This is a wonderful and very easy recipe to throw in the slow cooker on those really busy days. It can be increased for a large group or downsized for 2 people. It reminds me of summers in Texas.

3 tablespoons smoked paprika
2 tablespoons ground black pepper
2 tablespoons kosher salt
1 tablespoon brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
1 ½ pounds beef brisket
¾ cup barbeque sauce
¼ cup water
1 tablespoon Worcestershire sauce
¼ teaspoon liquid smoke flavoring
½ onion, sliced into rings

Steps:

  • Mix paprika, pepper, salt, brown sugar, chili powder, and cumin together in a bowl; rub evenly over the surface of the brisket. Put brisket in a large, resealable plastic bag; refrigerate 30 minutes to overnight.
  • Stir barbeque sauce, water, Worcestershire sauce, and liquid smoke together in the bottom of a slow cooker. Lay brisket into the sauce mixture. Arrange onions atop the brisket.
  • Cook on Low until brisket is very tender, 6 to 7 hours. Rest brisket 10 minutes before slicing or shredding; serve with sauce from the slow cooker.

1/2 cup freshly ground black pepper
1 tablespoon granulated garlic
1 teaspoon cayenne
1 whole beef brisket, about 10 pounds

Steps:

  • Make a dry rub by mixing the salt, pepper, garlic and cayenne in a small bowl.
  • Trim the brisket fat and season liberally with the dry rub. Put into a preheated 250 degree smoker and smoke it for 8 to 10 hours. Shift the position of the brisket every 2 hours. Remove when the brisket is tender which is determined by poking it with a toothpick. Transfer to a cutting board and slice. Arrange on a serving platter and serve.

  • RUB:.
  • Mix rub the ingredients together in a mortar and pestle grinding till nicely combined but leaving some nice pieces of pepper and salt.
  • Lightly oil the meat with vegetable oil.
  • Spread the rub generously on beef brisket. Let it marinate on the meet overnight. Bring brisket to room temperature for 30 minutes before putting in the smoker.
  • Beer Mop Sauce:.
  • Mix ingredients in a pot and simmer for 20 minutes.
  • Fire up the smoker:.
  • Start up the smoker with your favorite wood.
  • Add water in the bottom which helps keep meat moist.
  • Place brisket in a 225 degree prepared smoker fat side down. Mop a nice amount of the mop sauce on and smoke for 1 hour.
  • Flip the brisket carefully not piercing the meat. Mop with more sauce.
  • After that, turn the brisket about every two hours and mop it every time you turn it." Keeping it moist.
  • It`ll be done when you give it a taste test. The outside of the meat will look charred. Don't worry. It's supposed to look that way.
  • There should be a pretty smoke ring. This could take anywhere from 6-12 hours. Repeat the mopping and flipping until the brisket reaches 180 degrees for slicing or 195 degrees for pulling and remove from smoker.
  • It which point you can let rest before cooking or wrap it tightly in a foil pan with the heat off for 3-4 hours as it father tenderizes.
  • BBQ Sauce:.
  • Mix all ingredients in a pot and simmer till nice a thick about 1 hour. Can be made the day before.
  • Slice the brisket thick and against the grain if it is fairly tender or if it is a little tough slice it against the grain only in thinner slices. Serve with BBQ Sauce or make pulled beef mixed with the BBQ sauce.

2 tablespoons liquid smoke
2 tablespoons fresh coarse ground black pepper

  • Trim beef of any large extra fat. A little is good for flavor.
  • Place the roast in the middle of a large piece of aluminum foil.
  • Rub beef all over with all of the spices.

  • DO NOT ADD ANY LIQUID TO THE CROCKPOT!

