6 pork belly pork spareribs
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
2 tablespoons sweet chili sauce
3 tablespoons soy sauce
3 tablespoons crushed garlic
2 tablespoons barbecue sauce
3 tablespoons honey
2 tablespoons white vinegar
1 tablespoon white sugar

Steps:

  • Preheat oven (gas) to 180°C.
  • In a large saucepan, bring pork belly spare ribs to the boil, turn down and simmer for around 20 minutes.
  • While simmering ribs, combine all sauces together in a large mixing bowl.
  • Remove ribs from saucepan and place on chopping board, cut into 3 pieces, and toss with the sauce mixture.
  • Arrange ribs on baking tray and place into preheated oven, turning regularly and basting with sauce mixture.
  • Bake approx 45 minutes.
  • Eat them on their own as a snack, or accompany with a tossed green salad.

1 rack spare ribs
spring onion, to garnish
red chili, to garnish
rice, to serve
1 tablespoon salt
1 tablespoon pepper
1 tablespoon chinese 5 spice
1 tablespoon garlic, minced
1 tablespoon ginger, minced
1 onion, chopped
3 tablespoons hoisin sauce
1 cup chicken broth
leftover slow cooker juice
¼ cup water
2 teaspoons corn flour
2 tablespoons brown sugar
2 tablespoons sesame seeds

Steps:

  • Season the spare ribs with the salt, pepper, and 5 spice.
  • Place in the slow cooker, along with the garlic, ginger, onion, hoisin sauce, and chicken broth. Mix with your hands to combine.
  • Cook on high for 3 hours, or low for 6 hours.
  • Preheat the oven to 325°F (170°C).
  • Once the ribs are cooked, carefully remove them and place onto a tin foil-lined baking tray.
  • To prepare the BBQ sauce, take the remaining cooking juices from the slow cooker and pour into a frying pan set over a medium heat.
  • In a small bowl combine the water and corn flour, stir into the cooking juices. Add remaining BBQ sauce ingredients and reduce until a sticky BBQ sauce is achieved.
  • Brush onto the ribs on both sides and bake for 15 minutes.
  • Chop up the ribs and garnish with spring onion and red chili.
  • Serve with rice.

¼ cup kosher salt
¼ cup packed brown sugar
¼ cup paprika
3 tablespoons ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper
½ teaspoon celery seed
16 pounds pork spareribs
1 apple, quartered
1 orange, cut into wedges
1 lemon, cut into wedges
1 lime, cut into wedges
1 onion, cut into wedges
3 cups red wine
3 cups water
¼ cup soy sauce
¼ cup lime juice
½ cup ketchup

Steps:

  • Combine the salt, brown sugar, paprika, black pepper, garlic powder, onion powder, cayenne pepper, and celery seed in a bowl; set aside. Remove all heavy fat from the ribs, then remove and discard the membrane covering the rib side. Cut the slabs into 3 to 4 bone portions, cutting evenly between the ribs to leave some meat on each portion.
  • Rub the spice mixture into the rib portions front and back until all of the spice mixture has been used. Place the ribs into a resealable plastic bag, and refrigerate 4 hours to overnight. Letting the ribs sit overnight will give them the best flavor.
  • When ready to cook, fill the water pan of your smoker with the apple, orange, lemon, lime, onion, red wine, and water. If you do not have a water pan, place the ingredients into a metal bowl, and set the bowl on the drip tray, above the heat source. Smoke with the wood chips of your choice at 250 to 300 degrees F (120 to 150 degrees C) until the ribs are no longer pink, and the meat easily pulls from the bone, 4 to 6 hours or more depending on the smoker and temperature. Change the wood chips according to manufacturer's directions.
  • Preheat an outdoor grill for medium-low heat, and lightly oil grate. Stir together the soy sauce, lime juice, and ketchup in a bowl to make the barbeque sauce; set aside.
  • After the ribs are fully cooked, remove them from the smoker, and brush them with the barbeque sauce. Cook on the preheated grill, brushing occasionally with the sauce, until the sauce has become sticky and infused into the ribs, 15 to 20 minutes.

2 racks pork ribs
Kosher salt and freshly ground black pepper

One 13-ounce jar apricot preserves
1 cup ketchup
1/4 cup yellow mustard
1/4 cup soy sauce
6 cloves garlic, finely chopped
2 canned chipotle peppers in adobo, finely chopped
1-inch piece fresh ginger, finely chopped
Hot sauce, to taste
3 tablespoons cornstarch

Steps:

  • Cut the racks into 2-rib pieces, season with salt and pepper and put into a slow cooker.
  • In a bowl, mix together the preserves, ketchup, mustard, soy sauce, garlic, chipotles, ginger and hot sauce. Pour the mixture over the ribs and cover. Cook on low for 6 to 8 hours or high for 3 to 4 hours.
  • When the ribs are cooked, preheat the oven to 375 degrees F. Line a baking sheet with foil.
  • Carefully remove the ribs from the slow cooker and place them in a single layer on the prepared baking sheet. Skim the fat from the juices and transfer the juices to a pan. Place the pan on medium-high heat and bring to a simmer.
  • Mix the cornstarch and 3 tablespoons water in a small bowl to create a slurry. Stir the slurry into the juices in the pan and cook until the desired thickness.
  • Brush the ribs with the sauce and bake, brushing with more sauce every 10 to 15 minutes, until the ribs are glazed and sticky, about 45 minutes. Serve with extra sauce.

1 ½kg meaty pork ribs
1 bottle barbecue sauce (350g approx)
2 pork stock cubes
2 bay leaves
1 tsp coriander seed
1 tsp mustard seed
1 tsp peppercorn

Steps:

  • Put 4 tbsp of barbecue sauce along with the rest of the ingredients into your slow cooker. Top up with enough water to cover (roughly 1.5l). Slow cook on Low for 8 - 9 hours until very tender but not completely falling off the bone.
  • Heat the oven to 220C/ 200C fan/ gas mark 7. Remove the ribs from the slow cooker using a slotted spoon or tongs. Handle them carefully as the meat will be very tender and may start to fall off. Baste with the remaining barbecue sauce and lay on a foil-lined oven tray. Cook for 20 - 30 mins until starting to crisp on outside. Alternatively, cook on the barbecue, turning from time to time until piping hot throughout.
