SLOW COOKER BEEF NECK BONES AND GRAVY
Beef neck bones are a Southern staple recipe. I couldn't find a recipe online, so I created this one on my own by pulling from some of my favorite oxtail, roast, and pork neck bone recipes. Turned out yummy so I thought I'd share. Serve over steamed rice and peas or mashed potatoes.

Steps:
- Preheat slow cooker to High.
- Clean neck bones and remove any excess fat. Season bones with cumin, allspice, black pepper, red pepper flakes, and salt; dust with 1/4 cup flour.
- Heat olive oil in a large skillet over medium heat; cook and stir garlic until fragrant, 1 to 2 minutes. Increase heat to medium-high and add seasoned neck bones; cook until bones begin to brown, about 1 minute per side.
- Transfer neck bones and drippings to the preheated slow cooker; add beef broth and onion.
- Cook on High for 1 hour. Reduce heat to Low and cook 4 to 6 hours.
- Transfer neck bones to a dish. Sprinkle remaining flour into the slow cooker and stir well. Return neck bones to slow cooker. Let stand until gravy thickens, 15 to 20 minutes.

Horseradish comes out of the jar and into the recipe for this long-simmering roast, with plenty of potatoes to soak up delicious juices and flavor.

Steps:
- With tip of knife, make cuts in top of beef roast; insert garlic slivers. Spread beef with 1 tablespoon of the horseradish. Sprinkle with 1/2 teaspoon of the gravy mix. Place beef in 3 1/2 or 4-quart slow cooker. Arrange carrots around beef. Top with potatoes and celery.
- In small bowl, combine 1/2 cup water, remaining gravy mix, salt and pepper; mix until well blended. Pour over vegetables.
- Cover; cook on Low setting for 8 to 9 hours.
- Just before serving, remove beef and vegetables from slow cooker; place on serving platter and cover to keep warm. In medium saucepan, combine cornstarch, 3 tablespoons water and remaining 2 tablespoons horseradish; blend well. Pour juices from slow cooker into cornstarch mixture; mix well. Bring to a boil over medium-high heat, stirring constantly. Cut beef into slices. Serve beef with vegetables and gravy.

- Cut steaks in 6-8 serving size pieces, season with seasoned salt, and pepper, and brown in a non-stick skillet.

SLOW COOKER BEEF TIPS AND GRAVY

It is perfect anytime, but we especially love it when the weather starts to change and we start craving comfort food that makes you feel all warm and cozy like snuggling up under a fluffy blanket next to a fire.

- Season beef tips with 1 teaspoon kosher salt and 1/2 teaspoon freshly cracked black pepper. Melt 1 tablespoon butter in a skillet over mid-high heat and add the seasoned beef tips to the hot skillet. Allow the beef to sear about 4 minutes on each side. You want a nice caramelized coating on the beef. Place seared beef tips in the slow cooker and top with 1 cup of sliced yellow onions and about 5-6 whole garlic cloves (peeled), along with a sprig of fresh thyme. Reduce the heat of the skillet to medium and melt 1/2 tablespoon of butter. Add the sliced mushrooms to the skillet with a pinch of salt and stir to coat in the butter. Saute for about 5 minutes until the mushrooms soften and start to release their juices (sweat). Stir occasionally scraping the brown bits from the bottom of the pan. Add 1 1/2 cups water and 1/2 tablepoons beef base to the skillet and stir to combine. Add this mixture to the slow cooker with the beef tips. Cover the slow cooker and cook on low for about 5 hours or on high for about 2 1/2 hours until the beef is fork tender. You want the beef to melt in your mouth, so cook longer if needed. Once the beef is tender, combine 1 tablespoon red wine with 1 tablespoon cornstarch and add to the slow cooker. Turn heat up to high and cook about 20 minutes until the gravy is thickened. Alternately, you can add the gravy to a skillet over medium heat and add the cornstarch/red wine mixture to the gravy and heat until thickened which will only take a minute or two. Serve over mashed potatoes and enjoy!

- In bowl, mix flour, pepper, and parsley. (You can use any seasonings you wish to make a seasoned flour.).
