The perfect marriage of Southern slow-cooked green beans and ham with creamy potato soup! I've been making this soup for 15 years and it's an all-time family favorite!

5 cups cubed peeled potatoes
3 (10.75 ounce) cans low-sodium chicken broth
2 (15 ounce) cans green beans, drained
3 cups cubed fully cooked ham
1 (10.75 ounce) can condensed cream of chicken soup
½ cup diced onion
1 (3 ounce) can real bacon bits
¼ teaspoon ground black pepper
1 (8 ounce) package cream cheese, softened

Steps:

  • Place potatoes, chicken broth, green beans, ham, cream of chicken soup, onion, bacon, and pepper in a slow cooker.
  • Cook until potatoes are tender, on High for 4 to 5 hours, or on Low for 7 to 8 hours. Add in the cream cheese during the last 30 minutes of cooking; stir until blended.

1 large ham hock
2 onions, chopped
1 large carrot, chopped
4 cups water, or more as needed
2 tablespoons chicken base (such as Better Than Bouillon® Roasted Chicken Base)
1 tablespoon rubbed sage leaves
8 sprigs fresh thyme
2 sprigs fresh rosemary
1 ½ pounds Yukon Gold potatoes, cubed
1 pound purple potatoes, cubed
½ pound red potatoes, cubed
3 small tomatoes, diced
1 cup cubed ham, or more to taste
½ cup salted butter
½ cup all-purpose flour
1 cup half-and-half
¼ cup shredded Cheddar cheese, or to taste

Steps:

  • Combine ham hock, onions, carrot, water, chicken base, sage, thyme, and rosemary in a large slow cooker. Cover and cook on Low, 8 hours to overnight.
  • Stir potatoes and tomatoes into the soup and cook on Low, 3 to 4 hours more.
  • Remove ham hock, shredding with 2 forks, leaving behind any meat. Add cubed ham.
  • Meanwhile, melt butter in a saute pan over medium heat. Whisk in flour until it is thick, aromatic, and slightly browned, 15 to 20 minutes. Add half-and-half until it is gravy consistency. Add mixture to the slow cooker and mix well. Serve with Cheddar cheese.

This is so good on a cold day. We usually serve it with fresh crusty bread and butter. One of my favorite comfort foods.

2 lbs red potatoes, peeled and sliced into 1 inch slices
1 lb country ham, diced
3/4 cup sliced green onion
2 cups heavy cream
2 cups water
1 1/2 cups milk
1 cup shredded smoked gouda cheese
2 teaspoons ground black pepper
8 ounces Velveeta cheese, cubed
1/4 cup butter or 1/4 cup margarine
chopped green onion, for garnish

Steps:

  • Combine all ingredients in a large slow cooker. Cover and cook on low-heat setting for 4 to 6 hours or until potatoes are tender. To serve garnish with diced green onions.
  • NOTE: Country ham is salt cured and not honey cured.
