KITTENCAL'S SLICE N' BAKE REFRIGERATOR COOKIES
This is buttery tender dough that produces an excellent flavored and textured cookie --- servings is only estimated it will depend on how thick you slice the dough, I get about 12-15 cookies per roll if sliced just over a 1/4-inch thick, you may of coarse slice them thinner or thicker if desired and adjust baking time slightly --- plan ahead the dough needs to chill for about 4 or more hours or until very firm and may be frozen for up to 3 months.

Steps:
- In a mixing bowl cream the butter with sugar for about 3 minutes.
- Add in egg yolk and both extracts; beat until no sugar granules remain.
- Beat in vanilla pudding mix until combined.
- In a small bowl combine the flour with baking soda and salt; add to the creamed mixture and beat until combined (the mixture will be dry and slightly crumbly).
- Remove the dough to a surface and gently knead the dough until it comes together (this will take only a few seconds).
- Roll into one large log or two smaller logs.
- Wrap in plastic wrap and refrigerate until hard (about 4 or more hours).
- Set oven to 350 degrees F.
- Slice into slightly over 1/4-inch thickness (you may coat the slices in sugar if desired).
- Place onto a greased baking sheet/s.
- Bake for about 8 minutes or until light golden brown.
- Allow to sit and harden slightly in the pan before removing (the cookies will harden upon sitting in the pan).

COCONUT KRISPIE COOKIES (SLICE AND BAKE)
This is a very krispie cookie, the brown sugar and coconut mixed with the oatmeal makes it a light and flavorful cookie. The dough rolls can be frozen for up to 2 months if stored in a ziplock freezer bag. Great for unexpected guests, as it only takes 10 minutes to slice and bake. This cookie recipe is the most requested at hubby's pool league games. Number of cookies depends on how thick you slice them.

Steps:
- In a mixing bowl, combine sugars,butter, shortening, eggs and vanilla, blend well.
- Add in flour mixture (flour,salt,baking soda), mix until just blended, add coconut, and oatmeal, blend, then add rice krispies.
- Roll mixture in 3 rolls;about 2 1/2" size, squeezing to form a solid roll, wrap in plastic wrap. (Don't stress if the rolls aren't perfectly round,cookies turn out roundish anyway). If you will be freezing for a long period of time, wrap again in wax paper and place in a freezer bag.
- Slice cookies (about 1/4") place on ungreased cookie sheet bake at 375 for 8-10 minutes, until cookies are lighlty brown (if you like a less crispy cookie) or medium brown (for a more crispy cookie).
- Grab the milk and chow down.
SUGAR FREE RICE KRISPIES COOKIES
Actually I got this recipe online, but I made so many changes, it isn't like the original anymore, so I guess I can claim it as my own.

Steps:
- Beat softened butter, sugar substitute, egg, and vanilla together until fluffy.
- Combine crushed cereal, flour, baking powder,and salt until blended. Add to above mixture, adding water if necessary. Add rest of cereal, and chocolate chips. Keep adding water if too dry.
- Roll into balls, flatten, and place on cookie sheet at least 1 inch apart. Bake in 375°F oven for 10 minutes.