1 (5 pound) beef brisket
¼ cup ground paprika
¼ cup salt
2 tablespoons white sugar
2 tablespoons black pepper
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons granulated garlic
1 teaspoon cayenne pepper, or more to taste
½ teaspoon ground cinnamon
wood chips
aluminum foil
½ cup Hot Chili/Red Pepper Sauce
½ cup beer
¼ cup brown sugar
½ medium onion, chopped

Steps:

  • Bring brisket to room temperature early in the morning, about 1 hour.
  • Whisk paprika, salt, sugar, black pepper, chili powder, cumin, garlic, cayenne pepper, and cinnamon for dry rub together in a small bowl. Apply rub liberally to the complete brisket and leave at room temperature while you prepare the smoker.
  • Preheat a smoker for indirect heat to 225 to 250 degrees F (107 to 121 degrees F) according to manufacturer's instructions. Add wood chips to the charcoal and place a small cast iron pan of water over the fire.
  • Lay brisket, fat-side up, about 8 inches away from the fire and smoke for 1 hour, maintaining the smoker's internal temperature at 200 to 225 degrees F (93 to 107 degrees F). Add 12 to 15 charcoal briquettes, replenish wood chips, and add more water to the pan; smoke for 1 more hour. Wrap brisket in aluminum foil, replenish charcoal, wood chips, and water, and smoke for 1 more hour.
  • Meanwhile, mix hot chili sauce, beer, brown sugar, and onion for finishing sauce until well combined. Remove brisket from the smoker and place on a second sheet of aluminum foil. Unwrap brisket, being careful of the hot steam, and pour finishing sauce over the meat. Re-wrap brisket tightly with both pieces of foil and return to the smoker.
  • Smoke brisket, until an instant-read thermometer inserted into the thickest part registers at least 160 degrees F (71 degrees C), about 1 more hour.
  • Remove brisket from the smoker and let it rest in the foil for 45 minutes. To serve, slice it against the grain.

1 ½ tablespoons fennel seeds
1 tablespoon brown sugar
1 tablespoon ground paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 ½ teaspoons mustard seed
1 (4 pound) corned beef brisket
cherry wood chips

Steps:

  • Combine coriander, fennel seeds, brown sugar, paprika, garlic powder, onion powder, and mustard seed in a small bowl.
  • Place brisket in a glass baking dish and rub spice mixture all over. Cover with plastic wrap and place in the refrigerator for 2 to 3 days.
  • Soak wood chips in water for at least 1 hour.
  • Preheat a smoker to 240 degrees F (116 degrees C) according to manufacturer's instructions. Maintain temperature for 15 to 20 minutes.
  • Drain wood chips and place on coals. Place a water pan on the smoker and add water to the depth of the fill line. Place brisket on the lower cooking grate and cover with the smoker lid. Smoke for 2 hours.
  • Pull brisket from the smoker and wrap tightly in foil. Return to the smoker until an instant-read thermometer inserted into the thickest part registers at least 190 to 200 degrees F (88 to 93 degrees C), about 3 hours.
  • Remove brisket from the smoker and let rest for 40 minutes. Slice corned beef against the grain.

3/4 cup sugar
3 tablespoons onion powder
3 tablespoons garlic salt
1 tablespoons celery salt
1 tablespoons black pepper
1 tablespoon lemon pepper
1 teaspoon mustard powder
1 teaspoon cayenne
1/2 teaspoon dried thyme
1 trimmed brisket, about 5 to 6 pounds

Steps:

  • In a bowl combine all the dry ingredients and blend well.
  • Trim the brisket, leaving about 1/4-inch of fat. Season the brisket with about 1/4 cup of the rub (see Cook's Note). Let the brisket marinate overnight in the refrigerator.
  • Preheat your grill to 250 degrees F using charcoal and hickory.

1 cup yellow mustard
1/4 teaspoon ground black pepper
1/4 teaspoon sea salt
1/2 teaspoon hot sauce
3/4 cup cider vinegar
12 ounces beer
1/4 cup water
1/4 cup vegetable oil
1 tablespoon BBQ dry rub
2 tablespoons Worcestershire sauce
1 teaspoon coarsely ground black pepper
1/2 cup finely chopped onions
2 tablespoons butter
1 cup tomato sauce
1 cup ketchup
1/3 cup chili sauce
3/4 cup dark brown sugar
1/2 cup honey
1 cup white vinegar
1 teaspoon allspice
1 tablespoon dry mustard
2 teaspoons ground black pepper
2 teaspoons chili powder
3 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 tablespoon paprika

