SKYLIKE CHILI - SKYLINE CHILI COPYCAT
A copycat of Skyline Chili, true Cincinnati chili, except it's less greasy! I combine all the dry spices times ten and keep the "Skyline Spice Mix" in a jar cannister. One batch of chili will use 3/8 cup of spice mix. The spice mix is also tasty as a meat rub for steak, pork and chicken.

Steps:
- Brown ground beef and onion.
- Drain.
- Add beef stock to beef mixture and simmer 10 minutes.
- Add remaining 13 ingredients, simmer uncovered 1 hour.
- Remove bay leaf, skim off extra fat.
- Serve over hot spaghetti, or hot dogs in buns for chili dogs.
- Top with plenty of cheese and other optional toppings.
CINCINNATI SKYLINE CHILI
I was served this dish at a friend's home when we lived in West Virginia. She was from Ohio. I love this dish and serve it often. Note: End result should have consistency of spaghetti sauce.

- Brown beef and onion in a large skillet over medium high heat. Place browned mixture in a large pot and stir in the tomato sauce, garlic, Worcestershire sauce, cinnamon, vinegar, chili powder, cayenne pepper, salt and pepper. Simmer, uncovered, over low heat for 1 1/2 hours.
- When meat mixture has about 20 minutes cooking time left, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
- Serve meat mixture over cooked spaghetti topped with cheese, beans, olives and chopped onion.

SKYLINE CHILI
Steps:
- Bring water to boil in a 4-6 quart pot. Add the ground chuck (don't brown it first, just add it to the boiling water raw.) Stir until seperated and reduce heat to simmer. Add onions and garlic tomato sauce apple cider vinegar Worcestershire sauce pepper allspice, cloves, bay leaf, salt, cinnamon and cumin cayenne pepper and grated chocolate Return to a boil. Reduce to a low simmer for 2 and 1/2 hours, uncovered. Stir frequently. Cool uncovered and refrigerate over night. Skim most of the fat off the top and discard. Discard bay leaf. Reheat and serve over hot spaghetti noodles, cooked al dente. Here are the classic Cincinnati Chili combinations: Two Way: spaghetti and chili Three Way: spaghetti, chili, and grated cheddar cheese Four Way: spaghetti, chili, grated cheddar cheese, and chopped onion Five Way: spaghetti, chili, grated cheddar, chopped onion and red kidney beans *note-we prefer chili beans to kidney beans, so we use those instead Enjoy!

- Spread cream cheese on bottom of casserole dish.
- Sprinkle diced onions (optional).
- Pour Skyline chili over onions (opt.) and cream cheese.
- Cover with cheddar cheese.
- Conventional oven: Heat at 350 degrees until cheese is bubbling but not brown, about 10 minutes.
- Microwave oven: Heat on high for 2 minutes or until cheese is melted.
- Serve warm with Corn chips or Fritos corn chips.
SKYLINE LENTIL CHILI
Serve chili over spaghetti and top with chopped onion, finely shredded Cheddar cheese, kidney beans, and Tabasco® sauce. I used to love Skyline Cincinnati-style chili. When I went vegetarian I came up with this Skyline lentil chili to give me that Skyline taste. I use green or black lentils as the protein where standard Cincinnati-style would use ground meat. Even though I've gone back to eating meat this is still my preferred way to get my Skyline fix.

- Mix chili powder, garlic powder, unsweetened chocolate, cinnamon, cumin, salt, cayenne pepper, allspice, cloves, and bay leaf together in a bowl until seasoning mix is well combined.
- Heat olive oil in a Dutch oven over medium heat; cook and stir onions and green bell pepper until lightly browned, about 10 minutes. Add vegetable broth and lentils; simmer for 20 minutes. Stir in seasoning mix, tomato sauce, apple cider vinegar, and Worcestershire sauce; simmer for 1 hour more, adding water if chili gets too thick.
- Remove bay leaf from chili. Blend chili using an immersion blender until desired consistency is reached.

- 1. Spread cream cheese to cover bottom of pie plate or shallow 8x8 dish.
- 2. Pour chili over cream cheese.
- 3. Cover with shredded cheddar. Microwave for 3-5 minutes or until cheese is melted. People also cook this in the oven but I never have since the microwave is much faster and usually when I'm making this people are ready to eat it:). Serve with tortilla chips. Enjoy!!

CINCINNATI STYLE CHILI (SKYLINE) (GLUTEN-FREE)
Recipe is from my grandmother. It's all part of a family tradition. Every year on Thanksgiving, our entire extended family gets together at a state park and stay in cabins; usually in West Virginia, Kentucky, or Indiana. Instead of turkey on Thanksgiving day, we all have Cincinnati Chili. Although this recipe calls for ground beef, it can be made with ground turkey instead. If you've ever had Skyline Chili or Goldstar from Cincinnati, this recipe is a little different. It has a kick behind it that Skyline and Goldstar don't have.

- Directions: In a Dutch oven over medium-high heat, heat oil until shimmering. Add onions and cook until soft and browned around edges, about 8 minutes. Add garlic, tomato paste, chili powder, oregano, cinnamon, cocoa powder, salt, pepper, and allspice and cook until fragrant, about 1 minute. Add chicken broth, tomato sauce, vinegar, and sugar; stir until combined. Add beef. Crumble the meat with the edge of a wooden spoon to break apart into tiny pieces so no clumps remain. Bring to boil, reduce heat to medium-low, and simmer until chili is deep brown and slightly thickened, 15 to 20 minutes. Season with salt. (Chili can be refrigerated in airtight container for up to 3 days or frozen for up to 2 months.) Boil, grill, or microwave the hot dogs until warmed through-out. Cincinnati Chili is a unique blend of spices and ground beef, cooked without beans, and typically served atop a pile of spaghetti noodles with a heap of shredded cheese to finish it off. This is a copycat of the famous Skyline Chili recipe!

- In a large Dutch oven, whisk together water and tomato paste.
- Add the raw ground beef to the mixture by breaking it apart and crumbling it with your fingers.
- Add in all of the other ingredients, and stir to combine. Bring it to a boil and reduce the heat to a low simmer, cover the pot and let simmer for 2 hours, stirring occasionally.
- Remove the chili from the stove, and cool. Transfer the covered pot to the refrigerator, and chill overnight.
- The next day, skim the grease from the top of the chili, before warming it to serve.

The greatest way to make chili with deer meat. You can adjust this recipe to suit your preferences, but the key is using the pork sausage to give you the fatty flavor that you miss with the lean deer meat. I don't add beans, but some people (like my dad) add red kidney beans as well.

- In a large pot, put in about a quarter-stick of butter and let it melt. Turn the pot over and tilt it around so that the butter coats the entire bottom of the pot, and all around the sides as it melts. This will make it so that the Chili won't crust up and burn to the sides of the pot. Once the butter is melted, begin to heat up Cans of Chili on medium/high heat. Add Venison and Jimmy Dean sausage immediately (no need to brown it first, as the boiling chili will cook it). The meat can even be frozen when you add it, which is what makes this recipe so fast and easy.
- Keep this pot over medium heat until it begins to boil. When the chili begins to boil, reduce the heat slightly so that it just barely does not boil.
- Stir the pot regularly and leave it at this heat (just barely not boiling) for about 20 to 30 minutes or until it reaches desired thickness.
- Boil a separate pot of water and add pasta. Cook pasta until it is done.
- Chop up an onion into small pieces.
- To serve, fill a bowl with pasta, then cover with chili, then cover the chili with cheese immediately so that it melts, then add onions (if desired) then oyster crackers. If you want it to be spicier, add Frank's Red Hot sauce.
