I am married to a chef, but I can't cook. So I make a lot of food in my slow cooker when it's my night to cook. We love France and French cooking, and this recipe is a wonderfully simple, elegant cassoulet that even I can make and he loves. Wonderful for cold nights and dinner parties. Double the recipe for leftovers - it melds overnight very well.

1 tablespoon olive oil
6 slices turkey bacon
1 large onion, finely chopped
4 boneless, skinless chicken thighs, chopped
¼ pound fully-cooked smoked sausage, diced
3 cloves garlic, minced
1 teaspoon dried thyme leaves
2 bay leaves
½ teaspoon ground black pepper
¼ cup tomato paste
3 (15 ounce) cans great Northern beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes, drained
3 tablespoons minced fresh parsley

Steps:

  • Heat olive oil in a large skillet over medium heat and cook bacon until crisp and brown, turning often, about 10 minutes. Remove bacon and drain on paper towels; crumble when cool. Set bacon aside.
  • Cook and stir onion in the same skillet until translucent, about 5 minutes. Stir in chicken, sausage, garlic, thyme, bay leaves, and black pepper; cook until chicken pieces are browned, 5 to 8 minutes. Stir in tomato paste.
  • Transfer chicken mixture to a slow cooker and stir in crumbled turkey bacon, great Northern beans, and diced tomatoes. Cover the cooker, set on Low, and cook until cassoulet is thickened and the chicken is very tender, 4 to 5 hours. Sprinkle with parsley before serving.

Many look down their noses at the slow cooker, but it's perfect for some dishes. Stews, for one. This sausage, duck and white bean stew is rich and hearty, and you can leave the dish wholly unattended for five to seven hours as it cooks. Brown the meat before you put it in the pot or not.

1/2 pound dried small white beans, like pea or navy
4 cloves garlic, peeled and crushed, plus 1 tablespoon minced garlic
1 medium-large onion, chopped
2 carrots, peeled and cut into chunks
2 cups cored and chopped tomatoes, with their juice (canned are fine)
3 or 4 sprigs fresh thyme or 1/2 teaspoon dried thyme
2 bay leaves
1/4 pound slab bacon or salt pork, in 1 piece
4 sweet Italian sausages, about 3/4 pound
1 pound boneless pork shoulder
2 duck legs
Chicken, beef or vegetable stock, or water, or a mixture, as needed
Salt and freshly ground black pepper to taste
1 cup plain bread crumbs, optional
Chopped fresh parsley for garnish

Steps:

  • Combine beans, crushed garlic, onion, carrots, tomatoes, thyme, bay leaves and meats in a slow cooker, and turn heat to high. (If you like, brown sausage and duck legs in a skillet before adding.) Add stock or water to cover by 2 inches. Cover and cook until beans and meats are tender, 5 to 6 hours on high heat, 7 hours or more on low.
  • When done, add salt and pepper to taste, along with minced garlic. If you like, remove cassoulet from slow cooker, and place in a deep casserole; cover with bread crumbs and roast at 400 degrees until bread crumbs brown, about 15 minutes. Garnish and serve.

All-Day Slow-Cooker Cassoulet image

This cassoulet is filled to the brim with white beans, lamb, garlic sausage, and smoked sausage (and breadcrumbs), but you can make yours with pork or ham, goat, or duck. Whatever you use, keep the proportions similar to those listed below, and you can't lose.

1 pound dried large white beans, such as cannellini or baby limas
1 duck (about 4 pounds)
1 pound boneless leg of lamb, cut into 2-inch cubes
2 teaspoons kosher salt
1/2 teaspoon coarsely ground black pepper
8 ounces garlic sausage, cut into 2-inch lengths
8 ounces smoked sausage, such as andouille, cut into 2-inch lengths
1 large onion, diced
2 large celery ribs, cut into 1/4-inch-thick slices
4 cloves garlic, minced
1/4 teaspoon ground nutmeg
1 teaspoon dried Italian seasoning
Pinch of ground cloves
1/2 cup dry white wine
4 cups beef or chicken broth, or a mixture
1 can (about 15 ounces) diced tomatoes, drained
2/3 cup dried breadcrumbs
1/4 cup coarsely chopped fresh Italian (flat-leaf) parsley

Steps:

