OVERNIGHT FRENCH TOAST

If you have a crowd for breakfast, overnight French toast is a winning idea. Instead of standing over the stove, cooking slice after slice, it bakes in the oven and emerges puffed and golden and ready for a big glug of maple syrup. Try making it with a stale loaf that you forgot to eat amid all the other holiday goodies. A fat brioche, fruit-filled panettone or a braided challah all work well. Stay away from croissants, though: Their chewy interiors are best enjoyed fresh.

2 tablespoons unsalted butter, softened, plus more for baking dish
1 pound enriched bread, such as brioche, challah or panettone sliced 3/4-inch thick
1/4 cup golden raisins (optional)
6 large eggs
2 1/2 cups whole milk
1/2 cup heavy cream
1/3 cup light brown sugar
1/2 teaspoon ground cinnamon
Pinch of freshly ground nutmeg
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/3 cup pecans, chopped (optional)
Confectioners' sugar for dusting (optional)
Maple syrup, for serving

Steps:

  • Butter a 2-quart baking dish. Butter the front sides of the slices of bread and shingle the slices upright in the dish, overlapping as necessary. Nestle the raisins evenly between the slices of bread but not on top.
  • In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, nutmeg, vanilla and salt until well combined. Pour the milk mixture over the bread and press the bread gently to absorb. Cover with plastic wrap and refrigerate overnight.
  • Heat oven to 350 degrees. Remove the plastic wrap. Sprinkle the pecans evenly over the top. Bake until puffed, golden and set in the center, 50 to 60 minutes. While baking, if the top begins to get too dark, tent with foil. Let stand 10 minutes. Dust with confectioners' sugar and serve with maple syrup.

I prepared this late one night when my daughter had a sleepover for 10 girls. It was a big hit the next morning with warmed maple syrup. Next time I'll serve some sliced fruit or summer berries alongside. Prep time does not include overnight refrigeration.

1 Italian bread or 1 French bread
8 eggs
2 cups milk
1/2 cup maple syrup
1 tablespoon vanilla
1/2 cup golden raisins (optional) or 1/2 cup snipped dried apricot (optional)

Steps:

  • Preheat oven to 300. Cut bread into 1-inch slices, then cubes. Spread on a large cookie sheet and toast for about 10 minutes, or just until dry. (If you're good at advance planning, you can cut the bread up to get stale earlier.).
  • Grease a 9x13 glass baking dish. Place the bread cubes evenly across the bottom, turning to fit the pieces. Scatter raisins or fruit evenly.
  • Beat eggs thoroughly with milk, syrup, and vanilla. Pour over bread, pressing down with spatula so all pieces are evenly soaked. Cover tightly and refrigerate overnight, or a minimum of 4 hours.
  • Preheat oven to 350. Remove pan from fridge & let stand at room temperature 15 minutes. Uncover and sprinkle with cinammon. Bake for 40-45 minutes. Toast will be puffed & lightly browned. Let stand 5 minutes before serving. Cut into 12 squares.

1 loaf Brioche (mine was 17.6 ounces)
8 whole eggs
1 cup whole milk
4 tablespoons Challenge unsalted butter, melted and cooled
1 tablespoon vanilla extract
½ cup packed light brown sugar
½ teaspoon ground cinnamon
Pinch of salt
½ cup all purpose flour
⅓ cup packed light brown sugar
½ teaspoon ground cinnamon
Pinch of salt
½ cup cold Challenge unsalted butter, cubed
⅓ cup rolled oats
Maple syrup and additional butter for serving

Steps:

  • Butter or spray a 9 x 13-inch casserole dish with cooking spray.
  • Cut the brioche into 1-inch cubes and place the cubed bread into the prepared pan.
  • In a large bowl whisk the eggs until well beaten. Add in the milk, melted butter, vanilla, cinnamon, salt and light brown sugar. Vigorously whisk all ingredients together until completely combined.
  • Pour the egg mixture evenly over the brioche cubes. You can gently stir any areas that seem to be a bit dry, but do not overmix. Cover with plastic wrap and refrigerate for at least 4 hours or overnight (up to 12 hours).
  • Prepare the topping: In a large bowl, stir together the flour, brown sugar, cinnamon and salt. Use a pastry blender or 2 forks to cut the butter into the dry ingredients until small clumps are formed. Gently stir in the oats. Place the topping into a sealed container and refrigerate until you're ready to bake.
  • When you're ready to bake, preheat the oven to 350 degrees F. Remove plastic wrap from the casserole dish and evenly sprinkle on the refrigerated topping.
  • Bake for 50-60 minutes or until the top of the casserole is golden brown and the french toast is firm.
  • Serve warm with Challenge butter and maple syrup.
