SMOKED MOZZARELLA CHICKEN WITH PASTA

8 ounces uncooked angel hair pasta or thin spaghetti
4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup seasoned bread crumbs
2 tablespoons olive oil
4 thin slices smoked deli ham
4 slices smoked mozzarella cheese
1/2 teaspoon dried sage leaves
1/2 cup prepared pesto
Grated Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Drain; transfer to a large bowl., Meanwhile, pound chicken breasts with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. Place bread crumbs in a shallow bowl. Dip chicken in bread crumbs to coat both sides; shake off excess., In a large skillet, heat oil over medium-high heat. Add chicken; cook 4 minutes. Turn; cook 2 minutes longer. Top with ham and mozzarella cheese; sprinkle with sage. Cook until a thermometer inserted in chicken reads 165°, 1-2 minutes longer. Remove from heat., Add pesto to pasta and toss to coat. Serve chicken with pasta. If desired, sprinkle with Parmesan cheese.

I think this is a nice light easy pasta dish (and a change from the creamy sauces). It's a good way of using leftover turkey or ham for a variation.

Number Of Ingredients 11

500 g dry pasta
1 leek, white part only
2 1/2 tablespoons oil
2 cloves garlic, crushed
600 g smoked chicken (I have used turkey or ham too)
150 ml chicken stock
4 whole artichokes, quartered (I use the ones canned in brine and rinse them)
2 ripe tomatoes
1/2 cup toasted pine nuts (, I cook them in a dry pan over a low heat shaking them until they're golden)
salt and pepper
1 dash Tabasco sauce

Steps:

  • Cook the pasta following the directions, drain and keep warm.
  • Wash the leek well and slice thinly.
  • Heat the oil in a large pan, add the leek and garlic and cook over a medium heat stirring occasionally for about 10 minutes.
  • Add the chicken, stock, artichokes and tomatoes and cook uncovered for about 5 minutes or until the chicken is heated through thoroughly.
  • Stir in the pine nuts and season to taste.
  • Toss through the pasta to combine and serve.

1 1/2 lbs chicken tenders, boneless
2 small zucchini, halved and sliced 1/8-inch thick
1 (1 ounce) package chicken-flavored gravy mix
2 tablespoons water
salt, to taste
pepper, to taste
1 pinch ground nutmeg, fresh if possible
8 ounces smoked gouda cheese, grated
2 tablespoons evaporated milk (or light cream)
1 large tomatoes, chopped
4 cups cooked macaroni (or you may use small shell pasta)

Steps:

  • Cut chicken into 1-inch cubes; place in crockpot.
  • Add zucchini, gravy mix, water, and seasoning.
  • Cover and cook for 5 to 6 hours on low.
  • Add smoked gouda cheese, milk or cream, and chopped tomato to the crockpot during the last 20 minutes, or while the macaroni is cooking.
  • Prepare macaroni/pasta according to package directions.
  • Stir in hot cooked macaroni.

The sweeter-smelling the wood used, the more alluring the flavor it leaves behind. Hickory or fruitwoods, maple, oak and alder chips, dried grapevine trimmings or herb branches lend a sweet, firm flavor to food cooked in a closed container above it.

1 1/2 tablespoons wood chips
2 chicken breasts, split, skinned but not boned
12 plum tomatoes, cored and halved lengthwise
1 teaspoon salt, plus more to taste
Freshly ground pepper to taste
1 pound farfalle
1/4 cup fresh basil, cut across into thin strips

Steps:

  • Place the wood chips in the bottom of a stove-top smoker and place the chicken on the rack over the chips. Place over medium heat until the wood begins to smolder. Cover and cook until the chicken is cooked through, about 45 minutes.
  • Sprinkle the tomatoes with 1/4 teaspoon of salt and pepper to taste. Remove the chicken from the rack and add the tomatoes, cut side up. Cover and smoke until the tomatoes are soft, about 25 minutes.
  • Meanwhile, take the chicken off the bone and shred. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 10 minutes. Drain. Cut the tomato pieces in half crosswise.

2 cups of chicken breasts cut into small chunks
1 cup purple onion diced
1/2 cup sun-dried julienne cut or diced tomatoes packed in oil and herbs
2 cups of half and half
1 stick of unsalted butter
1 lb of penne pasta
1 1/2 grated smoked gouda cheese
salt and pepper to taste

Steps:

  • 1. Saute the chicken, sundried tomatoes packed in oil, and onion in a nonstick skillet over medium heat until chicken is done. Cover with lid while cooking. 2. In the meantime, melt the butter in a 2 quart pot over medium heat. Add the 2 cups of half and half and cook over medium heat until it slightly thickens. 3. Add 1 cup of the grated smoked gouda cheese to the half and half-butter sauce. Stir until melted. 4. Then drain off any excess oil from the cooked chicken,onions, and sun-dried tomatoes and add them to the sauce. Stir well. 5. Add all of the above to the 1 lb of penne pasta cooked according to the package instructions. 6. Garnish with the remaining 1/2 cup grated smoked gouda cheese. 7. Let the pasta rest for 5 to 10 minutes before serving.
