2 cups heavy cream
6 ounces bittersweet chocolate, chopped
6 ounces semisweet chocolate, chopped
3 tablespoons amaretto
1 teaspoon vanilla
Dipping suggestions: cubed angel food cake (store-bought is fine), pineapple chunks, dried apricots, green grapes, blueberries and blackberries

Steps:

  • Heat the cream in a saucepan over low to medium heat until warmed through but not bubbling; add the bittersweet chocolate, semisweet chocolate, amaretto and vanilla and stir until the chocolate is melted. Pour the mixture into a fondue pot.
  • Arrange your dipping ingredients on a platter and serve!

You don't need a fondue pot for this elegant dessert, which requires only four ingredients and a warm-up in your slow cooker.

1 bar (8 oz) dark baking chocolate, finely chopped
1/2 cup whipping cream
1/2 cup butter
1 teaspoon liqueur (coffee-flavored, amaretto or Irish cream)
Assorted fresh fruit, marshmallows or cookies

Steps:

  • Pour 2 cups water into 6-quart slow cooker. Divide chocolate, cream, butter and liqueur evenly into 2 ungreased 1-cup ramekins. Place ramekins in slow cooker.
  • Cover; cook on Low heat setting 45 to 60 minutes or until chocolate and butter are melted.
  • Remove ramekins from slow cooker. Stir fondue well. Serve with fruit.

12 ounces semisweet chocolate, coarsely chopped
4 ounces bittersweet chocolate, coarsely chopped
1 cup heavy cream
1/2 cup milk
1 teaspoon vanilla extract
Pinch kosher salt
2 tablespoons bourbon or orange, coffee or hazelnut liqueur, optional

Steps:

  • Put the semisweet chocolate, bittersweet chocolate, cream, milk, vanilla and salt in a 6-cup heatproof glass bowl that will fit completely inside a 3- to 4-quart slow cooker. Cover and cook on low for 45 minutes.
  • Uncover and stir the chocolate mixture until smooth. Stir in the bourbon or liqueur if using. Continue to cook, covered, until the chocolate is completely melted and warm, 15 to 30 minutes. Whisk the mixture until smooth. Switch the slow cooker to the warm setting and either spoon the chocolate mixture into small serving bowls or serve it right out of the slow cooker with assorted dippers on the side.

7 ounces hershey milk chocolate
cut-up fruit
1/3-1/2 cup half-and-half (light cream and soy milk work well, too)

Steps:

  • Break the chocolate bar into chunks-- the smaller the chunks, the smoother, faster and easier the chocolate will melt.
  • Heat the half-and-half in a non-stick saucepan on a low flame while adding the chocolate, stirring constantly until chocolate is melted to the consistency you desire.
  • Use more half-and-half for thinner fondu, less for thicker.
  • Be careful not to over-cook because the chocolate will form a film which may taste bitter if reblended into mixture.
  • Serve in a chocolate fondu pot (reasonably priced at Target. com) or in a ceramic bowl (to hold the heat longer).
  • The fondu pot is better because it allows you to keep chocolate warm with a tea light.
  • Dip fruit into chocolate and enjoy!
  • Notes: If you do not have fondu forks, you can use bamboo skewers.
  • I cut them in half for ease of use.
  • Arrange and serve the fruit on a pretty platter.
  • This makes the experience that much more delightful.
  • Dried fruits, nuts and popcorn are delicious dippers, too!
  • Chocolate fondue goes very well with dry champagne, full-bodied red wines and crisp, dry white wines.

Steps:

  • Special equipment: a 6-quart slow cooker
  • Heat a 6-quart slow cooker with insert on high until hot.
  • Combine the chocolate, cream, milk, vanilla and salt in the hot insert. Cover and cook on high for 30 minutes, then whisk the ingredients together and set on low. Add the bourbon or liqueur if using.
  • Serve with fruit, marshmallows or pound cake.
