Roasted Beer Can Chicken Recipe - Traeger Grills image

This simple Traeger Beer Can Chicken recipe makes moist and flavorful chicken a breeze. Just rub the bird with Traeger Rub, place it on the pellet grill.

Steps:

  • Season chicken generously with Traeger Chicken Rub, including inside the cavity.
  • Tuck the wing tips back.
  • When ready to cook, set Traeger to 350℉ and preheat, lid closed for 15 minutes.
  • Open the can of beer and set the chicken on top of the beer. Make sure all but the bottom 1-1/2 inch of the beer can is in the cavity of the chicken. Tip: you can also place the beer can directly on the grill grates, then place the chicken on top.
  • Place the entire chicken and beer can directly on the grill grate. Cook for 60 to 75 minutes, or until the internal temperature registers 165℉ in the thickest part of the breast.
  • Remove from the grill and onto a sheet tray and let rest 5 to 10 minutes. Before carving, lay the bird on its back and remove the beer can. Carve and enjoy!

1 tablespoon kosher salt
½ tablespoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried parsley
½ teaspoon ground mustard
¼ teaspoon celery seed
4 pounds chicken drumsticks

Steps:

  • Combine salt, pepper, garlic powder, onion powder, paprika, parsley, mustard, and celery seed in a small bowl. Stir until evenly combined. Lay drumsticks on a clean work surface and rub all sides with the spice mixture.
  • Preheat an electric smoker to 250 degrees F (120 degrees C).
  • Lay drumsticks directly on the smoker racks and smoke for 2 1/2 hours.

These smoky chicken drumsticks are so versatile and easy! I like to use applewood chips or other fruit woods, but maple is also a great choice. Use your favorite BBQ rub. Letting the drumsticks air dry in the refrigerator overnight, combined with a higher smoking temperature, helps prevent rubbery skin that is common when smoking chicken. Serve with your favorite BBQ sauce, if desired.

12 chicken drumsticks
¼ cup vegetable oil
⅓ cup BBQ rub

Steps:

  • Remove drumsticks from packaging and place on a rack over a drip tray or baking sheet. Air dry in the refrigerator, 8 hours to overnight.
  • Preheat an electric smoker to 275 degrees F (135 degrees C). Add wood chips according to manufacturer's instructions.
  • Brush drumsticks lightly with vegetable oil. Place drumsticks in a resealable plastic bag and sprinkle with the rub. Toss to coat evenly.
  • Place drumsticks on the rack in the smoker. Smoke until chicken has reached an internal temperature of 165 degrees F (74 degrees C), about 2 hrs.

2 tablespoons paprika
2 tablespoons chili powder
2 tablespoons cayenne pepper
2 tablespoons freshly cracked black pepper
1 tablespoon dried thyme
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon kosher salt
1 (3 1/2) pound whole chicken

Steps:

  • Preheat a smoker to 250 degrees F (120 degrees C).
  • Combine paprika, chili powder, cayenne, black pepper, thyme, garlic powder, onion powder, and salt in a large mixing bowl and mix completely with a fork until well combined.
  • Spatchcock the chicken by placing chicken, breast side down, on a work surface. Starting at the tail end, cut along both sides of backbone with kitchen shears. Remove backbone. Grabbing hold of both sides of the chicken, open it like a book. Turn breast side up. Push down on each side of breast with your hands until you hear it crack. Flatten. Rub with the seasoning blend.
  • Smoke until an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 140 degrees F (60 degrees C), about 3 1/2 hours. Turn up the heat to 350 to 400 degrees F (175 to 200 degrees C) and get direct heat on the skin to finish out with an internal temperature of 160 degrees F (71 degrees C).
  • Remove from heat, cover in foil, and allow to rest until the internal temperature reaches 165 degrees F (74 degrees C), about 10 minutes. Cut and serve.

CAJUN SMOKED BEER CAN CHICKEN



Cajun Smoked Beer Can Chicken image

This is the best chicken that I have ever had! I purchased a Big Green Egg Smoker and was looking for new recipes and discovered this. I found the recipe on the website The Smoker King (smokerking.com). I think the key part of this recipe is the injection. It makes the chicken so tender and juicy. The chicken is injected with a butter mixture. Leave it to me to find the only unhealthy recipe for chicken on the internet!

one whole chicken (3 or 4 lbs.)
3 garlic cloves
3 pieces of chopped onions
one 12 oz. beer
1/2 cup melted butter (room temperature)
2 tablespoons Tony Chachere's Seasoning (I used dizzy pig)
1 teaspoon garlic powder
1/2 cup vinegar
olive oil
tony chachere's seasoning to cover the outside of the chicken
1 cup apple cider
1/2 cup olive oil
spray bottle

Steps:

  • Directions:
  • 1. Whisk all injection ingredients together.
  • 2. Using a kitchen syringe, inject the liquid into various spots on the chicken. Try to be even as possible, injecting about 1/2 of the mixture into the breasts, and the other 1/2 throughout the rest of the chicken.
  • 3. Rub the chicken down with olive oil, and apply an even layer of Tony's Cajun Seasoning to the bird.
  • 4. Drink half of the beer, widen the opening at the top of the can, then put the garlic and onion in the can.
  • 5. Place the bird on the can. It should sit up by itself. You may have to prop the legs forward to make it sit up.
  • 6. Preheat your smoker to about 250 F degrees. I use hickory for chicken; charcoal works well too.
  • 7. Mix the mop ingredients in the spray bottle and shake before each use.
  • 8. Put the chicken on the smoker and spray the chicken with the mop about every 30 minutes to keep it moist.
  • 8. Smoke the chicken for 3-4 hours, or until the internal temperature of the thickest meat reaches 175 F Degrees.

1 whole chicken
1 can of beer
2 tablespoons chopped onion
2 tablespoons apple cider vinegar
3 cloves garlic minced

Steps:

  • Preheat smoker. Wash and trim chicken. While the smoker heats up, open the beer and drink half and only half. With a can opener, cut the top of the beer can off. Add onion, vinegar and garlic to beer. When the smoker is read place the beer in the middle of the rack. Carefully place the chicken over the beer standing up. You might need to get a little creative to make it stand up properly. Make sure the beer can is completely covered by the chicken. Smoke chicken for about 3 to 4 hours or until the skin is a dark tan and the meat is pink

1 (2 to 3 pound) whole chicken
1 (12 fluid ounce) can beer
5 tablespoons poultry seasoning
4 dashes liquid smoke flavoring
4 bay leaves
1 long metal skewer

Steps:

  • Rinse and dry the chicken. Remove excess fat and leave skin on. Lift skin from breast and thigh areas, slide bay leaves under skin. Coat chicken with poultry seasoning.
  • Drink half the can of beer, pour liquid smoke into remaining beer. Raise tab on beer can until it is in the straight up position.
  • Insert beer can into chicken from the bottom until even with bottom of chicken. Insert skewer through the wing, ribs, tab on beer can, and out the opposite side. (this keeps the can from falling out the chicken).
  • Prepare grill: light the coals, and when they are ready, spread coals to form a ring around the outside edge of the grill.
  • Place chicken in center standing up on can to cook. Cover and cook for two hours.
  • Remove carefully from grill so as not to spill the contents of the can. Remove skewer and beer can, let chicken sit for fifteen minutes before cutting.
