1 package (8 ounces) reduced-fat cream cheese
1 teaspoon snipped fresh dill or 1/4 teaspoon dill weed
36 slices cocktail rye bread
12 ounces sliced smoked salmon or lox
1 medium red onion, thinly sliced and separated into rings
Fresh dill sprigs, optional

Steps:

  • In a small bowl, combine cream cheese and dill. Spread on rye bread. Top with salmon and red onion. Garnish with dill sprigs if desired.

¾ cup finely chopped white onion
3 tablespoons drained capers
2 tablespoons chopped fresh dill
1 tablespoon lemon juice
4 teaspoons Dijon mustard
salt and ground black pepper
1 sourdough baguette
6 ounces thinly sliced smoked salmon
1 (8 ounce) package cream cheese, softened, or as needed

Steps:

  • Stir onion, capers, dill, lemon juice, and Dijon mustard together in a small bowl to make relish. Season with salt and pepper.
  • Cut sourdough baguette into 24 thin slices. Cut salmon into 24 pieces. Spread cream cheese on each slice of bread, add 1 piece of salmon, and top carefully with relish. Place on a serving dish.

Raw Oysters with Smoked Salmon and Caviar Cream image

1/2 cup creme fraiche
1/4 cup heavy cream
2 ounces caviar (beluga, osetra or sevruga)
1 tablespoon lemon juice
1 tablespoon finely chopped chervil or dill, plus extra sprigs for garnish
About 4 ounces top-quality smoked salmon, sliced extremely thinly
12 cold, freshly opened oysters

Steps:

  • In a bowl mix together the creme fraiche, heavy cream, 2 tablespoons of the caviar, lemon juice, and chopped chervil or dill. Refrigerate the sauce for 1 to 2 hours before using.
  • Just before serving, cut the salmon into 12 pieces; they should be large enough to wrap the oysters into roughly square little packets. Wrap the oysters.
  • Divide the cream sauce among the serving plates, creating a pool of sauce at the center of each plate.
  • Divide the wrapped oysters among the plates, arranging them on the sauce pools. Garnish each packet with a generous 1/4 teaspoon of caviar and a chervil or dill sprig.

These tarts should be put together just before serving or the bread case will turn soggy. Use either white or wholemeal bread.

4 eggs
12 slices bread
butter, for spreading
2 tablespoons creme fraiche
salt & pepper
2 teaspoons chives, finely chopped
100 g smoked salmon
100 g salmon caviar

Steps:

  • Prreheat oven to 180°C.
  • Hard boil eggs. Cool and remove shells.
  • Remove crust from bread. With a rolling pin flatten bread to half the thickness. Thinly butter bread and trim to fit small muffiin tins.
  • Push bread - butter side down - into muffin tiins and bake 12-15 mins until golden brown. Cool on wire rack.
  • Finely chop eggs mix with creme fraiche and season with salt and pepper and chives.
  • Divide between the 12 cases. Top each one with salmon and 1/2 teaspoon of caviar.

Although New York has long had pizza bragging rights, the modern American version of pizza with toppings that went beyond basil and mozzarella began in Wolfgang Puck's kitchen at Spago in Beverly Hills in the 1980s and started a California pizza trend that spread far and wide.

1 tablespoon minced chives
1 recipe pizza dough (see recipe)
4 tablespoons extra-virgin olive oil
6 tablespoons sour cream or creme fraiche
3 to 4 ounces smoked salmon, cut into paper-thin slices
4 heaping tablespoons domestic golden caviar
1 teaspoon black caviar

Steps:

  • Preheat the oven to 500 degrees and put a pizza stone inside. Knead 2 teaspoons of the minced chives into the pizza dough. Roll or stretch the dough into four 8-inch circles. Place the pizzas on a lightly floured wooden peel or board. (Work in batches.) Brush the centers of the circles with olive oil to within 1 inch of the edges.
  • Slide the pizzas onto the stone and bake 8 to 10 minutes, or until golden brown. Transfer to serving plates and spread with the sour cream or creme frache. Arrange the salmon slices over the top. Place a tablespoon of the golden caviar in the center of each pizza and spoon 1/4 of the black caviar into each center. Sprinkle the salmon with the remaining chives and serve.

2 tablespoons (1/4 stick) butter, melted
12 teaspoons creme fraiche* or sour cream
8 ounces thinly sliced smoked salmon
2 tablespoons (about) black caviar
24 dill sprigs

Steps:

  • Preheat oven to 350. Using 1 1/2-inch round cookie cutter, cut out 24 rounds from bread slices. Place bread rounds on baking sheet. Brush rounds with melted butter. Bake until golden, about 10 minutes. Cool. Spread 1/4 teaspoon creme fraiche atop each bread round. Fold salmon slices decoratively atop creme fraiche. Top each with another 1/4 teaspoon creme fraiche, then 1/4 teaspoon caviar. Garnish each round with 1 dill sprig. (Can be prepared 1 hour ahead.
