This is a ridiculously easy soup, especially since it cooks in a slow cooker! When it's been simmering all day, you come home to an amazing aroma and a fabulous meal for a cold winter day.

- Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in beef broth. Season to taste with sea salt; stir in thyme and bay leaf. Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
- About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
- Broil bread slices until toasted, 1 to 2 minutes per side.
- Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 tablespoons of cheese mixture per serving.
- Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

- Place Reynolds™ Slow Cooker Liners inside a 5- to 6 1/2 -qt slow cooker bowl. Make sure that liner fits snugly against the bottom and sides of bowl and pull the top of the liner over rim of bowl.

- COOK ONIONS Arrange beef bones on paper towel-lined plate. Microwave until well browned, 8 to 10 minutes. Meanwhile, set slow cooker to high. Add butter, cover, and cook until melted. - In a large skillet on medium-high heat, melt butter. Add in onions and cook until see-through, stirring frequently (It takes about 10 minutes).
- Add in sugar, and reduce heat to medium. Stir the onions constantly, caramelizing them. It will take about 20-30 minutes.
- Add in the minced garlic and apple cider, and stir until warmed through.
- Transfer the onions to the slow cooker and add in beef broth and thyme. Cook on low for 6-8 hours.
- Before serving, place the french bread slices on a baking sheet and broil in the oven for 1-2 minutes (just until browned).
- In a small bowl, mix together the three cheeses.
- Pour soup in oven-safe bowls (the soup will serve 6-8), place a piece of french bread in each bowl, and then top each with a portion of cheese. Place each bowl on the cookie sheet, and broil for 2 more minutes, until the cheese starts to melt and brown.
- Serve hot.

Turn the slow cooker on high and cook until the onions are very soft and the garlic has disintegrated, 3 hours. From Cook's Country April/May 2010 Why this recipe works: Soy sauce, sherry, and thyme added early on helped boost flavor of our Slow-Cooker French Onion Soup recipe, but the addition of beef bones reproduced the rich meatiness of the classic.