Steps:

  • Preheat charcoal smoker for half an hour. Soak the hickory chips for half an hour in water. Drain.
  • Trim fat on brisket to 1/4-inch thickness. Sprinkle brisket generously with the dry rub. Wrap in plastic and refrigerate overnight.
  • Remove the brisket from refrigerator 1 hour prior to cooking and let stand at room temperature. Mop the entire brisket with Mustard Sauce. Place brisket fat side up in a smoker at a preheated temperature of 200 to 225 degrees F. Add 3 handfuls of pre-soaked hickory chips to preheated charcoal (should be at the gray stage). After 3 hours, add another 3 handfuls of chips and mop with Beer Based Mop Sauce.
  • After 2 more hours, place brisket on 2 pieces of heavy-duty foil and pour 1/4 cup Beer Based Mop Sauce on top of brisket and seal tightly. Continue to cook in smoker another 2 to 4 hours, or until internal temperature reaches 185 degrees F.
  • Remove brisket from foil and let stand 15 minutes. Slice brisket against the grain into 1/4-inch thickness. Top with Brisket BBQ Sauce.
  • Mix all ingredients in a medium saucepan. Reduce heat to low and simmer for 10 minutes.

2 teaspoons onion powder

1 teaspoon black pepper
1/2 teaspoon ground cumin
2 dried bay leaves, ground
2 tablespoons brisket rub
1 pound slab bacon, rind removed, diced
1/4 cup onion, minced
1/4 cup garlic, minced
1/4 cup celery, minced
8 bottles Dock Street Lager beer
1 teaspoon dry mustard
1 teaspoon black pepper
1 teaspoon lemon zest
1 tablespoon lemon juice
2 tablespoons soy sauce
2 tablespoons cider vinegar
8 beef sausages from Southside Market and BBQ; Elgin, Texas

Steps:

  • Mix all the ingredients together, saving 1/4 cup, and rub the brisket vigorously. Store brisket well sealed overnight in a shallow pan.;
  • In a medium sauce pot, place bacon, onion garlic, and celery. Cook over medium heat until browned. Add 4 bottles of beer to the pot. It's going to be a long day; you will need the other beers for the cook. Bring the pot to a boil. Add rub, mustard, pepper, zest, juice, soy sauce and vinegar. Continue to slowly simmer, for 1 hour, as the meat smokes.
  • Start a charcoal fire on one side of the grill. Add post oak pieces that have been well soaked (1 hour), or still green and uncured. Control the heat of the fire by closing the air vents to the grill. Place brisket, fat side up, on indirect heat (not over the fire) and close the top of the grill. Grill should be 300 degrees. Baste meat continuously with mop every 30 minutes. When turning meat always carefully use a spatula and never prick the meat. Tongs or forks may pierce the meat allowing juices to escape making the meat dry and tough. Brisket will be done in about 4 1/2 to 5 hours or when internal temperature reaches 165 degrees. Allow to rest 30 minutes before slicing.
  • Remove any excess fat and slice brisket across grain 3/8 inches thick. Texans don't use barbecue sauce, but they haven't tried these. Serve hot smoked sausages split, brisket sliced, BBQ sauce, white bread and pickled peppers.
  • Place sausages on smoking grill beside the brisket with indirect heat, not over the fire. Cook at 300 degrees for 1 1/4 hours.
  • Chipolte BBQ Sauce: 2 tablespoons vegetable oil 1/2 onion, diced 3 cloves garlic, smashed 1 cup chopped tomatoes 1 cup ketchup 1/2 cup coffee 3 tablespoons molasses 2 tablespoons Dijon mustard 3 tablespoons brown sugar 1 tablespoon Worcesterchire sauce 2 chipotle peppers In a medium saucepan, over medium heat, place oil, onion and garlic. Cook for 3 minutes. Add the tomatoes and simmer for about 8 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 15 minutes. Remove from heat and puree in food processor. Serve right away or let cool and refrigerate.
  • Pickled Peppers: 3 cups cider vinegar 3 cups pineapple juice 1 tablespoon cracked peppercorns 2 teaspoons thyme leaves 2 bay leaves 1 teaspoon salt 40 jalapenos 25 garlic cloves 1 red onion, peeled and chopped 2 carrots, peeled and shredded
  • In a large saucepan over high heat, bring vinegar, juice, peppercorns, thyme, bay leaves and salt to a full boil. Add jalapeno, garlic, onion and carrots and bring to a boil again. Remove from heat. Transfer to a large container and seal.

