1 cup chicken broth
1 cup orange juice
1/2 cup honey
1/2 cup packed brown sugar
1 to 2 teaspoons crushed red pepper flakes
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
2 garlic cloves, minced
1/4 teaspoon ground ginger
6 boneless skinless chicken breast halves (about 6 ounces each)
3 tablespoons cornstarch
1/4 cup water
4 ounces uncooked rice noodles
Chopped green onions

Steps:

  • Combine first 10 ingredients until well mixed. Place chicken in a 4- or 5-qt. slow cooker; add broth mixture. Cook, covered, on low until tender, 3-4 hours. Remove chicken; when cool enough to handle, coarsely shred meat with 2 forks. Set aside., In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Return chicken to slow cooker; add noodles. Cook, covered, on low for 15 minutes. Stir noodles; cook until thickened and noodles are tender, 15 minutes longer. Serve with green onions.

1 jar (12 oz) sweet orange marmalade
1/2 cup packed brown sugar
1/4 cup soy sauce
2 tablespoons chili garlic sauce
1 teaspoon salt
1 whole chicken (3 1/2 to 4 1/2 lb)
1-inch piece fresh gingerroot, peeled
1/4 cup cornstarch
1/4 cup orange juice
6 thin slices of orange, halved
2 tablespoons chopped fresh cilantro leaves
Cooked white rice, if desired

Steps:

  • Spray 5-quart oval slow cooker with cooking spray. In small bowl, mix marmalade, brown sugar, soy sauce, chili garlic sauce and salt. Add chicken and marmalade mixture to slow cooker, spreading marmalade mixture over chicken, inside and out. Place chicken breast side down; add gingerroot.
  • Cover; cook on Low heat setting 4 to 5 hours, until instant-read thermometer inserted in thickest part of chicken thigh muscle and not touching bone reads at least 165°F (legs should move easily when lifted or twisted). Do not uncover slow cooker before 4 hours.
  • Remove gingerroot, and discard. Transfer chicken to cutting board; let stand about 5 minutes or until cool enough to handle. Cut into 8 pieces.
  • Meanwhile, in small bowl, mix cornstarch and orange juice; stir into liquid mixture in slow cooker. Cover; cook on High heat setting 10 to 15 minutes or until sauce thickens.
  • Position oven rack 4 inches from broiling element. Set oven control to broil. Line large rimmed baking pan with foil; carefully transfer chicken, skin side up, to pan. Place orange slices around chicken; brush oranges and chicken with sauce. Broil 3 to 5 minutes or until skin is golden brown and crisp; sprinkle with cilantro, and serve with more of the sauce over rice.

1 teaspoon garlic powder

2 tablespoons molasses, optional
2 pounds boneless skinless chicken breasts, cut into 3/4-inch pieces
1/2 cup cornstarch
3/4 teaspoon salt
1/2 teaspoon pepper
1 large sweet red pepper, cut into 1-inch pieces
2 cups fresh broccoli florets
Hot cooked rice

Steps:

  • In a small bowl, combine the first 11 ingredients; stir in molasses if desired. In a 4-qt. slow cooker, combine chicken, cornstarch, salt and pepper; toss to coat. Top with red pepper. 4 chicken breasts (I prefer bone in and skin on)
salt and pepper
cooking oil
1/2 cup orange juice concentrate
1 cup sour cream

Steps:

  • Season the chicken breasts with salt and pepper.
  • Heat a large sauté pan and add a couple of tablespoons of oil.
  • Sear the chicken, skin side down, until well browned.
  • Turn and brown the other side.
  • Place the chicken breasts into the slow cooker and add the orange juice concentrate.
  • Don't dilute with water.
  • Cook for 3 hours on high or 5 to 6 hours on low.
  • Remove the chicken and keep it warm.
  • Degrease the sauce with a ladle and stir the sour cream into the sauce.
  • Serve each chicken breasts with some of the sauce poured over the top.

¼ cup all-purpose flour

This is a work in progress. I got a version of this from a friend and adapted it to what I had in the fridge. It's really rich so cutting down the butter or making substitutions would probably work. It's so yummy though, you won't be able to stay away from the left overs! We served this with rice and peas.

1 1/4 lbs boneless skinless chicken thighs
1 large onion, chopped
1/3 cup butter
1/3 cup honey
2 tablespoons orange juice
1/2 orange, zest of
1 teaspoon ground ginger
1 tablespoon fresh ginger, grated
4 garlic cloves, mashed

Steps:

  • Layer chicken thighs on top of onions in slow cooker.
  • Melt butter and mix with remaining ingredients.
  • Pour over chicken and onion and cook on high or low until it's done. It took about 5 hours on high for my slow cooker, which I think runs hot.
  • Note: The original recipe calls for lemon juice and zest and you could totally cut down on the butter. Next time I make this I will probably use a 1/4 cup of butter and then add some chicken stock.

1/3 cup HEINZ Tomato Ketchup

2 lb. mixed boneless skinless chicken breasts and thighs, cut into 1/2-inch pieces
2 Tbsp. sugar
3 Tbsp. HEINZ Apple Cider Vinegar
2 green onions, cut into thin slices

Steps:

  • Use vegetable peeler to cut 4 strips of peel from orange; place strips in slow cooker sprayed with cooking spray. Cut orange in half; squeeze juice over strips.
  • Add dressing, ketchup, crushed pepper and cornstarch; mix well. Stir in chicken; cover with lid. Cook on LOW 3 to 4 hours (or HIGH 2 to 3 hours).
  • Stir sugar and vinegar into chicken mixture. Sprinkle with onions.

  • Cover chicken in flour and shake off the excess. Brown chicken pieces in olive oil in skillet or slow cooker if have browning setting. Doesn't have to be completely cooked, just browned. Put browned chicken in slow cooker. Mix all remaining ingredients together. Please note, I add a splash of soy sauce and about 1/8 cup honey to mine and sometimes garlic powder. Add your favorite flavors, pour over chicken and stir. Slow cook on High about 2 hours or Low about 4 hours. Serve over rice, noodles or mixed veggies.

Steps:

  • Coat the chicken pieces with flour and then brown in a skillet with olive oil. The chicken does not have to be cooked completely. Place the chicken pieces in the bottom of the crock-pot. Mix the remaining ingredients together and then pour over the chicken pieces. Gently stir ingredients together. Cook for 5 to 6 hours on low.
