1 tablespoon canola oil
1 beef flank steak (1-1/2 pounds)
1 large onion, sliced
1/3 cup water
1 can (4 ounces) chopped green chilies
2 tablespoons cider vinegar
2 to 3 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet, heat oil over medium-high heat; brown steak on both sides. Transfer to a 3-qt. slow cooker., Add onion to same skillet; cook and stir 1-2 minutes or until crisp-tender. Add water to pan; cook 30 seconds, stirring to loosen browned bits from pan. Stir in remaining ingredients; return to a boil. Pour over steak., Cook, covered, on low 6-8 hours or until meat is tender. Slice steak across the grain; serve with onion mixture.

1 beef flank steak (2 pounds), halved crosswise
1 medium green pepper, cut into strips
1 medium sweet red pepper, cut into strips
1 medium onion, halved and sliced
1 envelope fajita seasoning mix
1/2 cup beer or reduced-sodium beef broth
8 flour tortillas (8 inches), warmed
1 cup pico de gallo
Chopped fresh cilantro

Steps:

  • Place the first 5 ingredients in a 5-qt. slow cooker. Pour beer over top. Cook, covered, on low until meat is tender, 6-8 hours., Remove beef from slow cooker. Strain vegetable mixture; return vegetables to slow cooker. (Discard cooking juices or save for another use.) Shred beef with 2 forks; add to vegetables and heat through. 1 (1 1/4 pound) flank steak, cut into 8 pieces
2 tablespoons avocado oil
1 (8 ounce) package cremini mushrooms, roughly chopped
1 onion, finely chopped
2 large cloves garlic, grated
1 teaspoon dried thyme
¼ cup dry red wine
1 ½ cups beef broth
1 tablespoon Worcestershire sauce
¾ teaspoon salt, or to taste
freshly ground black pepper to taste
¼ cup water
3 tablespoons all-purpose flour

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Saute steak, working in batches, until brown, 3 to 5 minutes per side. Set aside on a plate.
  • Heat avocado oil in the pot. Saute mushrooms and onion until onion is translucent, about 5 minutes. Add garlic and thyme; saute until fragrant, about 1 minute. Pour in wine; cook and stir until almost evaporated, about 2 minutes. Add broth, Worcestershire sauce, salt, and pepper. Bring to a simmer.
  • Add the beef to the broth mixture and turn to coat. Select the Meat option according to manufacturer's instructions. Close and lock the lid; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, at least 20 minutes. Remove the beef and set aside. Stir water and flour together to make a slurry. Select the Saute option and add the slurry slowly. Cook until liquid thickens, 3 to 5 minutes. Pull the beef apart using 2 forks. Stir beef back into the liquid.

4 tablespoons vegetable oil
2 garlic cloves, minced
2 limes, juice of, only
1 teaspoon salt
fresh coarse ground black pepper
2 white onions, finely sliced
2 beef rib eye steaks
4 flour tortillas
8 tablespoons enchilada sauce
9 ounces sharp cheddar cheese, grated
guacamole, to serve
green chili, sliced, to garnish

Steps:

  • Mix together the vegetable oil, garlic, lime juice, salt, black pepper and white onion.
  • Coat the meat with the onion mixture, cover and marinate in the refrigerator for 24 hours.
  • Preheat the oven to 350°F
  • Spread the tortillas with enchilada sauce (reserving a little), fill with cheddar cheese (reserving a little) and roll up over the cheese.
  • Place the filled tortillas in an ovenproof dish. Spread with the remaining enchilada sauce and sprinkle over the reserved Cheddar.
  • Bake in the oven for 5-10 minutes until the cheese has melted.
  • Meanwhile, preheat a grill or griddle pan until very hot. Cook the steak on the grill or griddle until cooked to taste.
  • Serve the freshly grilled steak with the tortillas and guacamole, garnishing with the green chili.
