SLOPPY JOES PLUS LOW SALT SEASONING MIX
From "Make-a-Mix" by Karine Eliason. I purposefully omitted the salt for a healthier version. Could not find green pepper flakes, so I used Spike seasoning as an emergency substitute.

Steps:
- Seasoning Mix: Combine all ingredients in a coffee mill or mini chopper and blend well.
- Store in a cool dry place, covered. Use up within 6 months.
- Yield: Enough for 6 Sloppy Joes.
- Sloppy Joes: Heat up the oil in a saute pan on medium-high heat and brown the meat until no longer pink. Pour off grease.
- Add the Sloppy Joe's seasoning mix, can of tomato sauce, and 1/2 cup water. Bring to boil, then reduce heat, cover and simmer 15-20 minutes. Season to taste with salt if desired.
- Serve hot over rolls. The buns can be toasted or untoasted, your choice.
- Eat but remember to chew!
LOW SALT / SODIUM LOW FAT TURKEY SLOPPY JOES

Steps:
- Remove seeds from jalapeno peppers and dice.
- Dice onion and green pepper.
- Sauté onion, jalapenos and green pepper in EVO then set aside.
- Cook ground turkey crumbling into little pieces.
- Drain and return to pan.
- Over med-high heat add all of the ingredients into the pan.
- Stir mixture for 3-5 minute.
- Lower heat to low and simmer for 5-10 min to fuse flavors.
- Serve on either crusty rolls or hamburger buns.
- Leave out the jalapeno if you don't like it hot. If you do throw in 2 more.
- Additions: Try adding diced tomatoes or olives and top with cheese if you so desire.
NO-SALT SLOPPY JOES
As far as I can tell, this came from the University of Nebraska, Lincoln. By making your own seasoning mix, you control the sodium, along with the rest(which chili powder,ketchup, etc. you prefer). By using salt-free ketchup, you can eliminate the salt and still serve a tasty Sloppy Joe.

- .While browning the ground beef, mix the dry ingredients. After beef is browned, drain off drippings, add seasoning mix and liquid ingredients. Simmer for 10 minutes, stirring often, til desired thickness, if necessary, add water.
- 1 8 oz can tomato sauce +1 to 2 tablespoons vinegar + 1 teaspoon sugar can be substituted for the salt-free ketchup.
