This is an easy slow cooker recipe that is great to set and forget about until you're ready to eat.

1 (20 ounce) can pineapple rings in juice, cubed and juice reserved
1 pound kielbasa (Polish) sausage, cut into quarter moon pieces
2 medium onions, cut into wedges and sliced
2 tablespoons water
2 tablespoons cornstarch
⅔ cup rice vinegar
⅔ cup brown sugar
6 tablespoons ketchup
2 tablespoons soy sauce

Steps:

  • Place pineapple, kielbasa sausage, and onions into the bottom of a slow cooker.
  • Combine water and cornstarch in a bowl and whisk until smooth.
  • Whisk together reserved pineapple juice, rice vinegar, brown sugar, ketchup, and soy sauce in a saucepan. Bring mixture to a simmer; pour in cornstarch slurry. Whisk until well combined and thickened slightly, 3 to 5 minutes. Remove from heat and pour over the ingredients in the slow cooker. Mix well to coat.
  • Cover and cook on High until kielbasa is cooked through, and mixture has thickened and reduced, 3 to 4 hours.

1/2 (28 ounce) bottle ketchup
3 tablespoons cider vinegar
1 1/2 teaspoons spicy brown mustard
1 tablespoon Worcestershire sauce
2 teaspoons hot pepper sauce
1 pound kielbasa sausage, cut into 1 inch piece

Steps:

  • Melt butter in a large skillet over medium heat. Sauté onions until tender. Stir in brown sugar, ketchup, vinegar, mustard, Worcestershire sauce and pepper sauce. Simmer, stirring occasionally, for 20 minutes. Place sausage in a slow cooker with the sauce and onions. Cook on low for 4 to 5 hours. The longer it simmers the better!

2 lb kielbasa, cut into chunks
2 cups ketchup
2 cups brown sugar
1 can (15 ounce) pineapple chunks
Cooked white rice

Steps:

  • Put all ingredients (except rice) into crock-pot and mix.
  • Cook for 2-2 1/2 hours in crock-pot on low or until heated through. If the kielbasa is not already cooked, increase the time to 5-6 hours on low.
  • This can be kept on low for serving buffet style. You can serve this with white rice as an entree or without as an appetizer.
