4 pork chops, 1 inch thick, bone in
2 tablespoons vegetable oil
1 garlic clove, minced
1/4 cup soy sauce
1/4 cup chicken broth
2 tablespoons brown sugar
1/4 teaspoon chili pepper flakes, crushed (sweet or red)
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • In pan, brown chops both sides in oil then transfer to crockpot.
  • Add garlic to drippings in pan, cook and stir about 1 min or until golden brown.
  • Stir in soy sauce, broth, brown sugar, pepper flakes and cook and stir until dissolved.
  • Pour over chops, cover& cook 7-8 hours on low heat.
  • Remove chops.
  • Combine corn starch& cold water until smooth and stir into slow cooker.
  • Return chops, cover, set to high heat and cook for 20 minutes.
  • Serve over white rice or with a boxed oriental style rice.

2 tablespoons extra-virgin olive oil
4 pork chops, about 1-inch thick
salt and pepper for seasoning
2 garlic cloves, finely minced
1/4 cup reduced sodium soy sauce
1/4 cup low sodium chicken broth
2 tablespoons packed light brown sugar
1/4 teaspoon red pepper flakes
1 tablespoon cornstarch
1 tablespoon cold water
mashed potatoes (for serving) or hot cooked rice (for serving)

Steps:

  • In a large 12-inch skillet, heat the oil over medium-high heat until it is simmering and hot. Season the pork chops on both sides with salt and pepper. Brown the pork chops for 1-2 minutes on each side in the hot oil until golden. Transfer the chops to the slow cooker. Add the garlic to the drippings in the skillet and stir constantly over medium heat until the garlic is aromatic and golden (but not burned or it will turn bitter!). Stir in the soy sauce, broth, brown sugar and red pepper flakes; cook and stir until sugar is dissolved. Pour over chops.
  • Cover the slow cooker and cook on low for 7 to 8 hours until the meat is tender. If using bone-in pork chops, fish out the bones from the slow cooker. Remove the chops from the slow cooker to a shallow pan or plate - they will most likely be falling apart in tenderness at this point. In a small bowl, combine the cornstarch and cold water until smooth. Whisk the cornstarch slurry into the sauce in the slow cooker. Return the chops to the slow cooker. Turn the slow cooker heat to high and cook for 30 minutes to an hour longer, until the sauce is slightly thickened. If you want a super duper thick sauce, once you remove the chops from the slow cooker, pour the sauce into a pan and place it over medium heat on the stove. Add the cornstarch slurry and bring the sauce to a boil. Boil for 1-2 minutes until the sauce is thick. Add the pork and heat through.
  • Serve the tender chops over potatoes or rice and garnish with green onions, if desired.

Since I handed off so much food, she froze these chops and reheated them for dinner the other day. I love it that these pork chops not only tasted good, they withstood being slow-cooked, frozen, and reheated. And I'm thrilled that I was able to contribute to a freezer-stash, yay!

6 pork chops
1/4 cup brown sugar
1 teaspoon ginger
1 teaspoon five-spice powder
1/2 cup soy sauce
1/4 cup ketchup
4 garlic cloves, chopped

Steps:

  • Put chops into the stoneware. In a small bowl, combine sugar, spices, soy sauce, ketchup, and garlic. Pour evenly over the top of chops. No need to add any other liquid. If you had an onion in the house, it might be a nice addition, but not necessary for flavor.
  • Cover and cook on low for 6-8 hours, or on high for about 4. If your chops are frozen they will take longer to cook. The longer you cook the meat, the more tender it will, but it might fall off the bone.

I was looking for a pork chop that was more than just pork cooked in a creamy white sauce. So, I played about in the test kitchen, and came up with this. It's good bone-in pork chops, in a dreamy sauce, slow cooked for several hours. What could go wrong? So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
2 thick bone-in pork loin chops
THE SAUCE
3 Tbsp grapeseed oil
2 Tbsp tamari sauce
2 Tbsp worcestershire sauce
2 Tbsp lime juice, freshly squeezed
4 Tbsp coconut sugar
4 Tbsp ketchup
3 clove garlic
2 tsp ginger
salt, kosher variety, to taste
black pepper, freshly ground, to taste
sesame seeds, for garnish

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Salt and pepper both sides of the pork chops.
  • 4. Chef's Note: If you have time to brine the chops, go for it.
  • 5. Combine all the sauce ingredients in a small bowl, and whisk to combine.
  • 6. Add a bit of grapeseed oil to a pan over medium-high heat.
  • 7. Add the chops.
  • 8. Allow them to sear for 2 minutes per side.
  • 9. Chef's Tip: I like sear on each side for 1 minute, and then go back and sear each side a second time for an additional minute.
  • 10. Add the pork chops to your slow cooker.
  • 11. Pour the sauce on top.
  • 12. Cook on low for 4 hours.
  • 13. Chef's Note: After 2 hours, open the slow cooker and flip the chops over.
  • 14. OPTIONAL STEP: After the four hours, I like to remove them from the slow cooker, and place them under the broiler for a few minutes... just to crisp them up a bit.
  • 15. PLATE/PRESENT
  • 16. Place on a nice plate, along with your favorite sides... For me that would be some yummy mashed golden potatoes. Enjoy
