SOUTH BEACH SALMON WITH CREAMY LEMON SAUCE LOW CARB
I found this in the "South Beach Diet Book".. even if you're not dieting... it's great. Just substitute real sour cream for the fat-free for a to die for experience. It's quick, simple and uses on hand ingredients.

Steps:
- Preheat the oven to 350°F.
- Coat a baking sheet with cooking spray.
- Heat the oil in a small saucepan over medium heat.
- Add the garlic and cook for one minute.
- Reduce heat to low; stir in the lemon juice, capers and lemon-pepper seasoning and cook for 5 minutes.
- Add the sour cream and cook for 5 minutes or until heated though.
- Meanwhile, place the salmon on the prepared baking sheet.
- Bake for 20 minutes or until the fish is just opaque.
- Serve with the sauce.

SMOKED SALMON SOUFFLE

- Melt the butter and brush 4 timbale moulds with it. Allow the butter to set and brush again. Add the flour to the remaining butter in the saucepan, cook for 1 minute
- Remove from the heat, gradually add the milk stirring all the time.
- Return to the heat and bring to the boil, stirring continuously. Simmer for 1 minute
- Tip into a large bowl and leave to cool slightly.
- Add the egg yolks, salmon and dill to the sauce, season with salt and pepper.
- Whisk the egg whites in a clean bowl until stiff but not dry and fold into the salmon mixture.
- Divide the soufflé mix between the prepared moulds and bake in a Bain Marie (roasting tin half filled with hot water) for 15-20 minutes.
- Allow the soufflés to sink and cool down.
- Run a knife around the edge of the moulds and turn the soufflés upside down onto an ovenproof dish.
- Cover and set aside until you are ready to reheat and serve them. (Or, leave to cool completely and out in fridge over night if you are planning to eat them the next day.).
- Meanwhile, make the sauce: put the wine into a small heavy pan and reduce, by boiling rapidly, to half its original quantity.
- Add the heavy cream and chopped dill, season with salt and pepper.
- Either pour over the soufflés and reheat for 15 minutes, or serve the sauce separately around the soufflé on the plate.

SALMON SOUFFLE
This is an old stand-by in our house. It is so simple to make and everyone loves it. The glorious end result makes you look like a cooking star. I found the recipe years ago in my SIL's Harrowsmith cookbook.

Steps:
- Melt butter in small sauce pan.
- Add flour, milk, salt and pepper.
- Boil until thick and then remove from heat.
- Add salmon and slighty beaten egg yolks.
- Beat egg whites until stiff and fold inches.
- Pour into greased souffle dish or other deep baking dish.
- Bake at 350 for 20-25 minutes or until golden brown.

SPICY DILL MAYO SALMON (SOUTH BEACH DIET FRIENDLY)
Spicy Dijon and Mayo with Dill. Try with different types of fish (or shrimp, chicken, etc.) I used low-fat mayonnaise to make it South Beach Diet friendly. Note: for a quicker recipe nix the thyme, oregano, basil, even garlic. Note: for a better presentation, hold dill until the end and sprinkle over the top rather than mixing into sauce. Note: I've used regular jarred spices rather than fresh and they work just fine.

- Preheat oven to 375°F.
- Stir together mayonnaise and mustard.
- Add spices (withhold dill and sprinkle on top later for a more professional presentation).
- Arrange salmon on a baking sheet or pan.
- Coat with sauce (add dill here if you've withheld it).
- Bake for 30-40 minutes (salmon flakes when done).
- Optional: When serving, spoon remaining sauce back over fish for a saucier version.

Steps:
- Cut the fish into 4 equal-size portions. Combine the olive oil, lemon juice, salt, pepper, garlic, and rosemary in a bowl. Brush the mixture onto the fish.
- To grill, arrange the fish on a grill rack or use a grill basket sprayed with olive oil cooking spray. Grill over medium-hot coals until the fish flakes easily (allow 4-6 minutes per 1/2" of thickness). If the fish is more than 1" thick, gently turn it halfway through grilling.
- To broil, spray the rack of a broiler pan with olive oil cooking spray and arrange the fish on it. Broil 4" from the heat for 4-6 minutes per 1/2" thickness. If the fish is more than 1" thick, gently turn it through broiling.
- To serve, top the fish with capers, if using, and garnish with rosemary sprigs, if desired.
