CRANBERRY FRUIT CONSERVE

Number Of Ingredients 7

One 12-ounce bag of fresh cranberries, cleaned
1 3/4 cups sugar
1 Granny Smith apple, peeled, cored, and chopped
Grated zest and juice of 1 orange
Grated zest and juice of 1 lemon
3/4 cup raisins
3/4 cup chopped walnuts or pecans

Steps:

  • Cook the cranberries, sugar, and 1 cup of water in a saucepan over low heat for about 5 minutes, or until the skins pop open. Add the apple, zests, and juices and cook for 15 more minutes. Remove from the heat and add the raisins and nuts. Let cool, and serve chilled.

Number Of Ingredients 7

4 cups fresh or frozen cranberries, halved
1 tablespoon grated orange zest
2 oranges, peeled, sliced and quartered
1 cup raisins
1-1/4 cup water
1 cup chopped pecans
2-1/2 cups sugar

Steps:

  • In a large saucepan, combine the cranberries, orange zest, oranges, raisins and water. Cover and simmer over medium heat until cranberries are soft. Add pecans and sugar; stir well. Simmer, uncovered, 10-15 minutes, stirring often. Cool. Spoon into covered containers. Refrigerate. Serve as a relish with poultry or pork, or spread on biscuits or rolls.

1 small orange
1 cinnamon stick, about 4 inches long
3 whole cloves
1/2 cup water
1 tablespoon lemon juice
3 cups cranberries
1 1/2 cups granulated sugar
1/3 cup brandy
1/4 cup slivered almonds

Steps:

  • Finely chop orange, peel and all, in a food processor (remove nay seeds first). Combine with cinnamon stick, cloves, water and lemon juice in a medium non-reactive saucepan. Bring to a boil on medium-high heat, reduce heat, cover, and simmer gently for 10 minutes. Remove cinnamon and cloves.
  • Add cranberries and sugar. Return to a boil, reduce heat, sand simmer, uncovered and stirring frequently, until berries pop and mixture forms a light gel, about 5 minutes. Remove from heat and cool slightly, then stir in brandy and almonds.
  • Ladle into hot half-pint jars and process for 10 minutes in a boiling water bath.

1/4 cup granulated sugar
2 -3 teaspoons orange zest, finely minced
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg, slightly beaten
1 cup buttermilk
1/2 cup orange juice
3 tablespoons unsalted butter, melted

Steps:

  • In a small bowl, mix cranberries, sugar & zest & set aside.
  • In large bowl, mix flour, baking powder, baking soda & salt.
  • In another small bowl, mix egg, buttermilk, OJ & butter, then add this mixture to flour mixture, stirring until just combined [batter should be lumpy].
  • Fold cranberry mixture into the other mixed ingredients.
  • Heat a lightly greastd griddle or heavy skillet over medium heat.
  • Pour about 1/4 cup batter onto hot griddle for each pancake.
  • Cook pancakes until golden brown, then turn to cook other side.

This is a great fall recipe and you can use either fresh or frozen cranberries. Fresh cranberries can be frozen for up to one year in an airtight freezer bag.

3/4 cup milk
2 tablespoons melted butter
1 egg
1 cup flour
2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon sugar (for cranberries)
1/2 teaspoon salt
1/2 cup fresh cranberries or 1/2 cup frozen cranberries

Steps:

  • Beat milk, melted butter, and egg together in a bowl.
  • Mix flour, baking powder, 2 tbls sugar, and salt together in a separate bowl and add them to the wet ingredients mixing just enough to wet the flour.
  • Cut cranberries in half, place in microwave safe bowl and sprinkle in the 1 tsp of sugar. Microwave on high and stir every 15 seconds till cranberries start to bubble. Let cool and add to pancake mixture.
  • Preheat griddle with a pat of butter on each side till water droplets dance on the surface.
  • Put 1/4 cup of cranberry batter on griddle and cook till surface bubbles and edges get crusty. Flip and cook on other side.

This is a festive side dish, that uses fresh or frozen cranberries. My daughter insists on having it for every holiday. It's good to make the first part the night before, but it can be done the morning of serving if needed.

20 ounces pineapple, crushed

  • Add sugar and crushed pineapple, chill overnight in a plastic container, with a lid.
  • Add remaining ingredients before serving.

I enjoy my cranberries baked this way. The brandy helps to cut down on the tartness of the cranberries, while the sugar gives it just enough sweetness.

2 (12 ounce) bags cranberries
2 cups granulated sugar
1/4 cup brandy
1/3 cup granulated sugar

Steps:

  • Place the cranberries in a glass 13x9x2-inch baking dish.
  • Cover the cranberries with the 2 cups of sugar, but do not stir.
  • Cover baking dish tightly with aluminum foil.
  • Bake 50-55 minutes in a 350º oven; until the cranberries burst.
  • Remove baking dish from the oven.
  • Remove the foil and stir.
  • Let stand 10 minutes, then drizzle with the brandy.
  • Stir in the 1/3 cup of sugar.
  • Cool to room temperature; then refrigerate.
