Maple-Glazed Carrots and Apples image

You need only five ingredients to create this yummy, cardamom-scented side dish.

2 medium carrots, sliced (1 cup)
1 tablespoon butter or margarine
1 medium apple, cut into thin wedges
2 tablespoons maple-flavored syrup
1/4 teaspoon ground cardamom

Steps:

  • Heat 1 inch water (salted if desired) to boiling in 1-quart saucepan. Add carrots. Cover and heat to boiling; reduce heat. Simmer 12 to 15 minutes or until tender; drain.
  • Heat butter in 6-inch skillet over medium heat until hot. Cook apple wedges in butter 2 minutes, stirring occasionally. Stir in syrup and cardamom. Cook 3 to 5 minutes, stirring frequently, until apples are evenly glazed. Stir into carrots.

2 tablespoons sesame seeds
2 cups shredded carrots
1 Granny Smith apple, cored and shredded
½ cup chopped fresh parsley
¼ cup lemon juice
2 tablespoons apple cider vinegar
1 tablespoon white sugar
1 clove garlic, minced
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons safflower oil

Steps:

  • Heat a skillet over medium heat; pour sesame seeds into the hot skillet. Cook, stirring often, until sesame seeds are lightly browned and fragrant, 3 to 5 minutes. Remove from heat.
  • Mix carrots, apple, toasted sesame seeds, and parsley together in a bowl.
  • Whisk lemon juice, vinegar, sugar, garlic, salt, and pepper together in a separate bowl; slowly drizzle safflower oil into lemon juice mixture while continuing to whisk. Pour dressing over carrot mixture; toss to coat.

6 -8 large carrots, sliced
4 large apples, peeled, cored and sliced
5 tablespoons flour
1 -2 tablespoon brown sugar, packed (can use more for a sweeter taste)
1/2 teaspoon nutmeg
2 tablespoons butter or 2 tablespoons margarine
1/2 cup orange juice
1/2 teaspoon salt (optional)

Steps:

  • Set oven to 350 degrees.
  • Grease a larger-size casserole dish (any size to hold the ingredients).
  • Cook or steam the carrots in a large saucepan in boiling water for 5 minutes (no more than 5 minutes!); drain.
  • Layer carrots and apples in the bottom of the baking dish.
  • In a small bowl, combine the flour, sugar and nutmeg.
  • Sprinkle on top of the carrots and apples.
  • Dot with butter.
  • Pour the orange juice over the flour mixture.
  • Bake 30 minutes, or until carrots are tender.

1/4 teaspoon ground ginger

  • Place 1 in. of water in a saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until crisp-tender. Drain. In a small bowl, combine the brown sugar, ginger and nutmeg., In a greased 1-1/2-qt. baking dish, layer half of the apples and carrots. Sprinkle with half of the brown sugar mixture. Repeat layers. 2 tablespoons vegetable oil
1 (2-pound) boneless center cut pork loin, trimmed and tied
Kosher salt and freshly ground black pepper
1 medium onion, thickly sliced
2 carrots, thickly sliced
2 stalks celery, thickly, sliced
3 cloves garlic, smashed
3 sprigs fresh thyme
3 sprigs fresh rosemary
4 tablespoons cold unsalted butter
2 apples, such as Cortland or Rome peeled, cored and cut into 8 slices
2 tablespoons apple cider vinegar
1 cup apple cider
2 tablespoons whole grain mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
  • Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
  • Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
  • Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
  • Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

6 -7 cooking apples, peeled,cored and thinly sliced
4 cups sliced cooked carrots (I cook in microwave until almost done)
8 tablespoons sugar
4 tablespoons flour
salt
1 1/4 cups orange juice

Steps:

  • Place ½ of apples in greased 13x9 baking dish.
  • Cover with ½ of carrots.
  • Mix flour, sugar and salt to taste together.
  • Sprinkle ½ over carrot layer.
  • Repeat layers again.
  • Pour orange juice over top.
  • Cover.
  • Bake at 350 for 30 minutes.
  • Cool slightly and serve warm.
