Coffee rub for smoked meats. I love this rub on chicken, but I've also tried it on brisket and it's equally as good.

¾ cup dark brown sugar
½ cup coarse kosher salt
½ cup ground espresso beans
2 tablespoons freshly ground black pepper
2 tablespoons garlic powder
1 tablespoon ground cumin
1 tablespoon cayenne pepper

Steps:

  • Mix brown sugar, salt, espresso, black pepper, garlic powder, cumin, and cayenne together in a bowl.

Grilled Chicken 'n' Smoked Paprika Rub image

This is a really simple tasty Chicken dish, which you can prepare well ahead of time and is is cooked in a George Foreman Grill. Full of flavour that leaves you wanting more - its absolutely delicious served with salads, garlic bread and a nice chilled white wine

2 chicken breasts, large
2 -3 teaspoons paprika, smoked
2 teaspoons canola oil
b.b.q. spices, to taste

Steps:

  • Pat Dry the chicken. Sprinkle the smoked paprika over both sides, add a dash of oil on both sides rubbing the paprika well over the chicken.
  • Grind the Barbecue spices (not ground spices - but the kind that come in a bottle with the grinder attached) over both sides of the chicken, rub in with the back of a spoon.
  • Pre heat the George Forman grill on maximum, and cook for just 4 minutes.

For the chicken rub, you'll need...
4 tablespoons onion powder
2 teaspoons paprika
2 teaspoons garlic powder
2 teaspoons salt
1-1/2 teaspoons black pepper
1 teaspoon (or to taste) of cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage

Steps:

  • Combine all of the ingredients well. If the herbs are whole, break them up in a mortar and pestle, or rub them vigorously between your hands. Season the chicken on all sides. Let it rest in the fridge for an hour before smoking to give the flavors time to absorb. For more flavorful breast meat, put the chicken dry rub under the skin, right against the flesh.
