6 tablespoons butter
4 large yellow onions, sliced and separated into rings
1 tablespoon white sugar
2 cloves garlic, minced
½ cup cooking sherry
7 cups reduced-sodium beef broth
1 teaspoon sea salt, or to taste
¼ teaspoon dried thyme
1 bay leaf
8 slices of French bread
½ cup shredded Gruyere cheese
⅓ cup shredded Emmental cheese
¼ cup freshly shredded Parmesan cheese
2 tablespoons shredded mozzarella cheese

Steps:

  • Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in garlic and cook until fragrant, about 1 minute.
  • Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in beef broth. Season to taste with sea salt; stir in thyme and bay leaf. Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
  • About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
  • Broil bread slices until toasted, 1 to 2 minutes per side.
  • Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 tablespoons of cheese mixture per serving.
  • Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

Steps:

  • Place Reynolds™ Slow Cooker Liners inside a 5- to 6 1/2 -qt slow cooker bowl. Make sure that liner fits snugly against the bottom and sides of bowl and pull the top of the liner over rim of bowl.
  • In lined slow cooker, mix onions and margarine.
  • Cover and cook on high heat setting 30 to 35 minutes or until onions begin to slightly brown around edges.

4 yellow onions, sliced thinly into rings
1 tablespoon white sugar
2 cloves of garlic, minced
1/2 cup apple cider
7 cups beef broth
1/4 teaspoon thyme
French bread, sliced into 1" slices
1/2 cup provolone cheese
1/2 cup swiss cheese
1/2 cup mozzarella cheese

Steps:

  • In a large skillet on medium-high heat, melt butter. Add in onions and cook until see-through, stirring frequently (It takes about 10 minutes).
  • Add in sugar, and reduce heat to medium. Stir the onions constantly, caramelizing them. It will take about 20-30 minutes.
  • Add in the minced garlic and apple cider, and stir until warmed through.
  • Transfer the onions to the slow cooker and add in beef broth and thyme. Cook on low for 6-8 hours.
  • Before serving, place the french bread slices on a baking sheet and broil in the oven for 1-2 minutes (just until browned).
  • In a small bowl, mix together the three cheeses.
  • Pour soup in oven-safe bowls (the soup will serve 6-8), place a piece of french bread in each bowl, and then top each with a portion of cheese. Place each bowl on the cookie sheet, and broil for 2 more minutes, until the cheese starts to melt and brown.

2 tablespoons of butter
1 tablespoon of sugar
1 teaspoon of salt
1 teaspoon cracked black peppercorns (we used ¾ tsp ground black pepper)
8 cups beef stock or low-sodium vegetable broth
2 tablespoons brandy, Cognac or dry sherry (optional, we used dry sherry)
12 slices of a good quality baguette
2 cups shredded Swiss, Gruyere or Jarlsburg cheese (we used slices of Swiss cheese), plus more for serving

Steps:

  • In a soup pot, combine the onions and butter and cook over low heat, stirring to coat the onions thoroughly, until softened, about 30 minutes. (If using a slow cooker, cover and cook on high until the onions are softened, about 1 hour.)
  • Add the sugar, salt and peppercorns and stir well. Increase the heat to medium-low, cover, and cook for 2 hours. (Cook on high for 4 hours in the slow cooker.) Add the stock or broth and brandy (if using). Cook for 2 hours longer (or 2 hours in the slow cooker).

2 T. Red wine vinegar

1 t. Black pepper
24 (1/2 oz,) slices French baguette bread
5 oz. Gruyere cheese, shredded (about 1 1/4 c.)

Steps:

  • 1. Place butter, thyme, and bay leaf in the bottom of a 6 qt. slow cooker. Add onions; sprinkle with sugar. Cover and cook on HIGH for 8 hours. 2. Remove thyme sprig and bay leaf; discard. Add stock, vinegar, salt (adjust salt if using salted butter and/or stock), and pepper. Cook covered, on HIGH for 30 minutes. 3. Preheat broiler. 4. Arrange bread in a single layer on a baking sheet. Broil 30 seconds on each side or until toasted. Place 1 c. Soup in each of 12 (8 oz.) ramekins or ovenproof bowls. Top each serving with 2 slices of bread and about 2 T. Shredded cheese. Place filled bowls on a jelly roll pan. Broil 2 minutes or until cheese melts and begins to brown. NOTE: I often halve this recipe and it works nicely!

9 heads shallots, thinly sliced
1 clove garlic, smashed
1 sprig bay leaf
3 tablespoons butter
3/4 teaspoon kosher salt
1 sprig thyme
8 cups beef broth
1 pinch fresh ground pepper
1 loaf baguette
8 ounces Gruyère cheese

Steps:

  • 1. In a slow cooker, combine the onions, shallots, thyme, garlic, bay leaf, butter and salt. Turn the slow cooker on high and cook until the onions are very soft and the garlic has disintegrated, 3 hours. Add the beef broth, season with a pinch of black pepper and continue to cook on high for 2 hours more.
  • 2. About 30 minutes before serving, adjust the oven rack to the top portion and preheat to 425°. On a foil-lined baking sheet, arrange 8 to 12 bread slices in a single layer and toast until light golden brown, 5 minutes. Set aside and set the oven temperature to the low broil.
  • 3. On the baking sheet, place 4 to 6 oven-safe bowls and fill each to the rim with soup. Top with 1 or 2 slices of toasted bread and layer with cheese, completely covering the bread. Broil until the cheese is melted, 2 to 3 minutes. Serve with any extra bread for dipping.

From Cook's Country April/May 2010 Why this recipe works: Soy sauce, sherry, and thyme added early on helped boost flavor of our Slow-Cooker French Onion Soup recipe, but the addition of beef bones reproduced the rich meatiness of the classic. We microwaved the bones for a few minutes before placing them in the slow cooker to simulate roasting without having to turn on the oven or dirty a roasting pan. 1/2 cup (1 stick) butter or margarine
3 large onions, thinly sliced
4 cups hot water
2 tablespoons instant beef bouillon or 6 beef bouillon cubes
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
4 slices toasted French bread
1/2 cup freshly grated Parmesan cheese

Steps:

  • Melt butter in a skillet over low heat. Add onions and cook slowly, up to 45 minutes to release maximum flavor, or until nicely browned, stirring frequently. Transfer to a slow cooker. Add water, bouillon, Worcestershire sauce, and salt. Cover and cook on low for 4 to 6 hours.
  • To serve, top each bowl with 1 slice of bread. Sprinkle each with 2 tablespoons Parmesan. Recipe may be doubled and kept hot in slow cooker.

2 Tbsp. brown sugar
2 Tbsp. KRAFT Balsamic Vinaigrette Dressing
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1-1/2 qt. (6 cups) fat-free reduced-sodium beef broth
2 cups water
1 bottle (12 oz.) non-alcoholic beer
1 Tbsp. chopped fresh thyme
20 French bread slices (1/2 inch thick), toasted
1-1/2 cups KRAFT Shredded Swiss Cheese

Steps:

  • Combine first 4 ingredients in slow cooker sprayed with cooking spray; cover with lid. Cook on HIGH 1 hour, stirring after 30 min.
  • Reduce heat to LOW. Add broth, water, beer and thyme to slow cooker; stir. Cook, covered, on LOW 6 to 8 hours (or on HIGH 4 hours).
  • Heat broiler. Ladle soup into 10 ovenproof bowls; top with toast slices and cheese.
  • Broil, 6 inches from heat, 3 to 5 min. or until cheese is melted and golden brown.
