UKRAINIAN GOULASH



Ukrainian Goulash image

Very simple, tasty dinner over egg noodles. Can also be made in a slow cooker. Serve over egg noodles and top with sour cream if desired.

2 tablespoons vegetable shortening
2 pounds cubed beef stew meat
2 onions, sliced
1 clove garlic, minced
1 tablespoon paprika
1 ½ teaspoons salt
⅛ teaspoon ground black pepper
2 cups water
1 cup steak sauce (such as Heinz 57®)
1 tablespoon all-purpose flour
2 tablespoons water

Steps:

  • Melt shortening in a large pot over medium heat. Cook beef in hot shortening until completely browned, 5 to 7 minutes. Stir onion, garlic, paprika, salt, and pepper into the beef; cook and stir 5 minutes more.
  • Pour water and steak sauce into the pot; stir until beef mixture is evenly coated. Bring the mixture to a simmer, reduce heat to low, and cook until the beef is tender, about 15 minutes.
  • Whisk flour into the water in a small bowl; stir into the beef mixture. Continue simmering stew until slightly thickened, 2 to 3 minutes.

Slavic Goulash image

This is my Croatian Great Grandmother's recipe. There are many different variations, but this is my favorite! And it only takes one pot!

Number Of Ingredients 7

1 (8 ounce) container sour cream
1 (26 ounce) can cream of mushroom soup (family size)
1 (26 ounce) can full milk
1 lb beef stew meat (or lamb)
1 (12 ounce) package of extra wide egg noodles
1 pinch paprika
1 pinch ground black pepper

Steps:

  • In large pot boil noodles, drain, and cover with butter or olive oil.
  • In same large pot, brown meat fully with black pepper.
  • When meat is browned, drain 3/4 of the "juice" from pot.
  • Add can of mushroom soup, full can of milk, and container of sour cream.
  • Stir until well mixed, set to low heat and let simmer until heated through.
  • Garnish with paprika, serve mixture on top of either hot noodles or room temperature noodles.

BEEF GOULASH (CZECH)

This recipe comes from a cookbook called Anniversary Slovak-American Cookbook, published in 1952. This goulash tastes just like the goulash I ate in Prague.

Number Of Ingredients 7

1 1/2 lbs beef, cut into cubes (can also use 1/2 pound beef, 1/2 pound pork, and 1/2 veal)
2 tablespoons oil or 2 tablespoons fat
1 large onion, diced
1/2 green pepper, coarsely chopped
2 tablespoons paprika (to taste)
1 1/2 teaspoons salt
1/2 cup water

Steps:

  • Heat oil in a heavy skillet. Add onion and cook over low heat until lightly yellowed.
  • Add paprika and blend well. Add meat, green pepper, salt, and water.
  • Cover and simmer until meat is tender, about 1 1/2 to 2 hours.
  • Add more water if desired, although mixture should not be overly soupy when finished cooking.
  • Serve over hot boiled potatoes or topped with dumplings. (I use Recipe#171228).
