My family loves these sloppy joes. I would make them back when I worked in a school lunchroom and heard nothing but compliments.

7 pounds lean ground beef (90% lean)
1-1/2 cups chopped onion
1-1/2 cups chopped celery
1/2 cup packed brown sugar
2 tablespoons prepared mustard
6 cups tomato sauce
1/2 cup white vinegar
2 to 3 teaspoons minced garlic
Salt and pepper to taste
1-1/2 cups shredded sharp cheddar cheese
Hamburger buns

Steps:

  • In a several large skillets, cook the beef, onion and celery until beef is no longer pink; drain. Add the brown sugar, tomato sauce, vinegar, garlic, salt and pepper. Stir in cheese; cook until cheese is melted. Serve on buns.

1 package (32 ounces) frozen shredded hash brown potatoes, thawed
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 egg, lightly beaten
1 teaspoon salt
1/2 teaspoon pepper
2 pounds ground beef
2 tablespoons finely chopped onion
1 can (15-1/2 ounces) sloppy joe sauce

Steps:

  • In a large bowl, combine the potatoes, soup, egg, salt and pepper. Spread into a lightly greased 5-qt. slow cooker. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in sloppy joe sauce. Spoon over potato mixture. , Cover and cook on low for 4 to 4-1/2 hours or until a thermometer reads 160°.

1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 1/4 pounds ground beef sirloin
1/4 cup brown sugar
2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
1 medium onion, chopped
1 small red bell pepper, chopped
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
2 tablespoons tomato paste
4 crusty rolls, split, toasted, and lightly buttered
Garnish: sliced ripe tomatoes, pickles, Deviled Potato Salad, recipe follows
5 all-purpose potatoes, peeled and diced
Coarse salt
1/4 onion
3 tablespoons prepared yellow mustard
1/2 cup mayonnaise, eyeball the amount
1 teaspoon sweet paprika
1 teaspoon hot cayenne pepper sauce (recommended: Tabasco or Frank's Red Hot)
Salt and freshly ground black pepper
2 scallions, thinly sliced, for garnish

Steps:

  • Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Deviled Potato Salad. Have plenty of napkins on hand!
  • Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes. Drain cooked potatoes and return to the warm pot to dry them out. Let the potatoes stand 2 minutes, then spread potatoes out on to a cookie sheet to quick-cool them.
  • In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine. Add potatoes to the bowl and stir to evenly distribute dressing. Season potato salad with salt and pepper and taste to adjust your seasonings. Top servings of salad with chopped scallions.

1 pound lean ground beef (90% lean)
1/2 cup chopped sweet red pepper
1/3 cup chopped onion
1 celery rib, chopped
2 garlic cloves, minced
1 chipotle pepper in adobo sauce, chopped
1 teaspoon chili powder
1 teaspoon ground cumin
1-1/4 cups salsa
2 tablespoons chili sauce
2/3 cup shredded Mexican cheese blend
Sour cream

Steps:

  • Prepare and bake cornbread according to package directions., Meanwhile, in a large skillet, cook the beef, red pepper, onion and celery over medium heat until meat is no longer pink; drain. Add the garlic, chipotle pepper, chili powder and cumin; cook 1 minute longer., Stir in salsa and chili sauce; simmer for 3-5 minutes or until slightly thickened., Cut cornbread into nine squares; save four pieces for another use. Top each square of remaining cornbread with 2/3 cup beef mixture and 2 tablespoons cheese. Dollop with sour cream.

1 lb ground beef
1 teaspoon salt
½ teaspoon pepper
½ white onion, diced
1 clove garlic, minced
¾ cup ketchup
2 teaspoons mustard
1 teaspoon worcestershire sauce
2 teaspoons brown sugar
1 pack dinner roll
½ cup shredded cheddar cheese
2 tablespoons butter, melted
sesame seed

Steps:

  • Preheat oven to 350°F (180°C).
  • In a saucepan over medium heat, add the ground beef and sprinkle with salt and pepper.
  • Using a spoon, break up the meat and stir until browned.
  • Add the onion and garlic and continue to cook until the onions are translucent.
  • Add the ketchup, mustard, Worcestershire, and brown sugar.
  • Stir until the meat is fully cooked and sauce is evenly combined. Set aside.
  • Cut the dinner rolls in half and place the bottom half in a baking pan.
  • Top with meat and sprinkle with cheese. Place the top of the rolls back on top.
  • Brush the rolls with melted butter and sprinkle with sesame seeds.
  • Bake for 10 minutes, or until rolls are toasted and cheese is melted.
  • Cut into individual sliders.
  • Enjoy!
