NORTHWEST INDIANA STYLE SMASH BURGER

1 cup mayonnaise
2 tablespoons chopped gherkins
1 tablespoon ketchup
1 tablespoon sriracha
1 teaspoon Dijon mustard
1/4 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
1 teaspoon vegetable oil
1 1/2 pounds ground chuck, preferably 70/30 or 80/20, divided into four 6-ounce balls
Kosher salt and freshly ground black pepper
Granulated garlic, for sprinkling
8 slices American cheese
4 tablespoons unsalted butter, at room temperature
4 hamburger buns, preferably brioche
2 cups shredded iceberg lettuce, or 4 whole leaves
1 beefsteak tomato, sliced

Steps:

  • For the smash sauce: Mix together the mayonnaise, gherkins, ketchup, sriracha, mustard, granulated garlic and 1/4 teaspoon pepper in a medium bowl. Season to taste.
  • For the burgers: Heat a large flat-surfaced griddle pan to high heat. Add the vegetable oil.
  • Add the balls of meat to the hot griddle and let cook for 15 to 30 seconds. Flip the burgers and, using a trowel or large spatula, smash each ball of meat until about the size of the bun (the overhang is crucial). Smash and schmear down the edges of the beef even further, so that they are a little thinner than the middle. Sprinkle the exposed side with salt, pepper and a little granulated garlic. Cook until super dark and caramelized, 1 to 2 minutes. (The beef will release better when properly caramelized.) Now it's time to scrape the beef and flip, ideally using a griddle scraper or paint scraper to get up every bit of beef. Immediately top each patty with 2 slices American cheese and sear for another 1 to 2 minutes. Spread 1 tablespoon butter on each burger bun and place on the grill. Cook until lightly toasted, 1 to 2 minutes. Top each bun with a patty, lettuce, tomato and smash sauce. (I like mine plain, with a smash sauce dunk.)

Ground chuck is a great all-purpose, buy-it-anywhere choice for burgers. But if you want to get ambitious and blend, say, chuck with ground short rib or brisket, we say go for it.

Vegetable oil (for pan)
1 pound ground beef chuck (20% fat)
Kosher salt
4 slices American cheese
4 potato rolls, toasted
Ketchup, mayonnaise, shredded iceberg lettuce, and dill pickle slices (for serving)

Steps:

  • Heat a cast-iron griddle or large heavy skillet over medium-high until very hot, about 2 minutes, then lightly brush with vegetable oil. Divide ground beef into 4 equal portions (do not form patties).
  • Working in batches if needed, place portions on griddle and smash flat with a spatula to form 4"-diameter patties (craggy edges are your friend). Season liberally with salt and cook, undisturbed, until outer edges are brown, about 2 minutes. Flip patties, season with salt, and place a slice of cheese on top of each patty. Cook until cheese droops and burgers are medium-rare, about 1 minute.
  • Serve patties on rolls with ketchup, mayonnaise, lettuce, and pickles.

We found that a three-ounce patty hits the sweet spot: big enough to fill out the bun when smashed but small enough that two patties aren't overkill.

1 cup finely chopped dill pickles
1/2 cup mayonnaise
2 Tbsp. ketchup
2 Tbsp. sauce from a can of chipotles in adobo
1/2 tsp. kosher salt, plus more
1 1/2 lb. ground beef (20% percent fat)
4 potato rolls
1/2 head of iceberg lettuce, leaves separated, torn into pieces about the size of the buns
1 white onion, very thinly sliced into rings on a mandoline
4 thin tomato slices (optional)
2 Tbsp. vegetable oil
8 slices American cheese

Steps:

  • Prepare a grill for high heat. Place a cast-iron griddle, flat side up, on grate; heat until very hot, at least 20 minutes.
  • Mix together pickles, mayonnaise, ketchup, adobo sauce, and 1/2 tsp. salt in a medium bowl; set special sauce aside.
  • Divide beef into eight 3-oz. portions (don't form into patties). Place 4 portions between 2 sheets of parchment paper, spacing 6" apart, and, using a meat mallet or skillet, firmly smash to create thin patties, about 5" across. Transfer to a baking sheet. Repeat with remaining portions and fresh parchment paper.
  • Wrap all the buns together in a large sheet of foil to make a packet (this will keep buns soft and from getting too toasted on the grill). Place packet on grate and grill, turning once, until buns are warmed through, about 1 minute. Spread sauce over cut sides of buns. Place 3-4 pieces of lettuce on bottom buns and top each with some onion and a tomato slice, if using.
  • Drizzle oil over griddle and use paper towels to evenly coat surface. The oil needs to be hot; you should see smoke almost instantly. Season patties lightly with salt. Place 4 on griddle, seasoned side down, and season top sides lightly with salt. Cook, undisturbed, until outer edges are brown and undersides are very crisp, about 2 minutes. Flip and place a slice of cheese on top of each patty. Cook until cheese is melted, about 30 seconds. Transfer patties to buns with toppings, stacking 2 patties on each bun. Repeat with remaining 4 patties, scraping off any cheese stuck to griddle in between batches.

2 small onions, sliced paper thin
4 ounces sharp cheddar cheese, sliced

Steps:

  • 16 thin bread-and-butter pickle slices, patted dry Four 4-inch potato buns, buttered and toasted 1 1/4 pounds ground beef chuck (30 percent fat) Salt and freshly ground pepper 2 small onions, sliced paper thin 4 ounces sharp cheddar cheese, sliced Umami dust, for sprinkling (optional, see Note) Heat a cast-iron griddle until very hot. Layer the pickle slices on the bottom buns. Without overworking the meat, loosely form it into 4 balls and place them on the griddle. Cook the meatballs over moderately high heat for 30 seconds. Using a sturdy large spatula, flatten each ball into a 5-inch round patty. Season the patties with salt and pepper and cook for 2 minutes, until well seared. Press a handful of sliced onions onto each patty. Using the spatula, carefully flip each burger so the onions are on the bottom. Top with the cheese and cook for 2 minutes. Cover with a roasting pan and cook just until the cheese is melted, 1 minute more. Transfer the burgers with the onions to the buns and sprinkle with umami dust. Top with the buns and serve. Make Chimichurri Twice-Baked Potatoes NOTES Umami Dust Use a spice grinder to pulse 3 tablespoons bonito flakes, 1/2 ounce crumbled dried kombu, and 1/2 ounce dried shitake mushrooms into a powder.
