1 (1-inch) cinnamon stick
2 teaspoons sweet paprika
1 1/2 teaspoons turmeric
1 teaspoon ground cumin
1/2 teaspoon hot smoked paprika

2 tablespoons canola oil
3 1/2 to 4 pounds bone-in, skin-on chicken thighs (about 8 thighs)

Steps:

  • Put the squash and dates into a 6- to 8-quart slow cooker. Season generously with salt and pepper. In a small bowl, combine the cinnamon stick, sweet paprika, turmeric, cumin, hot smoked paprika, ground ginger, cloves and cayenne and set aside.
  • Warm the oil in a large skillet over medium-high heat. Pat the chicken dry and season it generously with salt. Working in two batches, put the chicken in the skillet skin side down and cook without moving it until the skin is deeply golden, crisp, and releases fairly easily from the bottom of the pan, about 5 to 8 minutes per batch. (You need to brown only the skin side.) Transfer the chicken to the slow cooker, nestling the thighs skin side up and in one crowded layer on top of the squash.
  • Decrease the stovetop heat to medium. If there is a lot of rendered fat in the pan, pour off all but a thin layer to cover the entire bottom of the skillet. Add the onion, season with salt, and cook, stirring to scrape up the browned bits on the bottom of the pan, until the onion is softened, about 5 minutes. Add the ginger and garlic, and cook, stirring, until fragrant, about 1 minute. Add the reserved spices and stir well for about 30 seconds, until the mixture is a uniform brick red. Add the lemon juice, stir well to incorporate the browned bits, then scrape the mixture over the top of the chicken, making sure to include any spice-stained oil that remains.
  • Cook on low until the squash and chicken are very tender and the flavors are mellow, at least 4 hours and up to 6 hours. If it's more convenient, you can let the slow cooker switch to warm after 6 hours. The dish will hold on warm for another 2 hours before the chicken starts to dry out. Remove and discard the cinnamon stick. Add lemon juice and salt to taste and fold in the chopped parsley and scallions. Serve with couscous or pita, topped with yogurt and toasted almonds, if desired.

1 shallot diced
7 ounces (or 1/2 15 oz. container) low-fat ricotta cheese

1 egg
1 package of lasagna noodles (you'll only use about 6)
2 cups shredded mozzarella
1/2 cup frozen spinach, thawed, liquid squeezed out
1 Tablespoon olive oil
1 Teaspoon coriander (don't have it and don't want to buy it? the dish will be just as delicious without it)

Steps:

  • • Step 1: Preheat oven to 350 degrees. Add the butternut squash to a baking dish and drizzle with olive oil, salt, pepper, and coriander. Roast for 30 minutes, turning once. • Step 2: Heat 1/2 tbls olive oil in a skillet on the stove. Add the diced onion, shallot and garlic and saute until tender - approximately 5 minutes. • Step 3: Combine ricotta, egg, and sage in a bowl and whisk until smooth. • Step 4: Mash roasted squash until smooth. You can add a little chicken stock, milk, even water if it's all you have, to help smooth out the squash. Salt and pepper the mash to taste. • Step 5: Layer your lasagna. In the crockpot, spread out the other 1/2 Tablespoon olive oil and a thin layer of the squash. Break in half two lasagna noodles and place the 4 pieces on top of the squash to form an even layer. On top of the noodles, spread out 1/2 the ricotta mixture, and on top of the ricotta, layer 1/2 the onion mixture. Sprinkle 3/4 Cup mozzarella on top. Break two more noodles to form the next layer. Spread the rest of the squash on top of the noodles, and add the spinach. Add another 1/2 Cup mozzarella. Lay down another set of noodles. Top noodles with the last of the ricotta and the rest of the sauteed onions, shallot and garlic. 1 tablespoon olive oil
2 onions, chopped
2 teaspoons dried rosemary
½ teaspoon ground black pepper
5 cups vegetable stock
1 butternut squash - peeled, seeded, and cut into cubes
2 Granny Smith apples - peeled, cored, and chopped
salt to taste
1 cup shredded Swiss cheese
½ cup finely chopped walnuts

Steps:

  • Heat oil in a large skillet over medium heat. Cook and stir onions in hot oil until softened, 5 to 10 minutes. Stir in rosemary and black pepper; transfer mixture to a slow cooker. Pour vegetable stock, butternut squash, and apples into slow cooker.
  • Cook on Low for 8 hours (or cook on High for 4 hours).
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Puree soup using an immersion blender until smooth. Alternately, puree soup in batches in a food processor until smooth. Season with salt. Ladle soup into oven-safe bowls and sprinkle Swiss cheese and walnuts over the top.

1 pound cubed lamb stew meat
½ teaspoon salt, or more to taste
½ teaspoon ground black pepper
2 teaspoons butter
1 medium sweet onion, diced
1 medium shallot, diced
4 cloves garlic, minced
2 cups diced butternut squash
2 cups chopped white mushrooms
1 cup diced sweet potato
1 cup diced carrots
1 cup diced celery
2 cups beef bone broth
1 cup Marsala wine
4 sprigs fresh rosemary
4 sprigs fresh thyme, or to taste

Steps:

  • Season lamb with 1/2 teaspoon salt and pepper.
  • Melt butter in a large skillet over medium heat. Add onion, shallot, and a pinch of salt; saute until translucent, 3 to 5 minutes. Add lamb and brown for 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Transfer to a slow cooker.
  • Add butternut squash, mushrooms, sweet potato, carrots, and celery; mix ingredients. Add bone broth and Marsala wine; it won't look like enough liquid but don't worry. Place rosemary and thyme on top.
  • Cover and cook on High for 4 hours. Lift fresh herbs and stir the stew. Replace herbs, cover, and cook on Low until vegetables and lamb are tender, about 2 more hours.
  • Remove herbs before serving.

¼ cup nutritional yeast
1 clove garlic

1 tablespoon salt
2 cups vegetable stock
1 lb elbow macaroni, cooked according to package instructions
1 tablespoon fresh parlsey, for garnish

Steps:

  • Cut off both ends of the butternut squash and poke all over with a fork. Microwave on high for 3-4 minutes.
  • Peel the skin off of the squash. It should come right off! Slice the squash in half lengthwise, scoop out seeds, and cut into 1-inch (2-cm) cubes. You should have about 5 cups (1 kg).
  • In a slow cooker, combine the squash, onion, cashews, nutritional yeast, garlic, rosemary, nutmeg, olive oil, mustard, salt, and vegetable stock. Stir to combine.
  • Cover and cook on high for 4 hours or low for 8 hours, until the vegetables are soft enough to be easily mashed with a fork.
  • Transfer the squash mixture to a blender, or use an immersion blender, and puree for 5 minutes, until there are no chunks and the sauce develops a creamy texture.

1 medium yellow onion (diced)
4 cups low-sodium vegetable broth
1/2 teaspoon kosher salt + more to taste
1 14-ounce can full-fat coconut milk
3 tablespoons Thai red curry paste (more or less to taste)
Additional drizzle of coconut milk
Fresh cilantro leaves
Thinly sliced hot red pepper
Lime wedges for squeezing over the top
4- quart or larger slow cooker

Steps:

  • Place butternut squash, onion, broth, and 1/2 teaspoon salt in your slow cooker. Cook on low for 8-10 hours, or on high for 4-6 hours.
  • Remove the lid and let the soup cool a bit before pureeing. When cool enough to handle, carefully puree the entire batch right in the slow cooker with an immersion blender. You can also use a blender, working in batches, then return the soup to the slow cooker.
