I had a half a pound of smoked sausage and didn't want to just fry and serve it up. I did a bit of " Freezer Diving " ;) and found a bag of cauliflower. So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. I want to thank Chef#64642 ( Molly53 ) and Chef#546010 ( Chicagoland du Jour ) for coming up with the name for this recipe.I know that this looks complicated, but it's really easy to make.Submitted to Food.com ( a.k.a. 1 (12 ounce) package frozen cauliflower, thawed
1/2 lb smoked sausage (I used Hillshire Farms with the yellow packaging )
1 1/2 tablespoons vegetable oil
4 tablespoons margarine or 4 tablespoons butter
4 tablespoons flour
1 1/4 cups milk (may not use all of this )
1 1/2 cups sharp cheddar cheese, grated (divided)
1 teaspoon ground black pepper (to taste)
1/2 teapoon salt (to taste)

Steps:

  • Pre-heat oven to 350F degrees.
  • In a medium skillet heat oil and,brown sausage and onion, ( If using ) and set aside ( drain if needed ).
  • In a medium saucepan, melt butter/margarine; add flour and cook until light yellow and pasty-looking.
  • Add a little milk at a time and stir until slightly thickened.
  • Remove from heat and add 1 cup of cheese, salt and pepper and stir until well blended.
  • Then fold the cauliflower and smoked sausage into the cheese sauce, coating well.
  • Place into a greased 2 quart rectangle or a 8 x 8 square baking dish.
  • Sprinkle top with remaining cheese and sprinkle with paprika if desired and bake for 30 minutes or until golden brown.

24 oz frzn cauliflower--thawed
1 lb polish sausage/keilbasa
2 1/2 c milk
8 Tbsp butter
8 Tbsp flour
2 tsp salt
2 tsp pepper
3 c cheddar cheese

Steps:

  • 1. Melt butter in saucepan Add flour, salt and pepper Brown to create a light roux
  • 2. Slowly add milk while stirring w/wire wisk keeping it smooth Cook stirring constantly till thickens
  • 3. Remove from heat and add cheese Stir to combine
  • 4. Place cauliflower into casserole dish. Pour cheese sauce over to cover
  • 5. Place polish sausage/keilbasa on top of all Bake 30 min. in 350 degree oven.

I'm pretty much on a low-carb for life diet and have been for several years so I'm always looking for new recipes and new ideas for something tasty AND that fits within my personal dietary guidlines. This recipe turned out really good and has unlimited options (i.e. beef sausage, hot dogs, chopped ham, chopped up spam or throw in your favorite veggie..) so feel free to get creative with it!!

2 cups cooked cauliflower
2 tablespoons butter
1 cup heavy cream
1/4 teaspoon pepper
1 cup shredded cheddar cheese (divided)
1 lb smoked sausage (I prefer beef sausage)
1/8 teaspoon paprika
vegetables, any you want to add would also work if you prefer, I like mushroom

Steps:

  • Cut smoked sausage in half, lengthwise, and then chop in 1/2 again.
  • (If uncooked, first cook according to package directions until SLIGHTLY browned.).
  • Put cooked cauliflower into 2 quart casserole dish. Add cooked meat and mix.
  • Melt all remaining ingredients (using 1/2 of the shredded chedder cheese) except for paprika in a saucepan over medium heat until warm, melted and smooth. (Use a wisk and stir constantly.).
  • Pour cheese sauce over cauliflower and meat.
  • Sprinkle remaining shredded cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350 degree oven for 35-45 minutes (watch-just until golden brown on top).

1 medium head cauliflower, cored and cut into florets
2 tablespoons olive oil, divided
5 eggs, divided
1 cup shredded mozzarella cheese, divided
1 tablespoon whole wheat panko bread crumbs
2 tablespoons snipped fresh chives
1 medium sweet red pepper, chopped
½ (14 ounce) package Hillshire Farm® Smoked Sausage, bias-sliced 1/2-inch thick
½ cup chopped onion
¼ cup heavy whipping cream
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 375 degrees F. Grease a 9-inch deep-dish pie plate; set aside.
  • Place cauliflower in a food processor in batches. Cover and pulse each batch until crumbly and mixture resembles the texture of rice.
  • In a very large skillet, heat 1 tablespoon of the oil over medium-high heat. Add the cauliflower and cook, stirring occasionally, about 4 minutes, or until cauliflower is tender and starting to brown.
  • In a medium bowl, combine the cauliflower, 1 egg, 1/2 cup of the cheese, the panko, and 2 tablespoons chives. Press mixture onto the bottom and up the sides of the prepared pie plate.
  • In the same skillet, heat remaining 1 tablespoon of oil over medium heat. Add sweet pepper and cook for 2 minutes, or until it begins to soften. 1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. 1 (1 pound) package smoked sausage, cut into 1/2-inch pieces
1 (15 ounce) can yellow corn, drained
1 (12 ounce) bottle chili sauce

¼ teaspoon ground black pepper
2 cups shredded Cheddar cheese, divided

1 head cauliflower, separated into florets
1 cup sour cream
1 cup shredded Cheddar cheese
½ cup crushed corn flakes
¼ cup finely chopped green bell pepper
¼ cup finely chopped red bell pepper
1 teaspoon salt
¼ cup grated Parmesan cheese
1 pinch paprika

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish.
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, and steam until crisp-tender, about 5 minutes. Drain, and set aside.
  • Combine sour cream, Cheddar cheese, corn flakes, bell peppers, and salt in a medium bowl. Stir in the cauliflower, and transfer to the prepared baking dish. Sprinkle Parmesan cheese and paprika over the top of the dish.
  • Bake uncovered until heated through, 30 to 35 minutes.