  • Put the beans in a medium bowl, cover with about 3 inches of water, and soak overnight. Or put the beans in a saucepan, cover with water, and bring to a boil for 3 minutes. Remove from the heat and soak for 1 hour. Then drain.
  • Meanwhile, cut the duck into 8 pieces: 2 breast halves, 2 drumsticks, 2 thighs, and 2 wings. Trim off all visible fat and excess skin and set the fat and skin aside. Season the duck pieces and lamb with the salt and pepper and set aside.
  • Cook the duck fat and skin in a large heavy skillet over medium heat until between 1/4 and 1/3 cup fat is in the pan, about 4 minutes. Remove the solid pieces of fat and skin and discard. Brown the duck in the hot fat on both sides, about 4 minutes per side, and set aside. Brown the lamb, about 4 minutes per side, and set aside. Brown the sausage pieces on all sides, about 3 minutes per side, and set aside.
  • Add the onion and celery to the skillet and sauté until lightly browned, about 4 minutes. Add the garlic, nutmeg, Italian seasoning, and cloves and sauté until aromatic, about 1 minute. Add the wine and bring to a boil. Add the beef broth and tomatoes, return to a boil, and remove from the heat.
  • To assemble the cassoulet:
  • Layer the beans and meats, in alternating layers (4 of beans, 3 of meat), starting and ending with the beans. Pour the liquid over all, cover the cooker, and cook until the beans are tender, 8 to 10 hours on low.
  • Preheat an oven to 350°F. Mix the breadcrumbs and parsley and scatter over the top of the cassoulet. Transfer the crock with the cassoulet to the oven and bake until the top is browned and bubbling, about 30 minutes. Serve immediately.

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In 12-inch nonstick skillet, cook bacon over medium heat until crisp. Crumble bacon; place in slow cooker. Heat drippings over medium-high heat. Add the pork slices; cook 4 minutes, turning once, until browned. Place pork in slow cooker. In same skillet, cook onions and garlic over medium-high heat 5 minutes or until tender. 2 links andouille sausages, diced
2 teaspoons olive oil (if needed)
1 medium onion, diced
3 -4 large carrots, sliced diagonally

4 lb. boneless pork shoulder, cut into 8 pieces and trimmed of excess fat
Kosher salt and freshly ground pepper, to taste
2 Tbs. canola oil
1 cup panko
4 oz. thick-cut bacon, cut crosswise into 1/2-inch strips
4 cups coarsely chopped yellow onions (about 3 medium onions)
2 cups dry white wine, such as Sauvignon Blanc
1/4 cup tomato paste
1 can (35 oz.) peeled Italian plum tomatoes, drained and
coarsely chopped
2 cups chicken broth
12 cups cooked Great Northern beans or other small white
beans, drained
6 fully cooked or smoked chorizo or garlic sausage links,
about 1 1/2 lb. total, each halved on the diagonal
1 garlic head, halved crosswise
1/4 cup chopped fresh flat-leaf parsley, plus more for garnish
1 lb. baguette, cut into 1/2-inch-thick slices
Extra-virgin olive oil for brushing
Coarse sea salt, such as sel gris, for garnish

Steps:

  • Season the pork generously with kosher salt and pepper; set aside. In the stovetop-safe insert of a slow cooker over medium-high heat, combine the canola oil and panko. Cook, stirring constantly, until the panko is toasted and golden, 4 to 6 minutes. Transfer the panko to a baking sheet and season with kosher salt and pepper. Add the bacon to the insert and cook until crisp on both sides, about 5 minutes. Drain on paper towels. Reserve the bacon fat in the insert. Add half of the pork to the insert and brown on all sides, 7 to 8 minutes total. Transfer to a platter. Repeat with the remaining pork. Add the onions and 1 tsp. kosher salt to the insert and cook, stirring occasionally, until golden brown and softened, about 7 minutes. Add the wine and simmer until reduced by half, about 8 minutes. 4 lb boneless pork shoulder
2 T Canola oil
1 C Panko
4 oz thick cut bacon cut into 1/2 inch strips
4 C Yellow onion coarsely chopped
2 C Dry white wine (S. Blanc)
1/4 C Tomato paste
1 35 oz Can Italian tomatoes, drained and chopped
2 C Chicken broth
12 C White beans, cooked
1 1/2 lb Chorizo sausage, halved on the bias
1 Garlic head, halved crosswise
1/c C Italian parsley, chopped
1 lb Bagutte, cut in 1/2 inch slices
Olive oil for brushing

Steps:

