill. Cover loosely with foil, and let stand at least 10 minutes before carving. Discard skin.

1 tbs yellow mustard

1 (7-pound) turkey breast, thawed
Butterball Buttery Creole Injection Marinade
Butterball Cajun Seasoning
Wood Chips for smoking (hickory, mesquite, apple or pecan)
Apple Juice
Water
Butter, Salt and Pepper (optional seasonings - see footnote)

Steps:

  • Fill the smoker's water pan 1/3 full with a 50/50 mixture of apple juice and water. Preheat the smoker to 240°F. Clean and dry the thawed turkey. Inject the turkey with 1/2 jar of Butterball Buttery Creole marinade. Season the outside of the turkey with Butterball Cajun Seasoning, rubbing it into the skin. (*See footnote for info about seasoning/marinade options.) Add a small handful of wood chips (we used hickory) to your smoker. Place the turkey center to high in the smoker and close the door. Add a handful of wood chips every 30 minutes. Smoke for 4.5 hours. This total cooking time is for a 7 pound turkey breast. Based on the weight of your turkey breast, you will need to adjust the total cooking time. Estimated time at 240°F is about 38/39 minutes per pound. Make sure your internal temperature in the breast reaches 165°F. * Additional Seasoning/Marinade Options: We highly recommend the Butterball Seasoning Kit with the Buttery Creole Marinade and Cajun Seasoning, but there are other options if you prefer a milder flavor. You can inject the turkey with the marinade of your choice or chicken broth. Season the outside of the turkey with salt and pepper, rubbing it into the skin. Place 5 to 6 pats of butter underneath the skin. You can also tuck several bay leaves underneath the skin.

2 tbls of salted butter for basting
Brine bag
1/2 cup of Applewood chips (Alderwood or other mild wood would work as well)
Meat thermometer
Brine:
4 cups warm water
1/4 cup Kosher salt
1/4 cup white sugar
1 tsp black pepper
Dried Bouquet Garni:
1/2 tsp each of: marjoram, thyme, basil, oregano, bay leaves, tarragon
12oz Buckler non-alcoholic beer
Drip pan mixture:
1 cup water
1/4 brown sugar
pinch of the Bouquet Garni mixture

Steps:

  • Line a large pot or colander with brine bag and place the rinsed turkey breast into the brine bag with cavity side facing up. Combine all the ingredients of the brine into a pitcher and stir until salt and sugar are dissolved. Pour brine into the brine bag covering turkey breast as much as possible. Add additional warm water if necessary. Place the pot into the refrigerator overnight. Soak your wood chips in water over night. 2 hours prior to smoking, remove the turkey from the refrigerator, rinse the turkey, and allow to warm up to room temperature. Bring smoker up to 225 -235 degrees and place 1/2 the woodchips on a hotplate on coals or electric burner. Place the drip pan directly beneath where the turkey breast will sit. The drip pan will provide steam to assist in keeping the turkey breast moist during the smoking process. Place turkey breast on smoker, breast facing up. I estimate about 35 minutes per pound. Baste the breast with butter approximately once ever hour to keep the skin crispy. Refresh the wood chips with the the remaining wood chips after about 2 hours. You will want to reach an internal temperature of around 160-170 degrees in thickest part of the breast. Buying a turkey breast with a pop up timer is a great idea as well. Remove the turkey from the smoker, cover with foil, and let rest for 30 minutes before carving. The meat will be slightly pinkish compared to that of an oven roasted turkey just ensure the temperature is up to 165-170.
