This Soul Food Southern Style Smothered Turkey wing recipe features a mushroom gravy that is out of this world.

2 large turkey wings (separated in 3 parts( flat, drum, tip))
1 large red onion (diced)
4-5 fresh sage leaves (chopped)
1 large portobello mushroom (diced)
1/2 cup all purpose flour
3 tsp seasoning salt
1 1/2 tsp dried thyme
1 tbsp onion powder
1 tbsp garlic powder
1 1/2 tsp celery seed
3/4 cup vegetable oil
6 cups chicken or turkey broth

Steps:

  • Combine the flour and seasonings into a large bowl and whisk.
  • Coat the turkey wings with the flour, then let sit for about 5-10 minutes.
  • DO NOT TOSS OUT THE EXCESS FLOUR!
  • Pour 1/2 cup of the vegetable oil into a large pan, and turn the heat to medium.
  • Once the oil is nice and hot, add in some of the turkey, but be sure to not overcrowd the pan.
  • Remove the turkey once browned, and place the turkey into the slow cooker.
  • Next, toss the onions and mushrooms into the pan, and cook until translucent.
  • Toss the onions and mushrooms into the slow cooker with the turkey wings.
  • Pour the remaining vegetable oil into the pan.
  • Once the oil is nice and hot, sprinkle in the excess flour.
  • Cook the flour until it is nice and brown, and be sure to stir continuously .
  • Carefully pour in the chicken or turkey broth, and whisk.
  • Once the mixture is nice and smooth, add in the fresh sage.
  • Stir the gravy, then pour it over the turkey wings.
  • Place the lid on the slow cooker.
  • Set the slow cooker on LOW and let cook for 6 hours.
  • Serve with rice or mashed potatoes, and greens!

My friend always makes smothered turkey wings and I'd always get to his house too late to get any. I searched for a recipe and couldn't find one, so I created my own. Enjoy!

6 turkey wings (whole or drummettes)
3 medium carrots, cut up
3 stalks celery, cut up
1 medium onion, cut up
3 bay leaves
3 garlic cloves
2 (7/8 ounce) packets turkey gravy mix (powdered)
1/2 cup water

Steps:

  • Season turkey wings the night before with the seasoning of your choice. I use a mixture of salt, pepper, garlic powder and onion powder. Refrigerate until morning.
  • Arrange cut up vegetables, bay leaves and garlic in bottom of a slow cooker.
  • Sprinkle 1 packet of turkey gravy mix on top of vegetables and stir to coat.
  • Pour 1/2 cup water over vegetables.
  • Place turkey wings on top of vegetables and sprinkle remaining turkey gravy powder over turkey wings.
  • Cook the turkey wings in the slow cooker on low before leaving for work in the morning and when you return home in the evening your turkey wings will be tender and simmering in their own rich gravy.
  • This is great served over hot white rice.

6 turkey wings
1 tablespoon vegetable oil
1 tablespoon salt
1 teaspoon fresh ground black pepper
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1/2 teaspoon onion powder
1/2 cup butter
2 celery ribs, chopped
1/2 medium onion, chopped
1 teaspoon dried thyme
1 teaspoon fresh ground black pepper
7 tablespoons flour
6 cups turkey or 6 cups chicken broth
2 cups milk

Steps:

  • To make wings: heat oven to 350°; brush wings with vegetable oil and place in a large roasting pan; stir together salt, pepper, garlic powder, poultry seasoning and onion powder in a medium bowl; sprinkle over turkey wings.
  • Bake until browned, 45-60 minutes.
  • To make sauce: melt butter in a large heavy saucepan or dutch oven; add celery and onion; cook over medium-low heat until soft but not browned, about 5 minutes; stir in thyme and pepper; cook 1 minute; add flour; cook, stirring constantly, until light brown, about 5 minutes; slowly whisk in broth.
  • Heat liquid to a boil; reduce heat and simmer uncovered 20 minutes.
  • Strain sauce through a sieve and return to the saucepan; slowly whisk in milk and stir constantly until sauce returns to a simmer.
  • Pour sauce over turkey wings; cover and cook until tender, about 1 hour.