  • Season pork generously with kosher salt and pepper. In large pot, combine canola oil and panko. Cook, stiring constantly, until panko is toasted and golden, 4 to 6 minutes. Transfer to baking sheet and season with salt and pepper. Add bacon to pot and cook until crisp, about 5 minutes. Drain on paper towels. Add half of pork to pot and bron, 7 minutes total. Transfer to platter. Repeat with remaining pork. Add onions and 1 tsp salt to pot and cook, stirring occasionally, until golden brown and softened, about 7 minutes. Add wine and simmer until reduced by half, about 8 minutes. Stir in tomato paste, tomatoes, and broth. Transfer to slow cooker. Add beans, pork, chorizo, and garlic. Cover and cook 9 to 10 hours. Skim off fat, remove and discard garlic. fold in panko and 1/4 C parsley. Adjust seasonings with salt and pepper. Position rack in lower third of oven and preheat broiler. Brush baguette slices with olive oil. Arrange slices, oiled side up. Broil until golden, 4 to 6 minutes. Top cassoulet with baguette slices and let stand 30 minutes before serving. Sprinkle each serving with bacon, salt, and parsley.

Beloved by generations of French cooks, cassoulet is a rustic, slow-cooked dish made with white beans and a lavish assortment of meats, from duck confit or foie gras to sausages and succulent cuts of pork, lamb or poultry. Here, we feature an adaptation of the Languedoc specialty from Thomas Keller, the internationally acclaimed chef of The French Laundry, in Northern California. To simplify the dish for home cooks, Chef Keller developed his cassoulet recipe for us utilizing the All-Clad Deluxe slow cooker. Be sure to use precooked Spanish-style chorizo sausage links, not fresh Mexican-style chorizo. Spanish chorizo is available in a variety of textures; purchase a softer-style sausage, rather than a dry one, for this dish; dry sausages are best suited for slicing and eating on their own, as a tapa.

salt & freshly ground black pepper, to taste
2 tablespoons canola oil
1 cup panko breadcrumbs
4 ounces bacon, thick cut, cut crosswise into 1/2-inch strips
4 cups yellow onions, coarsely chopped (about 3 medium onions)
2 cups sauvignon blanc wine or 2 cups other dry white wine
1/4 cup tomato paste
1 (35 ounce) can Italian plum tomatoes, peeled and drained and coarsely chopped
2 cups chicken broth
12 cups great northern beans, fully cooked and drained
6 chorizo sausage, fully cooked or smoked about 1 1/2 lb. total, each halved on the diagonal
1 head of garlic, halved crosswise
1/4 cup fresh flat-leaf parsley, chopped, plus more for garnish
1 lb baguette, cut into 1/2-inch-thick slices
olive oil, extra virgin, for brushing
coarse sea salt, such as sel gris, for garnish

Steps:

  • Directions:.
  • Season the pork generously with kosher salt and pepper; set aside.
  • In the stovetop-safe insert of a slow cooker over medium-high heat, combine the canola oil and panko. Cook, stirring constantly, until the panko is toasted and golden, 4 to 6 minutes. Transfer the panko to a baking sheet and season with kosher salt and pepper.
  • Add the bacon to the insert and cook until crisp on both sides, about 5 minutes. Drain on paper towels. Reserve the bacon fat in the insert.
  • Add half of the pork to the insert and brown on all sides, 7 to 8 minutes total. Transfer to a platter. Repeat with the remaining pork.
  • Add the onions and 1 teaspoons kosher salt to the insert and cook, stirring occasionally, until golden brown and softened, about 7 minutes. Add the wine and simmer until reduced by half, about 8 minutes. Stir in the tomato paste, tomatoes and broth. Remove the insert from the heat and add the beans, pork, chorizo and garlic.
  • Place the insert on the slow-cooker base, cover and cook on low until the pork pulls apart easily with a fork, 9 to 10 hours. Skim off the fat, and remove and discard the garlic. Fold in the panko and the 1/4 cup parsley. Adjust the seasonings with kosher salt and pepper.
  • Position a rack in the lower third of an oven and preheat the broiler.
  • Brush the baguette slices with olive oil. Arrange the slices, oiled side up, on top of the cassoulet, overlapping them. Broil until golden brown, 4 to 6 minutes.
  • Let the cassoulet stand at room temperature for about 30 minutes before serving. Sprinkle each serving with the reserved bacon, sea salt and parsley. Serves 8 to 10.

