- Pierce potatoes with fork; place in single layer on microwaveable plate. Microwave on HIGH 8 to 10 min. or until tender, turning potatoes after 5 min.
- Meanwhile, cook turkey with peppers and 1/4 cup onions in large nonstick skillet on medium heat until turkey is done, stirring occasionally. Stir in barbecue sauce; cook 5 min. or until heated through, stirring frequently.
- Cut each potato lengthwise in half; fluff insides with fork.
- Top with turkey mixture, cheese and remaining onions.

SLOPPY JOE BOATS
This is an unusual way of eating a Sloppy Joe, but my son gave me the idea...he just loves my Sloppy Joe's so much, that he asked me to make one bigger, like a hoagie...lol... I asked if he wanted anything special on it...he asked for cheese... I wasn't going to post this, but figured what the heck...this beats individual...

- 1. Have your Sloppy Joe mix ready. Slice your buns not the whole way through. But, enough to where it will stay open to be toasted. You could toast under the broiler, or by using butter, and brown in a skillet. That is what I do. I then add 2 slices of cheese, broil till melted. This serves as a liner so the buns does not get soggy. Add about a cup of hot Sloppy Joe, and serve with fork and knife... I served with just pickles and chips.