My family enjoys Western style Mexican dishes and I use this for tacos, enchiladas, stuff Anaheim peppers, tostados, the list goes on. You can make it as spicy as you like. Season heavily because the spices "steam away".

1 tablespoon kosher salt
1/2-1 tablespoon cracked pepper

2 tablespoons butter or 2 tablespoons other fat
1 large onion, sliced
3 lbs beef brisket
salt and pepper
1 1/2 quarts sauerkraut
2 cups flour
1 1/4 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon butter
milk

Steps:

  • Rub the brisket with the Carolina BBQ Rub and let sit for 1 hour.
  • Prepare smoker for a 2 hour smoke with cherry and maple woods.
  • Smoke Brisket for 2 hours.
  • Melt butter in a large pan and brown onion slices.
  • Add brisket and sauerkraut.
  • Cover with boiling water and put in the oven at a low temperature for 2 hours or until the meat is tender.
  • To prepare dumplings, sift together the flour, baking powder and salt.
  • Using a pastry blender or two knives cut in the butter.
  • Quickly stir in enough milk to make a soft dough.
  • On a floured surface, roll dough 1/2 inch thick.
  • Cut into 12 squares.
  • Put the squares on top of the simmering beef and kraut.
  • Cover tightly and simmer 20 minutes without removing the cover.

Wood Chick's Beer Based Mop Sauce: 3/4 cup cider vinegar 12 ounces beer 1/4 cup water 1/4 cup vegetable oil 1 tbl BBQ dry rub 2 tbl Worcestershire sauce 1 tsp coarsely ground black pepper Mix all ingredients in a medium saucepan. Reduce heat to low and simmer for 10 minutes. Wood Chick's Brisket BBQ Sauce: 1/2 cup finely chopped onions 2 tabl butter 1 cup tomato sauce 1 cup ketchup 1/3 cup chili sauce 3/4 cup dark brown sugar 1/2 cup honey 1 cup white vinegar 1 tsp allspice 1 tbl dry mustard 2 tsp ground black pepper 2 tsp chili powder 3 tbl Worcestershire sauce 1 tsp garlic powder 1 tbl paprika 3 tbl lemon juice 3 tbl maple syrup In a medium to large saucepan, saute the onions in the butter over medium heat until soft. Add remaining ingredients. Bring mixture to a boil over medium high heat. Reduce heat to low and simmer for 20 minutes.

I had a 5 pound Brisket in the freezer. I thawed it slowly in the Fridge for 2 days then took it out & marinated it in a 12 spice blend that I put together, & let it sit...

12 SPICE BLEND FOR BRISKET
3 Tbsp steak seasoning (similiar to montreal steak seasoning
1 1/2 Tbsp sumac or fresh grated lemon zest
11/2 Tbsp each -dried thyme, dry mustard powder,coarse grated black pepper
2 1/2 Tbsp cumin powder
1 Tbsp each rosemary & crushed red pepper flakes
3 Tbsp each mesquite flavor, granulated garlic, chili powder
3 Tbsp brown sugar firmly packed
MUSTARD BASE
1/2 c dijon mustard
1/2 c yellow mustard
8 clove garlic, minced
3 Tbsp chopped chive
1 Tbsp sweet basil
3 bay leaves crushed
IRISH BEER MOPPING MARINATE & BEEF BRISKET
5 lb beef brisket with fat on one side
3-4 sprigs fresh thyme, or 1 tsp. dried
1 Tbsp fresh chopped chive
2 Tbsp melted butter or canola oil
1/2 c apple cider vinegar
1 1/2 Tbsp 12 spice blend mixture
1 can(s) guiness draught beer 14.9 oz.
11/2 Tbsp liquid smoke
2 Tbsp dijon mustard
3 Tbsp brown sugar
1/2 c catsup

