Crockpot Scalloped Potatoes with Ham is comfort food at its best! It is a great recipe to use up leftover ham after a holiday dinner.

8 potatoes (medium-sized, peeled and sliced and tossed with a few pinches of salt)
1 onion (chopped)
2 cups cooked ham (cubed)
1 1/2 cups cheddar cheese
10.25 ounces cream of mushroom soup (homemade recipe HERE)
2/3 cup milk
1/2 tsp thyme (or more to taste)
ground pepper (to taste)

Steps:

  • In a slow cooker, layer half of the potatoes, onion, ham, and cheese.
  • Repeat layer.
  • In a mixing bowl, whisk together soup, milk, thyme, and fresh ground pepper. Pour over potato layers.
  • Cook on HIGH for 3-4 hours, or on LOW for 6-8 hours.

6 cups potatoes, peeled and sliced
1/2 cup onion, coarsely chopped
1 1/2 cups cubed cooked ham
1 cup American cheese, shredded
1 (10 3/4-ounce) can condensed 98% fat-free cream of mushroom soup with 30% less sodium
1/2 cup milk
1/4 to 1/2 teaspoon dried thyme leaves

Steps:

  • In 3 1/2- to 4-quart slow cooker, layer half each of the potatoes, onion, ham and cheese; repeat layers. In small bowl, mix soup, milk and thyme; pour over top. Cover; cook on High heat setting 1 hour. Reduce heat setting to Low. Cover; cook 6 to 8 hours longer or until potatoes are tender. In 3 1/2- to 4-quart slow cooker, layer half each of the potatoes, onion, ham and cheese; repeat layers. In small bowl, mix soup, milk and thyme; pour over top. Cover; cook on High heat setting 1 hour. Reduce heat setting to Low. Cover; cook 6 to 8 hours longer or until potatoes are tender. To make ahead, slice potatoes up to 12 hours ahead; cover with lightly salted water, and refrigerate. Chopped onion and shredded cheese can be refrigerated in separate covered containers. Drain potatoes, and add to slow cooker when ready to cook.

3 pounds potatoes, peeled and thinly sliced
1 cup shredded Cheddar cheese
½ cup chopped onion
1 cup chopped cooked ham
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup water
½ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Place sliced potatoes in slow cooker. In a medium bowl, mix together shredded cheese, onion and ham. Mix with potatoes in slow cooker. Using the same bowl, mix together condensed soup and water. Season to taste with garlic powder, salt and pepper. Pour evenly over the potato mixture.
  • Cover, and cook on High for 4 hours.

This is one of the dishes Grandma served to our family during the holidays. Now, when the family gathers and I prepare this for my grandchildren, memories of those special times at Grandma's house fill my mind. I usually double this recipe, because the leftovers are fabulous when warmed in the microwave.

2 cups sliced peeled potatoes, cooked
1 cup diced cooked ham
1 tablespoon finely chopped onion
1/3 cup butter, cubed
3 tablespoons all-purpose flour
1-1/2 cups milk
1 cup shredded cheddar cheese
3/4 teaspoon salt
Dash white pepper
Minced fresh parsley

Steps:

  • In a greased 1-qt. baking dish, combine potatoes, ham and onion; set aside. , In a saucepan, melt butter over medium heat; stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until mixture is thickened and bubbly. Add cheese, salt and pepper; stir until the cheese is melted. Pour over potato mixture and stir gently to mix. , Bake, uncovered, at 350° for 35-40 minutes or until bubbly. Garnish with parsley.
