SLOW COOKER BEEF SHANKS WITH MUSHROOMS AND POTATOES
I found this recipe on another website and altered it to my liking. The beef falls off the bone and its juices are absorbed into the potatoes. This is one of my favorite crock pot dishes.

Steps:
- Cut up the potatoes, mushrooms an onions. Place them in the slow cooker with beef shanks on top.
- Combine the rest of the ingredients in a bowl. Mix and pour over the beef.
- Cook on High for 2 hours and then low for 6-8 hours.

Steps:
- Combine 1/4 cup flour, oregano, salt, and pepper in a bowl. Add beef and toss to coat.
- Heat olive oil in a cast iron skillet over medium-high heat heat. Brown beef in the hot oil on all sides, 5 to 7 minutes. Transfer meat to the bottom of a slow cooker. Do not clean the skillet.
- Pour 1/2 cup red wine into the skillet and add pearl onions and mushrooms. Saute over medium-high heat until softened, 5 to 7 minutes. Be sure to scrape the meat bits into the mixture with a wooden spoon. Reduce heat and simmer for 20 minutes.
- Stir potatoes, carrots, and celery into the slow cooker. Add beef broth and remaining wine. Season with salt and pepper.
- Cover and cook until beef is no longer pink in the center and vegetables are tender, on Low, 6 to 8 hours, or High, 4 to 6 hours. Near the end of cooking time, whisk boiling water, remaining flour, and bouillon together; stir into the pot and allow sauce to thicken.

- Combine the stew meat, mushroom soup, mushrooms with their liquid, and onion soup mix in the crock of a slow cooker. Pour in red wine, if desired. Season with pepper.
- Cook on Low for 8 to 10 hours, or on High for 4 to 6 hours.
- In the last half hour of cooking time, bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.

- Mash garlic to a paste and rub evenly over entire roast.
- Place roast in a slow cooker, fat side up.
- Pour the rest of above ingredients in a bowl and blend well.
- Pour above mixture over roast.
- Cover and cook on low 7-10 Hours.
- If meat is not too lean it will add moisture to soup mixture as it cooks. When roast is finished, remove from slow cooker and pour the juices into a seperate container or measuring cup. Let the fat rise to top. Drain off fat and pour juices into a saucepan. For thicker "Gravy", simply Pour juices into large saucepan, mix 2-3 tablespoons of flour(Depending on how much liquid you have to work with) with 2-3 tablespoons of cold water until it has no lumps. Pour flour mixture into meat juices in saucepan and bring to a boil, (whisking constantly) reduce heat and whisk continuously until mixture thickens. About 1 minute. Remove from heat and serve as a gravy or transfer meat to a serving platter, slice meat thin and pour over beef before serving.

SLOW COOKER BEEF & MUSHROOMS
I found this online at www.sparkpeople.com. I made it and was blown away by how yummy it was. I did not add white rice to the recipe, but you can easily get away with many many cups of cooked rice with how much sauce this makes. The onion soup packet is just a reg. sized one. Some say they are 1oz others say 1 1/4 oz. I'm sure either will work. UPDATE: I have since made this with regular cream of mushroom soup and it was wicked salty and tasted completely different for me. I recommend only using the low-fat/fat free kind.

- Add stew meat to crock pot (you can brown it first in a pot if you want, but I had no issues doing it right in the crock pot).
- Place sliced mushrooms on top.
- Combine soup, water and dry onion soup mix. Stir till well blended. Pour over mushrooms and beef.
- Cook on low 6-8hrs or high for 3-4 hours. I personally cooked it on high for 1 hour, then low for 7 hours and it was amazing.
- Pour over cooked rice (not included in recipe) and enjoy!
- NOTE: The recipe claims it serves 4, but I got at least 6 servings out of it with rice if not more.