Steps:

  • 1. The longer you cook this brisket the more tender it becomes. The larger the brisket the longer the time needed to smoke. SOAK WOOD CHIPS OVERNIGHT.
  • 2. Combine all spices together in a large zip lock bag, then shake to blend througly together.
  • 3. Sprinkle liberally on all sides of brisket, DON'T BE AFRAID TO USE THE SPICE BLEND. Cover brisket with saran wrap and refrigerate for at least 8 to 10 hours, but preferably over night.
  • 4. REMOVE FROM FRIDGE, & ALLOW TO COME TO ROOM TEMPERATURE. This will ensure even cooking temperature and time. It took about 1 1/2 hours.
  • 5. Combine all of the ingredients for the mustard base in a medium size bowl, then blend together, and brush both sides of brisket with the mustard base.
  • 6. Prepare smoker according to Manufactures directions. My husband used APPLE WOOD CHIPS AND SOAKED THEM OVER NIGHT. When charcoal became white, he then added the wood chips which produced an abundance of smoke for the brisket. When grill reaches 225 degrees F. Then you add the Beef Brisket FAT SIDE UP. SMOKE FOR 3 HOURS.
  • 7. WHILE BRISKET IS SMOKING PREPARE THE BEER MARINADE MOPPING SAUCE. I got about a quart & put it in a quart jar. You can pour it from the jar into a small bowl, and when you are finished, you can refrigerate what is left and save for another time.
  • 8. AFTER THE FIRST 3 HOURS,PLACE THE BRISKET IN AN ALUMINUM PAN, THEN YOU BEGIN TO MOP OR BRUSH THE BRISKET WITH THE MARINATE ALL OVER. We did it about every 1/2 hour to 45 minutes or so. Cover the pan tightly with a lid or aluminum foil. Allow it to continue to cook until the internal temperature reaches 185 degrees F. about 1 1/2 to 2 additional hours. Longer if your brisket is 7 or 8 pounds.
  • 9. In lieu of making my own BBQ Sauce, I chose to use SWEET BABY RAYS HONEY BBQ SAUCE. But you can make your own if you so desire. After the brisket has reached 185 degrees F. you can baste the brisket with BBQ sauce if desired, and cook UNCOVERED for an additional 30 minutes or so. Allow brisket to rest at least 20 to 30 minutes before you slice and serve.
  • 10. My husband could not resist the temptation of tasting some before I had time to slice it all down, so he took some from the back end while I was waiting for it to cool down.
  • 11. The drippings that accumulated after brushing the Brisket, created a very flavorful sauce, you can pour it over the brisket after slicing if desired.

1/3 cup brown sugar
1/3 cup dried papayas, chopped or 1 cup fresh papaya, rough chopped
1 tablespoon cajun seasoning, Cajun Spice Rub Mix Recipe
1 teaspoon minced garlic
1 onion, rough chopped
2 tablespoons Worcestershire sauce
5 lbs beef brisket, flat cut Score fat cap
hickory chips (soaked overnight or at least 4 hour)
16 ounces beer, for mopping
2 tablespoons butter
barbecue sauce (optional)

Steps:

  • Place Marinade in a blender or food processor and blend till semi smooth. Rub on washed and dried brisket. Let marinade in a well sealed container overnight.
  • Early morning remove the brisket from refrigerator and pat dry.
  • Reserving the marinade to be mixed with the beer. Simmer to heat through for 20 minutes and butter mix inches Let rest till needed.
  • Leave brisket at room temperature for 1 hour before putting in the smoker.
  • Meanwhile fire up the smoker.
  • Place fat side up in a foil pan on a rack, so smoke can get around it.
  • Rotate, and mop with the spice/beer mixture every hour for the first 3 hours.
  • Add hickory to smoker every 30 min (as required) to keep the heat at a constant temperature for the first 4 hours.
  • After 3 hours wrap tightly with foil and continue cooking.
  • Smoke at 200 - 225 degrees for 7 hours. About 1 hour to 1 1/4 hours per pound.
  • When brisket has an internal temperature of 190 degrees F remove and let rest for 1 hour.
  • cut away excess fat and discard. Slice beef across the grain.
  • Enjoy with your BBQ sauce.
  • Trim fat and slice 1/4 inch slices across the grain.
  • Can be made the day before chill then slice for extra thin slices. The chilled brisket will slice easier.