Steps:

  • Heat the oil in a heavy-based frying pan. Add the onions and cook over a low heat, stirring occasionally for 5 minutes until softened. Add the garlic, bacon and sausages occasionally for a further 5 minutes
  • Using a slotted spoon, transfer the mixture from the frying pan to the slow cooker. Add the beans, parsley and stock the cover and cook on low for 6 hours
  • Shortly before serving, preheat the grill. Place the bread slices on the grill rack and lightly toast on one side under the grill. Turn the slices over, sprinkle with the grated cheese and place back under the grill until melted
  • Serve the cassoulet and the bread slices immediately

1 pound dried medium-sized white beans (Great Northern)
2 lbs boneless country style pork ribs cut into 1 inch chunks
1 T vegetable oil
8 oz kielbasa, halved lengthwise & sliced thin
2 minced onions (about 2 c)
6 minced garlic cloves
1 T minced fresh thyme
1 T tomato paste
3 1/2 c. low-sodium chicken broth
1/2 c. brandy
1 can diced tomatoes, drained
2 lbs bone-in, skin-on chicken thighs
2 sliced high-quality white sandwich bread, torn into pieces
2 T unsalted butter, melted

Steps:

  • 1. Bring the beans and 8 cups water to a boil in a medium saucepan over medium-high heat. Reduce the heat to low and simmer, covered, until just beginning to soften, about 20 minutes. Drain and transfer to slow cooker. 2. Pat the pork dry with paper towels and season with salt and pepper. Heat the oil in a Dutch oven over medium-high heat until just smoking. Cook the pork until well browned, about 10 minutes; transfer to slow cooker. Brow kielbasa in the empty pan about 5 minutes; using slotted spoon, transfer to a paper towel-lined plate and refrigerate. Add the onions to the fat in the pan and cook until softened, 5 to 7 minutes. Stir in garlic, thyme, tomato paste and cook until fragrant, about 30 sec. Add broth, brandy and tomatoes, scraping up any browned bits. Bring to boil then transfer to slow cooker. 3. Season chicken with salt and pepper and wrap in foil. Place foil packet o top of the stew in the slow cooker. Cover and cook on low until the pork and chicken are tender, 6 to 7 hours. 4. Remove the chicken from the slow cooker and transfer to plate. When the chicken is cool enough to handle, pull the meat from the bones in large chunks, discarding the skin, bones and excess fat. Transfer 1 cup of the beans from the slow cooker to a bowl and mash until smooth. Stir the mashed beans, chicken meat and reserved kielbasa into the slow cooker. Cook, covered until heated through, about 10 minutes. Meanwhile, pulse the bread, butter and 1/4 teaspoon salt in a food processor until coarsely ground. Toast the crumbs in a large skillet over medium-high heat until golden, about 5 minutes. Season the cassoulet with salt and pepper to tae. Serve, passing bread crumbs at the table. Finished cassoulet an be refrigerated in an airtight container for up to 3 days. When ready to serve, bring to a simmer over medium heat, thinning the broth with water as necessary.

1 pound dry navy beans, soaked overnight
1 pound skinned, boned duck breast halves (or chicken thighs, or turkey), sliced into thin strips.
1 pound pork sausage links (about 4), sliced
1/2 pound bacon, diced
4 carrots, peeled and sliced (1 lb frozen)
1/4 t cloves, ground or ? whole cloves
1 whole onion, peeled
3 sprigs fresh parsley (1 T dried)
1 sprig fresh thyme (1t dried)
1 sprig fresh rosemary (1/2 t dried)
1 bay leaf
3 cloves garlic, minced
4 C chicken stock
3/4 C white wine
................
4 T tomato paste
?1 1/2 t salt
pepper

Steps:

  • 1. In a large skillet, brown the sliced sausage over medium heat. 2. Add bacon and brown 3. Add ground cloves or insert whole cloves into onion. Roll bacon up, and tie with a string. Tie together parsley, thyme, and rosemary. 4. In a large slow cooker, place soaked beans, sausage, bacon, onion studded with cloves, fresh herbs, bay leaf, carrots, minced garlic, and duck. Add stock to cover the other ingredients. Cook for 1 hour on HIGH. Reduce heat to LOW, and continue cooking for 8 hours. 5. Remove onion and large herbs. Stir in tomato paste, salt and pepper. Continue cooking for 1/2 hour. 6. Top with butter and breadcrumbs. Brown 15 min in 400 oven. Serve.
