Reynolds™ Slow Cooker Liners
1 pork boneless loin roast (2 1/2 lb), trimmed of fat
2 tablespoons fajita seasoning (from 3-oz container)
1 cup Old El Paso™ Thick 'n Chunky salsa
1 bag (1 lb) frozen stir-fry bell peppers and onions, thawed
2 packages (11.5 oz each) Old El Paso™ flour tortillas for burritos (16 tortillas), warmed
2 cups shredded Mexican-style taco cheese (8 oz)
1 cup sour cream, if desired

Steps:

  • Place Reynolds™ Slow Cooker Liners inside a 5- to 6 1/2 -qt slow cooker bowl. Make sure that liner fits snugly against the bottom and sides of bowl and pull the top of the liner over rim of bowl.
  • Place pork in 3- to 4-quart slow cooker. Sprinkle with fajita seasoning. Top with salsa. Cover; cook on Low heat setting 8 to 10 hours.
  • Remove pork from cooker; place on cutting board. Shred pork using 2 forks; return pork to cooker and mix well. Stir in stir-fry vegetables. Increase heat setting to High. Cover; cook 30 minutes longer or until mixture is hot and vegetables are tender.
  • Using slotted spoon, place 1/2 cup meat mixture in each warm tortilla. Sprinkle with cheese. Serve with sour cream.

1 (2 1/2 lb) boneless pork loin or 2 1/2 lbs beef roast, fat trimmed
1 medium onion, thinly sliced
2 cups barbecue sauce
3/4 cup salsa
1 tablespoon chili powder
1 teaspoon ground cumin
1 (16 ounce) bag frozen peppers and onions (stir fry style)
1/2 teaspoon salt
18 (8 -10 inch) flour tortillas
shredded cheese (optional)
guacamole (optional)
sour cream (optional)

Steps:

  • Place pork in 3- to 4-quart slow cooker. Place onion on top. Mix barbecue sauce, salsa, chili powder and cumin in small bowl; pour over pork and onion.
  • Cover and cook on Low heat setting 8 to 10 hours.
  • Remove pork from cooker; place on cutting board. Shred pork, using 2 forks. Return pork to cooker and mix well. Stir in stir-fry vegetables and salt. Increase heat setting to High. Cover and cook 30 minutes or until mixture is hot and vegetables are tender.
  • Using slotted spoon to remove pork mixture from cooker, fill each tortilla with 1/2 cup pork mixture. Fold one end of tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down. Serve with cheese, guacamole and sour cream.

1 tablespoon(s) oil
1 pound(s) boneless pork shoulder roast, trimmed
3/4 cup(s) mild salsa
1 teaspoon(s) chili powder
3/4 teaspoon(s) ground cumin
3 tablespoon(s) mayonnaise
1 tablespoon(s) white vinegar
1/4 teaspoon(s) salt
1 medium avocado, cubed
1/2 cup(s) halved and thinly sliced onion
12 small flour tortillas
1/4 cup(s) chopped cilantro

Steps:

  • Spray 4 qt slow cooker with cooking spray. In a 10" skillet, heat oil over medium heat. Cook pork in oil 6 - 8 minutes, or until brown on both sides. Place pork in slow cooker. Cover; cook on low heat setting 7 - 8 hours or until pork pulls apart easily with fork.
  • Remove pork from slow cooker; shred pork. Reserve 1/4 cup liquid in slow cooker; discard remaining liquid. Stir pork, salsa, chili powder, and cumin into liquid in slow cooker.
  • In medium bowl, stir together mayonnaise, vinegar, and salt. Gently stir in avocado and onion. To serve, place pork in tortillas; top with avocado-onion slaw and chopped cilantro.