For the sauce:
2 C enchilada sauce
1 C leftover smoked beef brisket, chopped
For the filling:
6 corn tortillas
1 cup leftover smoked beef brisket, chopped
1 cup spinach, chopped and slightly wilted
1 cup shredded Mexican 4-cheese blend or cheddar
You may need more for the top, depending on how cheesy you like your enchiladas.
2.5 oz goat cheese, crumbled

Steps:

  • Pre-heat oven to 350 degrees. Dice up your brisket into small pieces and separate into two portions (1 cup will go into the sauce, 1 cup will go into the filling). Soften the spinach for 1-2 minutes on a skillet set to medium heat (just to slightly wilt it). Heat up the sauce in a medium skillet (wait to add the beef just before you top the enchiladas). To soften the corn tortillas - take the tortillas and dip them into the red chile sauce sauce one by one to coat them. This will help soften the tortillas so they don't break up when you roll them. It also helps infuse the tortillas with the tangy delicious sauce. Next, add your filling to the tortillas - layer about one tablespoon of the beef, spinach, shredded cheese, and a couple crumbles of the goat cheese (go light on the goat cheese or it will overpower the flavor). Roll the tortilla and layer the rolls on an 8×8″ baking dish seam side down, in one layer. Repeat with the remaining tortillas until the dish is packed. When the tortillas are all layered, add the remaining 1-cup of beef brisket to the sauce and let mix. Pour the beef soaked enchilada sauce over the top of the dish. Sprinkle with the remaining shredded cheese. Bake for 15-20 minutes, or until cheese is melted and bubbly. Garnish with cilantro.

1 tablespoon cracked black pepper

Steps:

  • Cover wood chips with water; soak 30 minutes.
  • Drain wood chips. Prepare and heat smoker using wood chips. (For charcoal smoker, use 5 pounds charcoal briquettes.)
  • In small bowl, mix black pepper, white pepper, red pepper and lemon pepper. Rub pepper mixture into all sides of beef.

1 tablespoon Liquid Smoke, optional
1 teaspoon salt

1 full beef brisket 4 to 5 lbs.
Marinade:
-1 1/2 tbls. Worchestershire sauce
-3/4 c olive oil
-1/4 c soy sauce
-1/4 c honey
-2 tbls. red wine vinegar
-5 cloves garlic minced
-5 whole green onion chopped
-1 tsp. fresh ginger chopped -
fine or grated
-1 tsp.ground pepper(fresh is always best)
-1 tbls. dijon mustard

Steps:

  • Whisk all the ingredients together in a large bowl. Take the brisket and score it with a sharp knife criss cross on both sides. Place the brisket in a large or extra large freezr bag or large non metallic pan that can hold it and the marinade. Pour the marinade in the bag or container with brisket, mix and seal bag or cover container with plastic wrap and place in fridge overnight or longer if you can. 2 days in the fridge would be awesome! Now make 3 to 4 smoke packs with hickory chips soaked in water for at least 1 hour. Use one good handful to half a handful of dry chips wrapped in tinfoil with holes poked in the wet side of the pouch. Remove one side of the grate from the BBQ and light that side. Place smoke pouch hole side up directly on flame side with no grate. Heat BBQ to 250-300F and wait until pouch begins to smoke. Remove brisket from bag or container and RESERVE the marinade. Place the brisket on the indirect heat side of BBQ with a catch pan under the grate if you want. Generously pour some of the marinade on the brisket and let it cook for 4 to 5 hours basting with remaining marinade from time to time. Replace smoke packs as they burn out. (generally they will last for about 1 hour) Make sure the smoke packs don't catch on fire as they will not last long. This recipe is rated at 4 to 5 beers.
