My version of sloppy joes comes from an old family recipe. Make these sandwiches even more German by stacking everything on a pretzel bun. -Jason Koren, Milwaukee, Wisconsin

Steps:
- Preheat oven to 350°. In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain. Add sauerkraut, peppers and onion; cook and stir 8-10 minutes longer or until vegetables are tender., Spoon meat mixture onto bun bottoms; place cheese over meat. Replace tops. Place on a baking sheet. Bake 4-6 minutes or until cheese is melted.

This is the grown up version of sloppy joes. Good for you and without all the preservatives like the canned stuff. The kids never knew the difference!

Steps:
- Coat a large frying pan with oil and set over medium-high heat.
- When hot, add onion and green pepper, saute until onions starts to soften about 3 minutes.
- Add ground beef, crumble while browning meat.
- Add garlic, Worcestershire, basil, thyme, salt and pepper.
- Using a fork or wooden spoon, stir often to keep meat crumbling until no pink remains, 3 to 5 minutes.
- Mix in pasta and barbecue sauces. Stirring the mixture often until hot, about 2 more minutes.
- Using wooden spoon, spoon over toasted hamburger buns or bread.

- CRUST: In a large mixing bowl, blend all the ingredients, cutting in the butter and working the mixture with your hands until it is well mixed and workable.
- Divide the dough into 2 equal portions.
- Use one half to line the bottom of a greased 9-inch springform pan, the other half to line the sides of the pan.
- Either roll out the dough or press it in with your fingers.
- Chill before filling.
- CHEESECAKE: Preheat the oven to 375 degrees F.
- Press the cottage cheese through a sieve.
- Combine the cornstarch and the baking soda and set aside.
- In a large mixing bowl, combine the cottage cheese with the sugar, eggs, lemon rind and vanilla.
- Beat until very smooth.
- Add the dry mixture to the cheese and blend well.
- Stir in the sour cream and raisins.
- Pour the cheese mixture into the prepared crust and bake for one hour, or until done.
- The center will remain soft.
- Turn off the oven and prop the door open.
- Allow the cake to cool to room temperature.
- Serve at room temperature as well.

- Heal the oil in a skillet over medium heat; add in the onion and bell pepper; cover, and cook about 5 minutes, until softened.
- Add in chili powder, stirring to coat.
- Transfer mixture to a slow cooker; add in the lentils, tomatoes, water, tamari, mustard, brown sugar, salt, and pepper; stir to combine.
- Cover and cook on LOW for 8 hours.
- Serve sloppy-joe style on warmed buns.

OLD WORLD BUTTER HORNS
Light and flaky filled cookie. One of my mother's dear friends, a woman of German heritage, shared this recipe with her more than 40 years ago. At the time, it had been in her family for more than 100 years! It has always been my favorite cookie for special occasions and still is. We use two variations for the filling: the traditional orange date nut filling provided here or, mincemeat, a family favorite, during the holiday season. The filled cookies freeze well and can be baked off straight from the freezer. For best results, be certain that the dough is thoroughly chilled before rolling out and that the filling has cooled completely before use.

- Add salt to flour and sift if needed.
- Use a food processor to quickly cut chilled butter and cottage cheese into flour as with making any pastry dough (process until dough forms ball). Two dinner knives will also work well, if a food processor is not available.
- Divide dough into 4 equal parts, form into balls, wrap in plastic wrap and chill overnight or for at least 4 hours.
- Remove chilled dough balls from the refrigerator one at a time and sprinkle with flour.
- Roll each ball into a 8-10 inch circle on a well floured surface.
- Cut circles into 8 wedges (pie slice style).
- Place 1 teaspoons of cooled filling near edge of wide end of wedge, roll up towards small end and form each cookie into a crescent (horn).
- Place folded side down on ungreased cookie sheet.
- Bake in preheated oven (400F) for 15-20 minutes.
- Place on rack to cool and sprinkle immediately with powdered sugar.
- FILLING.
- Place all filling ingredients into heavy saucepan (cast iron preferred).
- While stirring continuously, cook until it forms a thick solid sticky mass.
- Set aside to cool thoroughly before use.
