1 pound skinless, boneless chicken breast halves - cut into 2 inch pieces
4 cloves garlic, chopped
1 large onion, chopped
1 (28 ounce) can diced tomatoes
3 fresh peaches - peeled, pitted, and sliced
1 (15 ounce) can garbanzo beans, drained
1 cup chopped dried apricots
2 teaspoons ground cumin
1 teaspoon ground ginger
1 teaspoon cinnamon
½ teaspoon ground coriander
½ teaspoon cayenne pepper
2 cups chicken broth
1 tablespoon cornstarch
1 tablespoon water
3 tablespoons chopped fresh cilantro
⅓ cup slivered almonds, toasted

Steps:

  • Place chicken in the bottom of a slow cooker. Add the garlic, onion, tomatoes, peaches, garbanzo beans, dried apricots, cumin, ginger, cinnamon, coriander, and cayenne pepper. Pour in the chicken broth. Cook on Low for 5 hours.
  • Remove the chicken and keep warm. Mix the cornstarch and water in a small bowl. Stir the cornstarch mixture into the slow cooker. Cook on High until the sauce has thickened, about 15 minutes. Return the chicken to the slow cooker and heat through. Top with fresh cilantro and almonds before serving.

1 large can (28 ounces) crushed tomatoes with juice
1 can (8 ounces) tomato sauce
1/2 cup onion (chopped)
1 cup dry white wine
1/3 cup olive oil
3 cloves garlic (minced)
1/2 cup parsley (chopped)
1 green pepper (chopped)
Optional: 1 hot pepper (chopped)
Salt and pepper to taste
1 teaspoon thyme
2 teaspoons basil
1 teaspoon oregano
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
For the Seafood:
1 fillet of seabass, cod or other white fish (deboned and cubed)
1 dozen prawns
1 dozen scallops
1 dozen mussels
1 dozen clams (can use canned)
Optional: 1 cup of crab meat (if in season)

Steps:

  • Gather the ingredients.
  • Place all ingredients in a slow cooker, except seafood.
  • Gently stir, cover, and cook for 6 to 8 hours on LOW.
  • About 30 minutes before serving, add your seafood. Turn the heat up to HIGH and stir occasionally, but gently, being careful not to tear apart the fish pieces.
  • If desired, add 1/2 cup of water to thin out the soup. Serve hot and enjoy.

2 tablespoons olive oil
3 small onions, chopped
3 tablespoons paprika
1 tablespoon plus 1/2 teaspoon garam masala, divided
1-1/4 teaspoons salt, divided
1/4 teaspoon cayenne pepper
2 tablespoons tomato paste
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (14-1/2 ounces) beef broth
1/4 teaspoon pepper
1 boneless beef chuck roast (3 pounds)
4 medium carrots, cut diagonally into 3/4-inch pieces
1 small eggplant, cubed
2 tablespoons honey
2 tablespoons minced fresh mint
Hot cooked couscous or flatbreads, optional

Steps:

  • In a large skillet, heat oil over medium heat; saute onions with paprika, 1 tablespoon garam masala, 1/2 teaspoon salt and cayenne until tender, 4-5 minutes. Stir in tomato paste; cook and stir 1 minute. Stir in chickpeas and broth; transfer to a 5- or 6-qt. slow cooker., Mix pepper and the remaining 1/2 teaspoon garam masala and 3/4 teaspoon salt; rub over roast. Place in slow cooker. Add carrots and eggplant. Cook, covered, until meat and vegetables are tender, 7-9 hours., Remove roast from slow cooker; break into pieces. Remove vegetables with a slotted spoon; skim fat from cooking juices. Stir in honey. Return beef and vegetables to slow cooker and heat through. Sprinkle with mint. If desired, serve with couscous. Freeze option: Freeze cooled beef and vegetable mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, stirring gently.

6 tablespoons extra virgin olive oil
1 whole sea bass, about 3 pounds, cleaned
3 cloves garlic
1/3 cup packed cilantro leaves, plus 10 sprigs cilantro
1/3 cup packed mint leaves, plus 10 sprigs mint
1 teaspoon sweet Spanish paprika
Juice of 1 lemon
Salt and freshly ground black pepper to taste

Steps:

  • Use 1/2 tablespoon oil to grease a baking pan large enough to hold fish. Rub 1/2 tablespoon oil over outside of fish. Preheat oven to 450 degrees.
  • Finely mince garlic by hand or by dropping it through feed tube of running food processor. Do same with the packed cilantro and mint leaves. Transfer garlic and herbs to a small bowl, and stir in paprika, lemon juice and 2 tablespoons oil. Season with salt and pepper.
  • Use a sharp knife to cut 3 or 4 slashes about 1/2 inch deep in each side of fish. Spoon a scant teaspoon of herb mixture into each slash. Place fish in baking pan, and stuff cavity with half the cilantro and mint sprigs.
  • Put remaining herb mixture and remaining oil in small saucepan.
  • Roast fish about 20 minutes, until flesh in the slashes looks opaque. Remove from oven, and let rest 5 minutes. Gently heat herb mixture until warm.
  • Transfer fish to a serving platter, remove herbs from cavity and garnish platter with remaining cilantro and mint sprigs. Serve fish, filleting it as you go and spooning herb mixture over each portion.

2 large onions, halved and sliced
1 broiler/fryer chicken (3 to 4 pounds), cut up, skin removed
1/2 teaspoon salt
1/2 cup chopped dried apricots
1/2 cup raisins
1 can (14-1/2 ounces) reduced-sodium chicken broth
1/4 cup tomato paste
2 tablespoons all-purpose flour
2 tablespoons lemon juice
2 garlic cloves, minced
1-1/2 teaspoons ground ginger
1-1/2 teaspoons ground cumin
1 teaspoon ground cinnamon
3/4 teaspoon pepper
Hot cooked couscous

Steps:

  • Place carrots and onions in a greased 5-qt. slow cooker. Sprinkle chicken with salt; add to slow cooker. Top with apricots and raisins. In a small bowl, whisk broth, tomato paste, flour, lemon juice, garlic and seasonings until blended; add to slow cooker., Cook, covered, on low until chicken is tender, 6-7 hours. 2 tablespoon Olive oil
1 Onion (yellow; large), finely chopped
1 Bell pepper (red; medium), cut into 1/2 inch strips
1 Bell pepper (yellow; medium), cut into 1/2 inch strips
4 clove Garlic, minced
1 teaspoon Saffron threads, crushed in hand
1 1/2 teaspoon Paprika (sweet)
1/4 teaspoon Paprika (hot or smoked)
1/2 teaspoon Ginger (ground)
15 ounce Diced tomatoes (can; with juice)
1/4 cup Orange juice (fresh)
2 pound Sea Bass (fillets)
1/4 cup Parsley (flat leaf), finely chopped
1/4 cup Cilantro, finely chopped
1/4 teaspoon Sea salt
1/4 teaspoon Black pepper

Steps:

  • In a large skillet, heat the olive oil over medium high heat. Add the onion, red and yellow bell peppers, garlic, saffron, sweet paprika, hot/smoked paprika and ginger. Cook, stirring often for 3 minutes until onion begins to soften.
  • Add the tomatoes and stir for another 2 minutes, to blend the flavors.
  • Transfer the mixture to the slow cooker and stir in the orange juice.
  • Place the fish on top of the tomato mixture and spoon some of the mixture over the fish.
  • Cover and cook on high for 2 hours or on low for 3-4 hours.
  • Remove fish. Stir in parsley and cilantro, season sauce with salt and pepper.
  • Serve fish with sauce.
